My family's secret homemade spaghetti sauce is easy to make using a few staple ingredients you may already have on hand! Perfectly thick and packed with flavor, you'll be ditching that store bought pasta sauce!

1/4 cup extra virgin olive oil (I used Private Reserve Greek extra virgin olive oil)
1 medium yellow onion, grated
3 garlic cloves, finely minced
2 carrots, finely grated (use a food processor or a grater)
28 oz canned crushed tomatoes
1/2 cup water (pasta cooking water, preferred)
Kosher salt and black pepper
1 tbsp dried oregano
1 tsp sweet Spanish paprika
Pinch red pepper flakes, optional
Handful fresh basil, about ½ cup packed, torn
Handful fresh parsley, about ½ cup packed, chopped
3/4 lb to 1 lb of cooked pasta of your choice

Steps:

  • In a large pan heat the extra virgin olive oil over medium heat until just shimmering. Add the onions, garlic, and finely grated carrots. Cook for about 5 minutes, stirring regularly until softened.
  • Add the crushed tomatoes and about 1/2 cup water. Add a generous pinch of salt and pepper. Stir in oregano, paprika, crushed pepper flakes, if using. Finally, stir in the fresh basil and parsley.
  • Bring the sauce to a boil, then turn heat to low. Cover and let simmer for about 15 to 20 minutes. Check partway through, and if you feel the sauce is too thick, you can add a bit more water (preferably some of your pasta cooking water). When sauce is ready, throw in more fresh basil, if you like.
  • If serving for dinner, add cooked pasta of your choice to the sauce. Mix to combine and let the pasta cook in the sauce over low heat for about 5 minutes.

2 tablespoons good olive oil, plus extra to cook the pasta
1 pound lean ground sirloin
4 teaspoons minced garlic (4 cloves)
1 tablespoon dried oregano
1/4 teaspoon crushed red pepper flakes
1 1/4 cups dry red wine, divided
1 (28-ounce) can crushed tomatoes, preferably San Marzano
2 tablespoons tomato paste
Kosher salt and freshly ground black pepper
3/4 pound dried pasta, such as orecchiette or small shells
1/4 teaspoon ground nutmeg
1/4 cup chopped fresh basil leaves, lightly packed
1/4 cup heavy cream
1/2 cup freshly grated Parmesan cheese, plus extra for serving

Steps:

  • Heat 2 tablespoons of olive oil in a large (12-inch) skillet over medium-high heat. Add the ground sirloin and cook, crumbling the meat with a wooden spoon, for 5 to 7 minutes, until the meat has lost its pink color and has started to brown. Stir in the garlic, oregano, and red pepper flakes and cook for 1 more minute. Pour 1 cup of the wine into the skillet and stir to scrape up any browned bits. Add the tomatoes, tomato paste, 1 tablespoon salt, and 1 1/2 teaspoons pepper, stirring until combined. Bring to a boil, lower the heat, and simmer for 10 minutes.
  • Meanwhile, bring a large pot of water to a boil, add a tablespoon of salt, a splash of oil, and the pasta, and cook according to the directions on the box.
  • While the pasta cooks, finish the sauce. Add the nutmeg, basil, cream, and the remaining 1/4 cup wine to the sauce and simmer for 8 to 10 minutes, stirring occasionally until thickened. When the pasta is cooked, drain and pour into a large serving bowl. Add the sauce and 1/2 cup Parmesan and toss well. Serve hot with Parmesan on the side.

4 clove finely chopped garlic
1/2 large yellow onion diced
3-4 can(s) depending how strong you prefer diced (millionnaire flat fillet anchovies in extra virgin olive oil 50g) tasting
1/2 c finely chopped fresh parsley
pinch freshly ground nutmeg
pinch red pepper flakes
1/4 c finely chopped fresh basil
1 medium can of stewed tomatoes we like to use homemade canned tomatoes approx 14-18 ounces
1/4 c white wine, dry
1 1/2 Tbsp tomatoe paste
1 Tbsp butter
black pepper to taste

Steps:

  • 1. Finely chop onion garlic set aside.
  • 2. Finely chop parsley and basil set aside.
  • 3. Open cans of anchovies and drain oil from 2 of the tins into a 3L sauce pan. Heat on Med temperature.
  • 4. Add diced Anchovies to pot and cook 1-2 min stirring occasionally to prevent from sticking.
  • 5. Add onions and garlic letting them sweat till translucent.
  • 6. Add your tomatoe ingredients, parsley, basil, nutmeg, chili pepper, dash of pepper to taste. Stir well.
  • 7. Add 1/4 cup of wine, stir.
  • 8. Add one tablespoon of butter on top of sauce...
  • 9. Place lid on and let butter melt, stir and reduce just to a simmer, stirring occasionally for 45-1 hour.
  • 10. Pour over Cooked Spaghetti Noodles and top with fresh parmesan ENJOY!

