I got this recipe from another forum I belong to. Annie paid to have this recipe tested at her county extension center to make sure it was safe for home canning. I canned this salsa last night. If you like the name brand picante salsa that is not made in NYC this taste just like it! This one is a keeper!

8 c tomatoes chopped, peeled and drained
2 1/2 c onions chopped
1 1/2 c green peppers chopped
1/4 c jalapeno peppers chopped
6 garlic cloves minced
2 tsp cummin *
2 tsp black pepper *
1/8 c salt, canning
1/4 c cilantro, fresh chopped
1 c apple cider vinegar *
2 c tomato sauce
2 c tomato paste
1/3 c sugar

Steps:

  • 1. Mix all ingredients in large sauce pan. Bring to a boil and boil 10 minutes. Pour salsa into hot prepared jars. Seal and process in Boiling Water Bath for 15 minutes.
  • 2. * According to NCHFP spices are just for taste and may be left out if you want. Also they say that 5% bottled lemon juice can be replaced for all or part of the vinegar. Other then that follow directions exactly to insure proper safety.

Easy to make, tasty fruit salsa and cinnamon tortilla chips. Great as an appetizer or a snack. Great for anytime!

Number Of Ingredients 10

2 kiwis, peeled and diced
2 Golden Delicious apples - peeled, cored and diced
8 ounces raspberries
1 pound strawberries
2 tablespoons white sugar
1 tablespoon brown sugar
3 tablespoons fruit preserves, any flavor
10 (10 inch) flour tortillas
butter flavored cooking spray
2 tablespoons cinnamon sugar

Steps:

  • In a large bowl, thoroughly mix kiwis, Golden Delicious apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Coat one side of each flour tortilla with butter flavored cooking spray. Cut into wedges and arrange in a single layer on a large baking sheet. Sprinkle wedges with desired amount of cinnamon sugar. Spray again with cooking spray.
  • Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit mixture.

CAFE ANNIE'S PICKLED JALAPENO SALSA

This is one of my adopted recipes. I finally got around to making it. It will definately perk things up! I used 6 fresh jalapenos and 8 rather large tomatillos. My yield was 6 cups. The yield is being updated to reflect this. This is the intro by the original poster: "Serve cold or at room temperature. It's wonderful served with grilled meats. It's also very nice mixed with some yogurt to toss with hot pasta for a low-fat quick dinner. And stir some into some soup; it will perk up almost anything without being overwhelming."

Number Of Ingredients 9

6 -12 fresh jalapenos, stems removed
8 -12 tomatillos, husks removed, quartered
1/2 white onion, chopped
2 garlic cloves, chopped
1/3 cup white wine vinegar
2/3 cup water
2 tablespoons sugar
1 1/2 teaspoons salt
1 bunch cilantro, chopped (about 1 cup)

Steps:

  • Combine all the ingredients except cilantro in a pot and bring to a boil. Cover, lower the heat, and simmer for about 10 minutes or until the tomatillos are soft.
  • Remove from the heat and allow to cool.
  • Transfer the cooled ingredients to a blender container and add the cilantro; puree until smooth and uniformly green. Refrigerate.
