Apples, cheddar cheese and a cream cheese topping.... these bars sound delicious. I haven't made them yet, but I can't wait to try them. (Prep time is a guess). Recipe from Better Homes and Gardens.

Number Of Ingredients 13

2 cups all-purpose flour
1 cup butter, softened
1/2 cup sugar
2 egg yolks
1 teaspoon baking powder
4 medium apples, peeled and shredded (Golden Delicious, Rome, Granny Smith, Jonathan or Newtown Pippin)
1 cup cheddar cheese, shredded (4 ounces)
3/4 cup sugar
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
2 egg whites
1 1/2 cups powdered sugar, sifted
1/4 cup cream cheese, softened

Steps:

  • Preheat oven to 350 degrees.
  • For the crust, in a medium bowl, combine 2 cups flour, butter, 1/2 cup sugar, egg yolks and baking powder.
  • Beat with an electric mixer on low to medium speed until combined (mixture will be crumbly).
  • Press half of the crumb mixture into the bottom of an ungreased 13x9x2-inch baking pan.
  • Bake 10-12 minutes or until crust is lightly browned.
  • For filling, in a large bowl combine shredded apples, cheddar cheese, 3/4 cup granulated sugar, 1/4 cup flour and the cinnamon.
  • Spread the filling evenly over the crust.
  • Sprinkle with remaining crumb mixture and set aside.
  • In a medium bowl beat the egg whites on medium speed until soft peaks form.
  • Gradually beat in powdered sugar and softened cream cheese.
  • Spoon the cream cheese mixture over the top layer of crumb mixture.
  • Bake 30-35 minutes more or until golden brown.
  • Cool in pan, cut into bars and serve.

Got this recipe out of a garage sale-find cookbook which was put out by the Crisco Co. It's very versatile in that you can add or subtract topping ingredients as you like. I thought peaches might be interesting to try.

1 1/2 cups oats
3/4 cup flour
1/2 cup packed brown sugar
3/4 cup granulated sugar, plus
2 teaspoons granulated sugar, divided
3/4 cup Butter Flavor Crisco or 3/4 cup butter
16 ounces cream cheese
2 eggs
1 teaspoon vanilla
1 cup diced granny smith apple
1/2 cup golden raisin (optional)
1 teaspoon cinnamon
1/2 teaspoon almond extract
1/4 teaspoon nutmeg

Steps:

  • Preheat oven to 350*.
  • Combine oats, flour, brown sugar, and 1/4 cup of granulated sugar and mix well. Add Crisco and cut in until it's crumbly. Set aside 1 cup of this mixture and press remainder into a sprayed 9x13 pan.
  • Bake for 12 minutes, cool slightly.
  • In a mixer bowl, combine cream cheese, eggs, 1/2 cup of sugar, and vanilla. Mix til smooth and spread evenly over oat crust.
  • Combine apple, raisins (if desired) and almond extract. Stir.
  • Add spices and 2 T. of sugar and sprinkle over cheese mixture.
  • Return to oven and bake an additional 25 minutes or til golden. Cool completely and cut into bars.

one package yellow cake mix, 18.25 ounces
1/2 cup chopped pecans
1/2 cup melted butter
three large eggs, divided
one package cream cheese, softened, 8 ounces
2 cups powdered sugar
1 cup chopped braeburn apples

Steps:

  • 1. preheat oven to 350°. Spray a 13 x 9" baking pan with nonstick baking spray with flour. In a medium bowl, mix cake mix, pecans, melted butter, and one egg, stirring well. Press into bottom of prepared pan.
  • 2. In medium bowl, mix cream cheese and remaining two eggs. Beat at medium speed with mixer until smooth. Gradually add powdered sugar, beating until smooth. Add apples, stirring to mix. spoon over cake mixture. Bake for 50 minutes. Reduce Temperature to 300° and bake for 30 to 35 minutes longer or until set in the center. Cool completely. Cut into 24 squares. Makes 24 servings