1 red bell pepper, finely chopped
2 garlic cloves, minced
2 tablespoons olive oil
1 lb ground lean pork sausage

The beauty and delight of this dish is that it is so fresh and clean - and it is a cinch to make. It's important to make the pesto with the best ingredients and then just toss in the hot cooked spaghetti to coat it and enjoy.

3/4 pound (about 2-1/2 cups) cherry tomatoes, very ripe and sweet
12 large fresh basil leaves
1/3 cup of whole almonds, lightly toasted
1 plump garlic clove, crushed and peeled
1/4 teaspoon peperoncino or to taste
1 tablespoon and 1/2 teaspoon salt
1/2 teaspoon coarse sea salt or kosher salt, or to taste, plus more for the pasta
1/2 cup extra-virgin olive oil
1 pound spaghetti
1/2 cup freshly grated Parmigiano-Reggiano or Grana Padano

Steps:

  • Rinse the cherry tomatoes and basil leaves and pat them dry.
  • Drop the tomatoes into the blender jar or food processor bowl followed by the garlic clove, the almonds, basil leaves, peperoncino and 1/2 tsp salt. Blend for a minute or more to a fine puree; scrape down the bowl and blend again if any large bits or pieces have survived.
  • With the machine still running, pour in the olive oil in a steady stream, emulsifying the puree into a thick pesto. Taste and adjust seasoning. (If you're going dress the pasta within a couple of hours, leave the pesto at room temperature. Refrigerate if you'll use it longer storage, up to 2 days, but let it return to room temperature before cooking the pasta.)
  • To cook the spaghetti, heat 6 quarts of water with 1 tablespoon salt, to the boil in the large pot. Scrape all the pesto into a big warm bowl.
  • Cook the spaghetti al dente, lift it from the cooking pot, drain briefly, and drop onto the pesto. Toss quickly to coat the spaghetti, sprinkle the cheese all over, and toss again. Serve immediately in warm bowls.

1 shallot, minced
2 garlic cloves, thinly sliced
1 teaspoon red-pepper flakes
8 ounces sliced deli ham, cut into little squares
1 (28-ounce) can tomato passata (purée)
1 pound penne
3/4 cup heavy cream
1/2 cup grated Parmigiano-Reggiano, plus more for garnish

Steps:

  • Bring a large pot of salted water to a boil. Add the olive oil to a large skillet and heat over medium. Add the shallot, garlic and red-pepper flakes. Cook, stirring often, until shallots and garlic soften but are not yet brown, 2 to 3 minutes. Add the ham and stir to coat, 1 to 2 minutes.
  • Add the tomato purée. Add ¼ cup of the boiling salted water from the pot to the can, stir to loosen any purée, then add the liquid to the pan. Season the sauce with salt. Increase the heat to medium-high and bring it to a boil, and then reduce the heat to medium-low and simmer for 10 minutes.
  • While the sauce simmers, cook the pasta in the boiling water according to package instructions until al dente; drain well.
  • Reduce the heat to low and then add the cream, cheese and salt; stir to combine. Add the drained pasta, and toss to coat. Transfer pasta to a serving dish and top with more cheese.

4 medium vine-ripe tomatoes, cut into 1 inch pieces
2 1/2 cups grape tomatoes, cut in 4 's
1/8 cup olive oil

1/3 cup riesling wine
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon fresh ground black pepper
1 (28 ounce) can crushed tomatoes
1 (6 ounce) can plain tomato paste
1 teaspoon sugar
1 teaspoon dried basil or 2 teaspoons fresh basil

Steps:

  • For Sauce:.
  • In a large pot, over medium heat add olive oil and fresh garlic. Sauté for 2-3 minutes until translucent, do not brown.
  • Add tomatoes add wine, garlic powder salt and pepper and cook, stirring occasionally for about 5-8 minutes until tomatoes have softened and broken down.
  • Add can tomatoes, tomato paste, sugar, dried or fresh herbs, the rest of the garlic, and red pepper flakes.
  • Reduce heat and simmer for about 20 minutes. Add the remaining cup of wine and meatballs (see recipe below) then continue to simmer for 15 minutes.
  • Add mushrooms and parsley and continue to cook for 10 more minutes until mushrooms are done.
  • Serve with desired cooked pasta.
  • For Meatballs:.
  • This can either be made in a food processor or by hand with fork or clean, bare hands. The 1st recipe is for the food processor.
  • Add all ingredients except olive oil and fennel seeds into a food processor and pulse until all combined.
  • Stir in fennel seeds. Form meat into 1 ½ inch meat balls.
  • In a pan over medium-high heat add olive oil and meat balls, one at a time, to hot oil and brown on all sides.
  • Drain oil.
  • For doing it with a fork or by hand:.
  • In a large bowl add all ingredients, except olive oil and stir with fork or clean hands until combined.
  • Form in to 1 ½ inch meat balls.
  • In a pan over medium-high heat add olive oil and meat balls, one at a time, to hot oil and brown on all sides.
  • Drain oil.
