This is really good, and easy to make... can be doubled if desired. Just remember not to cook the carrots for more than 5 minutes, as they will cook more when baked.

6 -8 large carrots, sliced
4 large apples, peeled, cored and sliced
5 tablespoons flour
1 -2 tablespoon brown sugar, packed (can use more for a sweeter taste)
1/2 teaspoon nutmeg
2 tablespoons butter or 2 tablespoons margarine
1/2 cup orange juice
1/2 teaspoon salt (optional)

Steps:

  • Set oven to 350 degrees.
  • Grease a larger-size casserole dish (any size to hold the ingredients).
  • Cook or steam the carrots in a large saucepan in boiling water for 5 minutes (no more than 5 minutes!); drain.
  • Layer carrots and apples in the bottom of the baking dish.
  • In a small bowl, combine the flour, sugar and nutmeg.
  • Sprinkle on top of the carrots and apples.
  • Dot with butter.
  • Pour the orange juice over the flour mixture.
  • Bake 30 minutes, or until carrots are tender.

2 cups sliced carrots
1 tablespoon brown sugar
1/4 teaspoon ground ginger
1/8 teaspoon ground nutmeg
3 medium apples, peeled and thinly sliced
1 tablespoon butter

Steps:

  • Place 1 in. of water in a saucepan; add carrots. Bring to a boil. Reduce heat; cover and simmer for 7-9 minutes or until crisp-tender. Drain. In a small bowl, combine the brown sugar, ginger and nutmeg., In a greased 1-1/2-qt. baking dish, layer half of the apples and carrots. Sprinkle with half of the brown sugar mixture. Repeat layers. Dot with butter. , Cover and bake at 350° for 35-40 minutes or until apples are crisp-tender and carrots are tender.

3 carrots, pared and cut into about 1/2 inch rounds
2 -3 apples, peeled and sliced into fairly thick wedges
1/2 cup brown sugar
1 tablespoon cornstarch
1 teaspoon cinnamon
2 tablespoons butter
1/2 cup orange juice

Steps:

  • Cook carrots in boiling water until barely tender.
  • Do not overcook them because they are going into the oven.
  • Drain and mix the carrots and apples in a baking dish that has been lightly buttered.
  • Combine sugar, cornstarch and cinnamon, sprinkle over the carrot and apple mixture. Dot with the butter.
  • Pour the orange juice over all and bake 350: for about an hour.
  • This dish can be expanded very easily.

1/4 cup sugar
1 pound carrot, cut diagonally
1/2 teaspoon salt
1/2 cup water
4 medium cooking apples, peeled, cored, and cut into 1/2-inch slices
1/4 cup butter or margarine, thinly sliced, divided
1/4 cup frozen orange juice, mixed with 1/2 cup water

Steps:

  • Mix flour and sugar together in a small bowl. Set aside. Combine carrots, salt, and water in small saucepan. Cover and bring to a boil; reduce heat and simmer just until crisp-tender. Drain and set aside. Layer half of carrots, then half of apples in a lightly greased, shallow 2-quart baking dish. (I use a 10x6x2-inch Pyrex dish.) Sprinkle with half the flour mixture and dot with half the butter. Repeat layers. Drizzle with orange juice mixture. Bake at 350° for about 35 minutes or until apples are tender, gently pressing apples down into syrup midway of cooking.