CRUST
1 box yellow cake mix
8 Tbsp butter, melted
1 large egg
2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground cloves
CREAM CHEESE FILLING
16 oz cream cheese, room temperature
1 1/2 c brown sugar, firmly packed
1 large eggs
2 tsp vanilla extract
2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground cloves
21 oz canned apple pie filling
STREUSEL TOPPING
3/4 c all purpose flour
3/4 c brown sugar, firmly packed
1 tsp ground cinnamon
5 Tbsp melted butter

Steps:

  • 1. Preheat oven to 350 degrees. Lightly spray the bottom of a 13" x 9" baking dish.
  • 2. Prepare crust by mixing together all crust ingredients in a large bowl. Press dough into the bottom of the baking dish. Set aside.
  • 3. In the same bowl you made the dough in, beat cream cheese for 3 minutes until smooth. Add brown sugar and beat for another 3 - 4 minutes. Add eggs, vanilla, cinnamon, nutmeg and cloves. Beat for 5 minutes. Pour filling evenly over dough.
  • 4. Take a knife and run it thru the apple pie filling, breaking up the large pieces of apple. Spoon the apple pie filling evenly over cream cheese.
  • 5. In same bowl you made the filling in, mix together all the topping ingredients until crumbly. Sprinkle topping evenly over apple pie filling.
  • 6. Bake for 45 - 55 minutes or until cream cheese filling is set and, if using a glass dish, the crust is a golden brown. Remove from oven and allow to cool.
  • 7. Cut into bars and serve with ice cream or whipped cream, if desired.

1 (18 ounce) box yellow cake mix
1/4 teaspoon fresh lemon zest
1/2 cup butter or 1/2 cup margarine
12 ounces cream cheese, softened
1/2 cup sugar
2 eggs
1/2 cup half-and-half
2 teaspoons vanilla
1/3 cup sugar
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/4 fresh lemon zest
2 1/2 cups sliced apples (2 Granny smith apples)
1/2 cup sliced almonds

Steps:

  • Preheat oven to 350. Combine cake mix and 1/4 tsp lemon peel in a large bowl, reserving 1/2 cup of the mixture; set aside.
  • Add butter to remaining mixture and beat with electric mixer at low speed until crumbly.
  • Press mixture onto bottom and up sides of ungreased 13x9 inch baking pan. Bake for 10 minutes or until lightly browned.
  • Beat cream cheese and reserved 1/2 cup cake mix in large bowl with electric mixer on medium speed until well blended.

I run a cooking and recipes meetup group and we recently had an Iron Chef Competition. This recipe won 1st Place, so I wanted to share it with all of you, because they are REALLY YUMMY! Thanks Josephine!

4 apples, peeled, cored, and cut into 1/2-inch slices
1/3 cup sugar
3 tablespoons lemon juice
1/2 teaspoon ground cinnamon
1 1/2 cups rolled oats, large flake
1 cup flour
2/3 cup brown sugar, packed
1/4 teaspoon salt
1/2 cup butter, melted
2 tablespoons vegetable oil
1 cup cheddar cheese, shredded

Steps:

  • Preheat oven to 350.
  • Line a 9" square metal cake pan with aluminum foil, leaving 1" overhang for handles. Set aside.
  • In a bowl whisk together oats, flour, brown sugar, and salt.
  • Stir in melted butter and oil, until mixture clumps and is crumbly.
  • Add another tablespoon of oil or water, if necessary, to ensure no dry spots.
  • Add cheese, tossing to mix.
  • Save 1 1/2 cups of mixture for later, and press the rest evenly into prepared pan.
  • Bake in the center of a 350 oven, until edges are golden, about 15 minutes. Let cool.
  • Peel, core, and slice apples 1/2" thick.
  • In a saucepan, bring apples, sugar, lemon juice, and cinnamon to boil, adding up to 1/4 cup water, if apples stick to pan.
  • If apples becomes too runny, sprinkle 1 teaspoon cornstarch over apples, then mix in, and let thicken.
  • Reduce heat and simmer, stirring occasionally, until tender-crisp, about 5 minutes.
  • Spread apple mixture over base.
  • Sprinkle with remaining oat mixture.
  • Bake until golden, about 30 minutes.
  • Let cool in pan on rack.
  • Cut into 3" squares.
