APPLE AND CHEDDAR STUFFED CHICKEN
This is a recipe I created with bits and pieces from other recipes. Great for the fall when you have extra apples and don't want to make sweets.

- Preheat oven to 350 degrees F (175 degrees C). Spray a baking dish with cooking spray and sprinkle with 1 pinch thyme.
- Place chicken breasts between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound chicken with the smooth side of a meat mallet to a thickness of 1/4-inch.
- Spread apples and Cheddar cheese evenly over each chicken breast. Starting at one end, roll each breast around filling and secure the roll with a toothpick through the center. Transfer breasts to prepared baking dish. Drizzle olive oil over each breast and sprinkle with remaining thyme.
- Cook chicken breasts in the preheated oven until no longer pink in the center and the juices run clear, about 25 minutes. An instant-read thermometer inserted into the center of the meat should read at least 165 degrees F (74 degrees C).

SMOKED-CHEDDAR-STUFFED CHICKEN WITH GREEN APPLE SLAW

- For chicken:
- Stir cheddar cheese, 1 tablespoon maple syrup, cream cheese, and sage in small bowl to blend. Place 1 chicken breast, skin side down, on work surface. Using small sharp knife, cut 1 1/2-inch-deep by 2-inch-long horizontal pocket in chicken. Pack in 1/4 of stuffing. Press tenderloin into pocket opening to seal in stuffing. Repeat with remaining chicken and stuffing. Arrange chicken on small baking sheet. Combine 1/4 cup maple syrup, whisky, brown sugar, and butter in small saucepan. Whisk over medium heat until sauce comes to simmer and is blended. (Chicken and basting sauce can be made 1 day ahead. Cover separately and refrigerate.)
- For green apple slaw:
- Whisk first 5 ingredients in medium bowl to blend. Mix in apple, red onion, and green onions. Season slaw to taste with salt and pepper. Refrigerate at least 1 hour and up to 4 hours, tossing occasionally.
- Spray grill rack with nonstick spray and prepare barbecue (medium-high heat). Rewarm basting sauce; transfer half to bowl and reserve. Set pan with remaining sauce at edge of grill to keep warm. Grill chicken, skin side down, until golden, about 3 minutes. Turn chicken over, repositioning over medium to medium-low heat. Grill until cooked through, turning occasionally and basting with sauce in pan during last 5 minutes, about 8 minutes. Transfer chicken to platter. Serve with apple slaw, passing reserved sauce separately.

Steps:
- 1. Combine 2 tablespoons of the chutney, apple and cayenne pepper in a small bowl; mix well. Stir in 3/4 cup of the cheese.
- 2. Cut a pocket in side of each chicken breast, taking care not to cut through top or bottom of chicken.* Stuff cheese mixture into chicken, pressing edges together to enclose stuffing. Place chicken on a foil-lined baking sheet. Brush remaining 1/4 cup chutney over tops of chicken breasts. Combine breadcrumbs and remaining 1/2 cup cheese; sprinkle over chicken. Sprinkle paprika lightly over chicken if desired.
- 3. Bake in a preheated 375°F oven for 25 to 30 minutes or until chicken is cooked through.

I found this recipe on line at The Recipe Link. After being at Cracker Barrel, I think this is close to the real thing. I had to eyeball the amounts on the crackers and soup as no measurements were given. Next time I will measure and post accordingly.

Steps:
- Place chicken in an ovenproof dish. Season with salt and pepper according to taste (remember, the crackers add salt).
- Slice apples or use canned apples place on top of chicken.
- Put crushed Ritz crackers on top.
- Bake at 350°F for 30 to 45 minutes or until chicken is done.
- Before serving top with Cheese Whiz or cheddar cheese soup.
- *If you use cheddar cheese soup thin with a little milk.

APPLE & CHEDDAR STUFFED CHICKEN BREASTS

- 1.Combine apple, cheese, and bread crumbs. Set aside. 2.Flatten chicken breasts between sheets of waxed paper to 1/4 inch thickness. Divide apple mixture between chicken breasts, and roll up each breast. Secure with toothpicks. 3.Melt butter or margarine in a 7 inch skillet over medium heat. Brown stuffed chicken breasts. Add wine and 1/4 cup water. Cover. Simmer for 15 to 20 minutes, or until chicken is no longer pink. 4.Transfer chicken to a serving platter. Combine 1 tablespoon water and cornstarch; stir into juices in pan. Cook and stir until thickened. Pour gravy over chicken. Cook's Note: I usually use double the stuffing (apple, cheese, bread crumbs)...and when it comes time to simmer it- just add all of the stuffing thats leftover to the pan. Its going to make this delicious sauce that you can spoon over the chicken and whatever carb you'd like to serve (i usually serve it with rice). You can also put a dash of cinnamon in the apple/cheese mixture to make it even yummier. It smells SO good when its cooking!!

- Heat oven to 375°F.
- Use rolling pin to flatten each bread slice to 1/8-inch thickness; brush lightly with butter. Brush any remaining butter onto insides of 24 mini muffin pan cups. Cut each bread slice into 4 squares. Press each bread square, buttered side up, onto bottom and up side of each muffin cup. Bake 7 to 8 min. or until golden brown. Cool completely in pan.
- Meanwhile, mix mayo and mustard in medium bowl until blended. Add chicken, apples and cheese and nuts; mix lightly.
- Spoon chicken salad into toast cups just before serving.

- Preheat the oven to 325°. Spread the walnuts on a baking sheet and roast until well toasted and fragrant, 10 to 12 minutes.
- In a large saucepan with a tight-fitting lid, melt the butter over medium heat. Add the rice and toast for a minute or two. Add 2 cups chicken stock and bring to a boil, then lower the heat, cover and simmer for 10 minutes. Add the apple and simmer for 8 minutes.
- While the rice cooks, using a food processor, pulse 1/4 cup chicken stock, the parsley, dill and 1/4 teaspoon salt until finely chopped. Stir into the rice during the last minute of cooking. Turn off the heat and let the rice stand, covered, for 1 to 2 minutes before fluffing with a fork. Transfer to a serving dish and stir in the cheese.
- Meanwhile, in a large skillet, heat the EVOO, 1 turn of the pan, over medium-high heat. Pat the chicken dry and season liberally with salt and black pepper. Add to the skillet and cook, turning once, until browned, about 10 minutes. Transfer the chicken to a platter. Drain off all but 1 tablespoon of the fat in the skillet and add the vinegar. Cook, scraping up the pan drippings, then add the remaining 1/4 cup chicken stock, the maple syrup and black pepper to taste. Cook until thickened, about 1 minute. Add the chicken and walnuts and spoon with the sauce. Loosely cover the pan with foil and simmer for 5 minutes. Serve the chicken, sauce and nuts with the rice alongside.
