My favorite fruit salad! Perfectly right and refreshing with a beautiful combination of colors. This is the perfect summer side dish for cookouts or holiday parties. You can switch of the fruits listed here for others you may have on hand.

1 lb fresh strawberries, (chopped)
1 lb chopped fresh pineapple,
12 oz fresh blueberries
12 oz red grapes, (sliced into halves)
4 kiwis, (peeled and chopped)
3 mandarin oranges*
2 bananas, (sliced (optional))
1/4 cup honey
2 tsp lime zest ((zest of 2 medium limes))
1 1/2 Tbsp fresh lime juice

Steps:

  • Add all fruit to a large mixing bowl.
  • In a small mixing bowl, whisk together they honey, lime zest and lime juice.
  • Pour over fruit and toss to evenly coat, serve immediately**.

2 medium tart apples, cut into chunks
2 medium firm pears, cut into chunks
1 tablespoon lemon juice
3/4 cup seedless red grapes
2 tablespoons water
2 tablespoons balsamic vinegar
2 tablespoons olive oil
1 tablespoon prepared mustard
1 teaspoon sugar
1/8 teaspoon salt
1/8 teaspoon coarsely ground pepper
1 head Boston or Bibb lettuce
1/3 cup chopped walnuts, toasted

Steps:

  • In a bowl, toss apples and pears with lemon juice. Add grapes; toss gently. In a another bowl, combine the water, vinegar, oil, mustard, sugar, salt and pepper. Pour over fruit and toss to coat. Serve in lettuce-lined bowls; sprinkle with walnuts.

1 teaspoon cornstarch
1/4 cup lime juice
1/4 cup honey
1/2 teaspoon poppy seeds
3 medium gala or Red Delicious apples, cubed
2 medium pears, cubed
2 cups seedless red grapes
2 cups green grapes

Steps:

  • In a small microwave-safe bowl, combine cornstarch and lime juice until smooth. Microwave, uncovered, on high for 20 seconds; stir. Cook 15 seconds longer; stir. Stir in honey and poppy seeds., In a large bowl, combine the apples, pears and grapes. Pour dressing over fruit; toss to coat. Cover and refrigerate overnight.

1/4 cup lime juice
1/4 cup fresh orange juice
1 1/2 teaspoons honey
1/4 cup orange zest
1/8 cup sugar
Salt
Pinch white pepper
1 cup plus 2 tablespoons light extra-virgin olive oil
1 pound mixed greens

Steps:

  • Place lime juice, orange juice, honey, orange zest, and sugar in a large bowl. With a whisk in 1 hand and the oil in another, slowly begin to add the oil until it's all gone. Season with salt and white pepper, to taste. The finished product should look like it has significant body, taste semi-sweet and with a touch of tartness. Toss desired amount with mixed greens, and serve.
