1 sheet frozen puff pastry, thawed
1 cup shredded white cheddar cheese
2 medium apples, thinly sliced
2 tablespoons olive oil
1 tablespoon lemon juice
3 cups fresh arugula or baby spinach

Steps:

  • Preheat oven to 400°. On a lightly floured surface, unfold puff pastry; roll into a 12-in. square. Cut pastry into 4 squares; place on a parchment-lined baking sheet., Sprinkle half of each square with cheese to within 1/4 in. of edges; top with apples. Fold pastry over filling. Press edges with a fork to seal. Bake until golden brown, 16-18 minutes., In a bowl, whisk oil and lemon juice until blended; add arugula and toss to coat. Serve with tarts.

Crust:
1 1/2 cups (200g) all-purpose flour
1/2 teaspoon salt
1 1/2 teaspoons sugar
1 1/2 sticks (170 g) unsalted butter
1/4 cup plus 2 tablespoons (85 ml) sour cream (full fat, not light)
2 tablespoons finely grated sharp cheddar cheese
Filling:
4 good cooking apples, such as McIntosh, Courtland, Jonagold, Pippin, Golden Delicious, Jonathan, Fuji, or a mixture of various cooking apples (NOT red delicious)
1/2 teaspoon lemon zest
1 half of a lemon, or the juice of half a lemon (to acidulate the water for holding the apples while you peel them to keep them from discoloring)
1 tablespoon maple syrup
2 teaspoons minute tapioca or instant tapioca for thickener (can substitute corn starch)
1 teaspoon ground cinnamon
1/2 cup lightly packed grated cheddar cheese
Finishing:
1 egg for egg wash
Coarse sugar for sprinkling on the crust

Steps:

  • Drain apple slices, sprinkle with maple syrup, cinnamon, minute tapioca, zest: Drain the apple slices. Place the apple slices back in the now empty bowl. Sprinkle with maple syrup and cinnamon and gently toss so that the apple slices are lightly coated with both. Add the minute tapioca and the lemon zest. Gently toss again.
  • Arrange apple slices on the dough: Starting from 2 inches from the perimeter of the pastry round, arrange the apple slices, side by side, in a circular pattern, filling the circle. It's okay if some of the apple slices overlap a little.

Apple tart recipe that came from Block Island. Easy, very good. I didn't think I would like apples with cheddar cheese, but the taste is outstanding.

1 double crust pie crust
5 fuji apples, Granny Smith apples or 5 golden delicious apples, peeled, cored and thinly sliced
3/4 cup white sugar
2 tablespoons flour
2 tablespoons lemon juice
1/2 cup raisins (optional)
1 teaspoon cinnamon
1 dash nutmeg
1 dash salt (I used 1/4 1 dash 1/8 tsp accordingly)
1 cup grated sharp cheddar cheese
1/8 cup sugar, mixed with
1/4 teaspoon cinnamon

Steps:

  • Preheat oven to 400 degrees F.
  • On floured work surface, rool out pastry dough into a 16" round.
  • Fold dough in half and transfer to a lightly greased baking sheet. Set aside.
  • (note: I use prepurchased pie dough already in two rounds, so I simply lay one on the sheet and top with the second. You end up with a round tart this way).
  • In a large bowl, combine apples, sugar, flour, lemon, raisins, cinnamon,nutmeg and salt. Gently stir to blend.
  • Mound apple mixture in the middle of the dough, leaving two to four inches all around the edge.
  • Scatter cheddar cheese over mixture.
  • Fold edge over filling all the way around, pleating pastry as needed.
  • Lightly baste with water, then sprinkle sugar/cinnamon mix on top.
  • Bake tart in preheated oven until pastry is golden and apples are tender, about 30 to 35 minutes.

Thinly sliced beets add beautiful color to these small tarts, which are just the right size for appetizers. Use store-bought puff pastry for the rounds.

1 sheet frozen puff pastry, thawed and cut into six 4 1/2-inch rounds
3/4 cup shredded white cheddar (3 ounces)
1 small apple, cored and very thinly sliced
1 small beet, scrubbed, peeled, and very thinly sliced
Coarse salt and ground pepper
1/2 teaspoon fresh thyme leaves

Steps:

  • Preheat oven to 400 degrees. Place pastry rounds on a parchment-lined baking sheet and prick all over with a fork. Divide half the cheese among pastry rounds. Top each with 2 to 3 apple slices. Tuck 2 to 3 beet slices among apple slices and top with remaining cheese. Season with salt and pepper and sprinkle with thyme. Bake until pastry is golden brown and slightly puffed, 13 to 15 minutes. Serve warm or at room temperature.

I enjoy finding other uses for ingredients in my kitchen. Needing a fresh dessert for my family one night, I came up with this gem. Feel free to add to or take away as you and your family need. This tart is good warm, and scrum-diddily-umptious cold! Enjoy.

1 prepared pie pastry (such as Pillsbury® Pie Crust)
1 (21 ounce) can apple pie filling
7 ½ ounces part-skim ricotta cheese
1 egg, beaten
1 ½ ounces shredded Cheddar cheese
¼ cup all-purpose flour
3 tablespoons brown sugar
1 teaspoon salt
1 teaspoon ground cinnamon
1 tablespoon butter, softened

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Roll out pie crust lengthwise to fit into the bottom a 13x9-inch baking dish with a good 1/2-inch of the crust up all sides.
  • Mix apple pie filling, ricotta cheese, egg, and shredded Cheddar cheese together in a bowl; pour over the pastry and flatten into a smooth layer.
  • Mix flour, brown sugar, salt, and cinnamon together in a separate bowl. Mash butter into the flour mixture with a fork or pastry cutter until mixture is crumbly. Sprinkle over the apple pie mixture in the pan.
  • Bake in preheated oven until crust is a good caramel-brown color, 15 to 20 minutes.
