Pets-de-soeur means Nun's farts. It's made with pie dough. It's a very good dessert. I think that it cames from Quebec in Canada.

1/2 lb shortcrust pastry dough (store-bought, half a package of 1 lb)
1/4 cup butter, soften
1/4 cup brown sugar
1 big cortland apples or 2 small apples, peeled, diced
1/2 cup maple syrup

Steps:

  • On a lightly floured surface, roll the dough in a big rectangle. Spread butter on all the dough and sprinkle with brown sugar. Distribute the diced apple on the brown sugar.
  • Beginning with one of the long sides, roll the dough by holding tight to form a roll. Cut the roll right across (on the width) in slices of about 1 inch thickness. Put down the slices in a big glass dish (Pyrex type) and sprinkle with maple syrup.
  • Cook in a preheated oven of 400 F for about 10 minutes.

1 c unbleached white flour (i used white pastry flour)
pinch salt
4 Tbsp butter, softened
3 oz chilled water
2 Tbsp butter, melted
TOPPING:
1 Tbsp maple sugar or brown sugar
1/4 tsp ground cinnamon

Steps:

  • 1. Preheat oven to 375 degrees.
  • 2. Note: I used the stand up mixer to prep the dough. Mix together the flour, salt and softened butter. Add the chilled water until a dough ball is formed.
  • 3. Roll the dough (rectangle-shaped) onto a lightly floured board. The dough should be slightly thicker than a pie crust.
  • 4. Melt 2 tablespoons of butter. Use a pastry brush to spread butter on the dough. Combine the TOPPING ingredients in a small prep bowl. Sprinkle the dough with the TOPPING.
  • 5. Roll the dough into a cylinder and cut into slices about 3/4" thick. Arrange them on a parchment-lined cookie sheet.
  • 6. Bake for 20 minutes or until lightly browned.
