BAKED HAM WITH BROWN SUGAR GLAZE

Baked ham is moist, tender and delicious inside while the outside is brushed with a brown sugar glaze and caramelized for a hint of sweetness.

1 spiral cut ham with bone-in (approx 7-9 pounds)
2 tablespoons dijon mustard
¼ cup pineapple juice (or orange juice)
½ cup pineapple juice (or orange juice)
½ cup brown sugar
2 tablespoons dijon mustard
¼ teaspoon ground ginger
2 teaspoons cornstarch

Steps:

  • Preheat oven to 325°F.
  • Combine dijon mustard and pineapple juice. Brush over ham.
  • If your ham has a plastic disk on the bone, this should be removed and discarded. Place the ham, flat side down in a roasting pan, and cover tightly with foil. Roast 12-15 minutes per pound (or according to package directions).
  • Meanwhile, combine glaze ingredients and bring to a boil. Turn heat down and simmer 2-3 minutes. Cool.
  • 15 minutes before ham is done, remove from the oven and turn the oven up to 425°F.
  • Brush with glaze and return to the oven until the glaze is caramelized and the ham has reached the safe cook temperature.

This is the ham that led directly to whatever childhood memory caused someone to combine ham and pineapple on a pizza. The sweet, slightly fiery and herbaceous crust on this salty haunch practically calls out for a garnish of caramelized pineapple, if not a spray of maraschino cherries. Others may reverse course and apply mustard. Either way, it is good to serve with a nutty wild rice or potatoes au grain, something with backbone.

1 7-to-8-pound bone-in ham
Whole cloves
1½ teaspoons dry mustard powder
1 cup brown sugar
¼ cup dry sherry

Steps:

  • Heat oven to 325 degrees. Place the ham on a rack in a large roasting pan. Score the ham diagonally left to right, then right to left, to create a diamond pattern across the meat. Stud each diamond with a whole clove.
  • Add a cup or two of water to the bottom of the pan, then bake the ham, uncovered, 25 minutes to the pound if it is ready-to-cook, about half that if it is ready-to-eat.
  • Combine the mustard and the brown sugar in a bowl, then add the sherry to make a thick paste. Spread the mixture over the ham approximately 20 minutes before it is ready to remove from the oven, then bake until crust has formed.

1 (12 pound) bone-in ham, rump portion
½ cup whole cloves
1 cup packed brown sugar
4 cups water, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place ham in a roasting pan, and press whole cloves into the top at 1 to 2 inch intervals. Pack the top with a layer of brown sugar. Pour enough water into the bottom of the roasting pan to come to a 1 inch depth. Cover the pan tightly with aluminum foil or a lid.
  • Bake for 4 1/2 to 5 hours in the preheated oven (about 22 minutes per pound), or until the internal temperature of the ham has reached 160 degrees F (72 degrees C). Make sure the meat thermometer is not touching the bone. Let stand for about 20 minutes before carving.

My family does this every year with our Christmas Eve ham and it never fails to be anything but delicious!

1 (4 pound) fully-cooked spiral cut ham
1 (20 ounce) can sliced pineapple, drained with juice reserved
1 cup dark brown sugar
1 liter ginger ale

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Remove as much of the ham from the bone as you can. Layer one third of the ham in the bottom of a 6 quart casserole dish. Top with a few pineapple rings and 1/4 of the brown sugar. Repeat the layers, ending with pineapple rings on top, but don't sprinkle the last 1/4 of brown sugar.
  • Pour any juice left in the pineapple can over the ham. Then pour in enough of the ginger ale to fill the dish about half way. Sprinkle the remaining brown sugar over the top.
  • Cover with aluminum foil and bake for 20 minutes in the preheated oven. Uncover and cook for an additional 20 minutes.

Braised-Then-Baked Ham image

Here is a sensible prescription from Julia Child for cooking a whole ham, which was featured in a New York Times article by Julia Moskin that explored the quandary of how to make a flavorful Easter ham. Braise the meat in wine and water to finish the cooking, then roast it in a hot oven to crisp the surface. The end result is glazed with mustard and brown sugar and crusted with golden bread crumbs. One note: this is a recipe for a cured ham, not a fresh one.

1 cooked, bone-in "city ham," whole or half, 8 to 12 pounds
3 tablespoons butter or vegetable oil
1 cup sliced carrots
1 cup sliced onions
Herb bundle of 12 parsley sprigs, 6 thyme sprigs, 1 bay leaf, 12 peppercorns, 3 cloves, tied together in cheesecloth
1 bottle dry white wine
Glaze, optional

Steps:

  • If there is tough skin covering the top of the ham, cut it off to expose the fat.
  • In a large, deep pot, heat butter or oil over medium-high heat. Add carrots and onions and sauté until tender and golden brown, about 10 minutes.
  • Place the ham on the vegetables, fatty side up. Add herb bundle, wine and 1 quart water and bring to a simmer.
  • Cook for 2 to 3 hours at a bare simmer; baste with ladle every 20 minutes. After 2 hours, test with meat thermometer: ham is ready when internal temperature reaches 135 degrees. Turn off the heat.
  • Heat oven to 450 degrees. Drain ham, reserving cooking liquid to use for stock (it freezes well). Place ham on a rack in a roasting pan, fatty side up, and score fat in a diamond pattern with tip of sharp knife. If using glaze, brush it on now.
  • Place ham in oven; roast 15 to 20 minutes until lightly browned. If using glaze, brush on more after first 10 minutes of cooking.
  • Remove from oven, tent with foil, and let rest 20 to 30 minutes before carving.

2-3 lb ham (boneless, picnic, spiral sliced, your choice)
1 can(s) vernors ginger ale or other sweet variety, 12-ounce size
ground cloves to taste
20 oz can sliced pineapple (you may not use the whole can)
honey
brown sugar
additional ground cloves

Steps:

  • 1. Preheat oven to 350 degrees. Line a large roasting pan with aluminum foil and place a trivet or small rack inside the pan. Set aside.
  • 2. Remove ham from wrapping and pour off any excess liquid. Place on top of the trivet/rack in the pan. Pour ginger ale over the ham. (The ginger ale will infuse the ham with a wonderful flavor while baking). Sprinkle ham with ground cloves. Tent with more foil place in the oven. Allow 10 minutes per pound if your ham is fully cooked or 20 minutes per pound if ham is partially cooked.
  • 3. In the last 10 to 15 minutes of cooking, remove ham from oven. Remove foil and brush all side with honey. Sprinkle with brown sugar. Place pineapple slices on top of the ham and sprinkle with additional ground cloves.
  • 4. Return to oven and bake uncovered for 10 to 15 minutes or until pineapples are slightly browned. Remove from oven and let stand about 10 to 15 minutes before serving.
