If you like tart apples and cheese, you'll love these moist, merry muffins. My family insists I make them for the holiday, but they're so easy to fix that I often whip up a batch or two on camping and canoe trips as well.

Number Of Ingredients 12

2 cups all-purpose flour
1/3 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1-1/2 cups shredded cheddar cheese, divided
1/3 cup grated Parmesan cheese
1 large egg
1 cup buttermilk
1/4 cup vegetable oil
2 medium tart apples, peeled and chopped

Steps:

  • In a large bowl, combine the first six ingredients; stir in 1 cup cheddar cheese and Parmesan cheese. In a small bowl, beat the egg, buttermilk and oil; stir into dry ingredients just until moistened. Fold in apples. , Fill greased or paper-lined muffin cups three-fourths full. Sprinkle with the remaining cheddar cheese. Bake at 400° for 20-22 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

2 cups all-purpose flour
1/3 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon cinnamon
1 cup sharp cheddar cheese, grated
1/3 cup parmesan cheese, grated
1 egg
1 cup buttermilk or 1 cup sour milk
1/4 cup oil
1 medium tart apple, finely chopped
1/4 cup grated cheddar cheese (optional)

Steps:

  • Preheat oven to 400F.
  • Grease muffin pans.
  • COMBINE flour, sugar, baking powder, baking soda, salt, cinnamon and cheeses in large mixing bowl.
  • BEAT egg, buttermilk, oil and apple together thoroughly.
  • ADD liquid ingredients all at once to dry ingredients.
  • Stir just until moistened.
  • FILL greased muffin cups 3/4 full.
  • SPRINKLE tops with 1/4 cup cheddar cheese if desired.
  • BAKE at 400°F for 18-23 minutes or until top springs back when lightly touched.

1 cup whole bran cereal
¼ cup milk
1 cup peeled, cored and sliced apple
⅓ cup vegetable oil
1 egg
1 ½ cups all-purpose flour
3 ½ teaspoons baking powder
½ teaspoon salt
1 teaspoon ground cinnamon
⅓ cup packed brown sugar
¼ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease one 12-cup muffin tin or line with paper liners.
  • Combine the bran cereal, milk and apples. Mix well. Beat in the vegetable oil and egg.
  • Combine the flour, baking powder, salt, cinnamon and brown sugar. Make a well in the center and stir in the wet mixture. Add the shredded cheese and mix enough until just moistened. Scoop the batter into the prepared pans.
  • Bake at 375 degrees F (190 degrees C) for 15 to 20 minutes.

1 egg, slightly beaten
1/2 cup 2% low-fat milk
1/4 cup vegetable oil
1 cup unsweetened applesauce
1/4 cup sugar
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup cheddar cheese, shredded

Steps:

  • In a large bowl, combine egg, milk, oil, applesauce and sugar. Sift flour, baking powder, salt and cinnamon together; add all at once with Cheddar cheese to egg mixture.
  • Stir only until flour mixture is moistened (batter will be lumpy). Divide batter among 12 greased muffin cups. (Cups will be more than 2/3 full).
  • Bake at 400 F for about 20 minutes or until wooden pick inserted in center comes out clean.
  • Let cool in muffin pan 5 minutes. Run knife around outer edges of each muffin; turn out onto rack to cool completely.

1/3 cup Sugar
1 dash Cinnamon
1 dash Nutmeg
6 tablespoons Corn oil
3 Eggs -- lightly beaten

Steps:

  • Preheat oven to 400F. Line 12 2-1/2" muffin-pan cups with paper baking cups; set aside. In large mixing bowl combine flour, cornmeal and baking powder. Add apples, corn, cheese, sugar, cinnamon, and nutmeg, stirring to combine. In small bowl beat together oil and eggs; stir into flour mixture. Fill each baking cup with an equal amount of batter. Bake in middle of even fro 15 minutes, until golded and tootpick comes out dry. Set pan on wire rack and let cool.

1-1/2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
3/4 cup coarsely grated cheddar
Moist Mixture:
1/2 cup butter
2/3 cup granulated sugar
2 large eggs
1 cup apple

Steps:

  • Preheat oven to 350 degrees and prepare 12 muffin cups. Combine first 4 ingredients of dry ingredients together in large bowl. Add grated cheddar and blend. Cream butter and sugar together with electric mixer. Add eggs, one at a time, and beat to blend. Peel, core and grate apple and add it to the moist mixture. Add moist mixture to dry mixture all at once and stir until just combined. Fill 12 prepared muffin cups 2/3 full. Bake 20 to 25 minutes or until springy to touch. Hint: A medium apple should yield about 1 cup grated apple.
