Tired of Thanksgiving or Christmas turkey? These burritos are packed with flavor and not the same old turkey. A great change from the old standards. The great thing is, you can change or adjust the seasonings to your own taste. I like it spicy!

10 (10 inch) flour tortillas
3 cups chopped cooked turkey
1 (15 ounce) can black beans, drained
1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®)
1 (4 ounce) can chopped green chiles, undrained
1 teaspoon dried cilantro
1 teaspoon ground ancho chile powder
½ teaspoon garlic powder
½ teaspoon salt
1 (8 ounce) package shredded pepper Jack cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Wrap tortillas in foil and place in the oven while preheating to warm.
  • Combine turkey, beans, diced tomatoes and green chiles, chopped green chiles, cilantro, ancho chile powder, garlic powder, and salt in a saucepan over medium heat; bring to a simmer and cook until all liquid evaporates, 5 to 8 minutes.
  • Remove burritos from the oven. Place turkey-bean mixture in the warmed tortillas, add pepper Jack cheese, and roll into burritos. Place in a baking pan.
  • Bake in the preheated oven until heated through, about 20 minutes.

Great burritos that your kids will eat and ask for more. Ground turkey, crushed tomatoes, rice, onions, garlic, and celery wrapped in red cabbage within a white tortilla shell. We go to a lot of evening swim meets and our kids love them. If we told them what was inside they would say Eww! Without cheese, this is a lighter dinner alternative on the go.

water to cover
1 cup uncooked brown rice
1 head red cabbage
¼ cup olive oil
½ red onion, chopped
1 stalk celery, finely chopped
1 clove garlic, minced
1 pound ground turkey
sea salt to taste
1 (8 ounce) can crushed tomatoes
12 (10 inch) flour tortillas

Steps:

  • Bring water and brown rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and liquid has been absorbed, 45 to 50 minutes.
  • Cut off the stem of the red cabbage. Peel leaves off gently, being careful not to tear. Place individual leaves gently into a large pot of water and bring to a boil. Cook for 5 minutes; reduce heat and simmer until tender but still crunchy and red, 8 to 10 minutes more. Drain.
  • Heat olive oil in a large skillet over medium-high heat. Saute onion, celery, and garlic until softened, 5 to 7 minutes. Mix in turkey meat and season with salt. Cook and stir until browned and crumbly, 5 to 7 minutes. Add crushed tomatoes and cooked rice. Cook, stirring occasionally, until flavors combine, 10 to 15 minutes more.
  • Place 1 cabbage leaf on top of each tortilla. Fill with the turkey-rice mixture. Fold the bottom end up and roll into a tight burrito.
  • Heat a grill pan over medium heat. Add burritos in batches; cook, flipping as necessary, until outsides are crunchy, about 5 minutes.

3 tablespoons olive oil
2 red onions, sliced
2 bell peppers (preferably 1 red and 1 yellow), seeded, sliced
4 cups diced leftover cooked turkey meat
3/4 cup purchased fresh fire-roasted salsa
1 tablespoon ground cumin
1 8-ounce package grated Mexican 4-cheese blend (about 2 cups)
3/4 cup chopped fresh cilantro
6 burrito-size flour tortillas

Steps:

  • Preheat oven to 300°F. Heat oil in large nonstick skillet over medium-high heat. Add onions and bell peppers; sauté until tender and golden, about 15 minutes. Add turkey, salsa, and cumin; stir until heated through, about 5 minutes. Stir in cheese and cilantro; season generously with salt and pepper. Remove from heat; cover to keep warm.
  • Working with 1 tortilla at a time, heat tortilla directly over medium-high gas flame (or in dry skillet over medium-high heat) until warm, softened, and browned in spots, about 30 seconds per side. Place tortilla on work surface. Spoon 1 cup warm turkey mixture along center of tortilla; fold sides in over filling, then roll up tortilla to enclose filling. Place burrito seam side down on baking sheet, and place in oven to keep warm. Repeat with remaining tortillas and filling.

2 (7.75 ounce) cans Mexican-style hot tomato sauce (such as El Pato®)
1 (15.25 ounce) can whole kernel corn, drained
½ small onion, diced
1 (16 ounce) can fat-free refried beans
1 (16 ounce) container fat-free sour cream
¾ cup shredded reduced-fat Cheddar cheese
6 (10 inch) flour tortillas

Steps:

  • In a large skillet over medium high heat, brown ground turkey. Stir in tomato sauce, corn and onion. Reduce heat to medium and let simmer, stirring occasionally, until liquids reduce (about 20 minutes).

3/4 cup drained canned chick-peas (garbanzo beans)
1/2 cup dried apricot, chopped
1/3 cup minced shallot
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/2 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1/8 teaspoon ground red pepper
1 1/2 lbs ground turkey

6 (1 1/2 ounce) multi-grain hamburger buns, split

Steps:

  • Prepare grill.
  • Place chickpeas in a food processor; pulse 3 times or until chopped. Combine chickpeas, apricots, and next 7 ingredients (through turkey). Divide mixture into 6 equal portions, shaping each into a 1/2-inch-thick patty.
