3 eggs
2 cups cinnamon applesauce
1 cup peanut butter
½ cup brown sugar
2 teaspoons vanilla extract
3 cups rolled oats
1 cup all-purpose flour
1 cup flax seed meal
½ cup whole wheat flour
1 ½ teaspoons baking soda
1 ½ teaspoons ground cinnamon
2 apples - peeled, cored, and cut into small cubes

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat eggs, applesauce, peanut butter, brown sugar, and vanilla extract in a bowl until smooth.
  • Combine oats, all-purpose flour, flax seed meal, whole wheat flour, baking soda, and cinnamon in another bowl. Stir egg mixture into oat mixture and add apples; mix until evenly blended.
  • Roll dough into golf ball-sized balls and place 2 inches apart onto baking sheets.
  • Bake in preheated oven until cookies are golden, about 12 minutes.

1/4 c butter, unsalted
1 c packed brown sugar
1 large egg
3/4 c quick oats
1/2 c raisins
1 c all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp baking powder
2 Tbsp milk
1/2 c small diced apples (Granny Apple preferred)
1/2 c apple butter

Steps:

  • 1. Preheat oven to 350 degrees and line cookie sheet with parchment paper.
  • 2. In a large mixing bowl cream butter and sugar just till combined. Do not overmix or go over 40 seconds with a mixer.
  • 3. Beat in apple butter, eggs, and oats.
  • 4. Mix dry ingredients in a separate bowl.
  • 5. Gradually add the dry mixture to the creamed mixture along with the milk.
  • 6. Stir in apples and raisins.
  • 7. Chill dough for at least 20 minutes in refrigerator.
  • 8. Drop by teaspoonfuls onto cookie sheet.
  • 9. Bake for 15 to 17 minutes. Cool on the sheet for a few minutes before removing to a wire rack to cool.
