4 -6 medium tomatoes
1/2 cup fresh basil
2 garlic cloves, crushed
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons olive oil
18 ounces fresh angel hair pasta
6 tablespoons freshly grated romano cheese

Steps:

  • In a food processor, combine tomatoes, basil, garlic, salt and pepper. Pulse to chop coarsely.
  • Stir in 1 tablespoon oil. Let stand 10 minutes.
  • In a large pot of boiling salted water, cook pasta. Drain well and toss with remaining oil.
  • Place pasta on a serving platter and top with sauce. Sprinkle with cheese.

1 lb. angel hair pasta
1/4 C olive oil
1/2 onion, chopped
4 cloves garlic, minced
2 cups roma tomatoes, diced
2 tbsp. balsamic vinegar
1 (10.75 oz) can low sodium chicken broth
crushed red pepper to taste
fresh cracked pepper
fresh basil, chopped
locatelli cheese to taste

Steps:

  • Heat olive oil in large skillet. Saute onions and garlic until lightly browned. Reduce heat to medium high and add tomatoes, vinegar and chicken broth. Simmer for about 8 minutes. Stir in black pepper, basil and cooked pasta, tossing thoroughly with sauce. Simmer about 5 minutes and serve with locatelli cheese.

Number Of Ingredients 9

8 oz angel hair pasta
2 Tbsp olive oil, extra virgin
2 scallions, minced
2 clove garlic, peeled and minced
8 oz cherry tomatoes, halved
2 Tbsp grated parmesan cheese
1/2 c fresh basil leaves, roughly chopped
1 tsp coarse kosher salt
1/4 tsp black pepper

Steps:

  • 1. Cook angel hair in Microwave Pasta Maker 8-10 minutes or until al dente. Drain and reserve 1/2 cup pasta water. Mince garlic and scallions. While pasta cooks, heat olive oil in a fry pan over medium-high heat. Add scallions and garlic and cook 2 minutes or until fragrant. Add tomatoes and cook 2-4 minutes, or until the tomatoes are tender and begin to breakdown slightly. Add the pasta to the pan and toss with Parmesan, basil, salt and pepper until well coated. Add reserved water if the sauce seems too dry. Top with additional parmesam and basil, if desired. Serve immediately.
