12 cups fresh baby spinach
2/3 cup honey Dijon vinaigrette
1 large apple, thinly sliced
2/3 cup salad croutons
2/3 cup shredded cheddar cheese

Steps:

  • Place spinach in a large bowl. Drizzle with vinaigrette; toss to coat. Top with apple, croutons and cheese. Serve immediately.

1/4 cup pomegranate molasses
2 tablespoons red wine vinegar
1 heaping tablespoon Dijon mustard
1 tablespoon honey, or more to taste
Salt
Freshly ground black pepper
3/4 cup extra-virgin olive oil
6 apples (Granny Smith, Gala, Fuji) any or a combination of all, skin left on, core removed and cut into 1/2-inch dice
2 cups baby spinach
2 heads endive, thinly sliced
1 cup toasted coarsely chopped walnuts
3/4 pound blue cheese, crumbled (recommended: Maytag, Danish, Cabrales)
Salt
Freshly ground black pepper

Steps:

  • Whisk together the pomegranate molasses, vinegar, mustard, honey and salt and pepper in a medium bowl. Slowly whisk in the olive oil until emulsified.
  • Combine the apples, spinach, endive, walnuts and blue cheese in a large bowl. Add the vinaigrette and toss to coat, season with salt and pepper, to taste.

I am not a fan of salads. I will normally have a cup of soup in there place. But, this salad has amazing flavor and taste. I am also posting ( included in this recipe) a sweet cream vinaigrette dressing to go along with this salad. Recipes come from Cuisine at home.

1 cup pecan halves
1 tablespoon unsalted butter
1 tablespoon sugar
1 pinch salt
1/4 cup white wine vinegar
1/4 cup extra virgin olive oil
2 tablespoons fresh chives, chopped
1 tablespoon sugar
1 tablespoon salt
1/8 teaspoon crushed red pepper flakes
1/2 cup heavy cream
1 braeburn apple, cored and sliced
1 (10 ounce) bag mixed salad greens
3 ounces sharp white cheddar cheese, shaved

Steps:

  • Toast pecans in butter, sugar and salt in a small saute pan over medium heat for about 3 minutes, set aside.
  • Combine the White Wine Vinegar, Extra Virgin Olive Oil, Chives, Sugar, Salt, Red Pepper, Whisk in Heavy Cream (do not whip). Set aside.
  • Toss together Salad Mix, Apple, Sugared Pecans, and about 1/3 cup of Vinaigrette.
  • Garnish with shaved White Cheddar Cheese.
  • Serve remaining Vinaigrette on the side with the salad.

For a kale salad to be successful, use the most tender kale you can find and cut it into very thin filaments or chop it very finely (or both). Curly kale and Russian kale are more tender than black leaf kale. This is inspired by a wonderful salad I tried recently at the New York restaurant Northern Spy.

4 cups very finely chopped or slivered curly kale or Russian kale (about 6 ounces on the stem, or half of a 3/4-pound bunch, stemmed and washed in two rinses of water)
2 tablespoons coarsely chopped toasted almonds
1 apple, sweet, like a Fuji, or a sweet-tart, like a Gala, Braeburn or Pink Lady, cored and cut in 1/4-inch dice
1 ounce sharp Cheddar cheese, cut in 1/4-inch dice
2 tablespoons fresh lemon juice
Salt to taste
1 very small garlic clove, puréed
5 tablespoons extra virgin olive oil
2 tablespoons freshly grated Parmesan

Steps:

  • Combine the kale, almonds, apple and Cheddar in a large bowl.
  • Whisk together the lemon juice, salt, garlic and olive oil. Add to the salad, and toss well. Sprinkle the Parmesan over the top, and serve.

10 cups torn mixed salad greens
1 cup chopped red apple
1 cup cubed cheddar cheese
1 cup chopped walnuts, toasted
HONEY DRESSING:
2/3 cup honey
2 tablespoons cider vinegar
1 teaspoon celery seed
1 teaspoon ground mustard
1 teaspoon paprika
1 teaspoon lemon juice
1 teaspoon grated onion
1/4 teaspoon salt
1 cup canola oil

Steps:

  • In a large salad bowl, combine the greens, apple, cheese and walnuts; set aside. , In a blender, combine the first eight dressing ingredients. While processing, gradually add oil in a steady stream. Serve with salad.
