LAYERED STRAWBERRY ANGEL FOOD CAKE

Layered smooth whipped cream, 3 pints of strawberries, and fluffy angel food cake is an amazing triple layered dessert, so easy to make (with no baking and simple assembly) and a great large party dessert.

3 pints of strawberries - washed (quartered or sliced)
2 loaves of pre-made angel food cake
16 oz whipped cream (thawed out)
1 block of cream cheese (softened)
14 oz sweetened condensed milk
3/4 th cup strawberry preserves
1 extra pint of strawberries for decoration (OPTIONAL)

Steps:

  • Prep Angel Food Cake
  • Tear up into bite sized pieces - not super large but also not too small. Place in bowl or on plate and set aside.
  • Prep Strawberries
  • Once strawberries are washed, quartered and placed in a bowl, add 3/4th cup Strawberry PRESERVES (not jelly) to bowl and mix.
  • Make sure all strawberries are lightly covered in preserves.
  • Prep Whipped Cream
  • Add 16 oz thawed whipped cream, 1 block of softened cream cheese, and 14 oz of sweetened condensed milk into a bowl and mix until creamy.
  • Layered Strawberry Angel Food
  • Once all three layers are prepped, its time to assemble! Take a large casserole style baking dish and add half of the angel food cake chunks on the bottom of the dish.
  • Smother with half the strawberries.
  • For the last layer, add half of the whipped cream mixture and smooth with a spatula.
  • Now repeat the process with angel food cake, strawberries, and whipped cream mixture.
  • Feel free to add one last layer of decorative strawberries if you like and want it to look fancy.
  • Simply use a large serving spoon to scoop out Strawberry Angel Food Cake!

This Strawberry Lemon Angel Food Cake Roll is an easy dessert made with angel food cake mix, fresh lemon curd, and loads of fresh strawberries! The perfect summer dessert!

1 box plain Angel Food Cake mix
1 1/4 cups cold water ((or what is required on box))
1 cup granulated sugar (200g)
4 eggs
3/4 cup fresh squeezed lemon juice
zest of 1 lemon
2 tablespoons butter
4 oz cream cheese ((1/2 250g package) room temperature)
1/2 cup powdered sugar
1 cup heavy whipping cream
1 lb fresh strawberries (finely chopped)

Steps:

  • Preheat oven to 350 degrees F and line a 10x15x1" rimmed baking sheet with parchment paper (a little cooking spray on the pan helps the parchment to stay put!)
  • In a large bowl, whisk together the cake mix and required amount of water as directed on the box.
  • Pour into prepared pan and bake for 20-23 minutes, until light golden brown on top.
  • Dust a clean, lint-free kitchen towel with powdered sugar and turn the warm cake out onto the towel. Peel off the parchment.
  • Roll the cake up with the towel, starting at the short end. Let cool completely (if leaving it more than a few hours, be sure to wrap completely in a towel or place in an airtight container or bag).
  • While your cake is cooling, make your lemon curd. In a large saucepan, whisk together sugar, eggs, lemon juice and lemon zest.
  • Cook over medium heat, whisking constantly, until thickened (it will coat the back of a spoon). Stir in butter.
  • Strain through a fine mesh sieve to remove any lumps. Press a piece of wax paper or plastic wrap onto the surface of the lemon curd in the bowl and refrigerate until chilled, at least a few hours.
  • Just before assembling, make your whipped cream. In a large bowl, beat your room temperature cream cheese with an electric mixer until smooth.
  • Add powdered sugar and beat again until combined. Add cream and beat on low until incorporated, then on high until thickened and fluffy (see video for desired texture).
  • Carefully unroll the cooled cake. Spread with lemon curd, leaving a few inches at the far end of the cake (it will squish down as you roll it).
  • Cover with chopped strawberries (save some for the top!) and carefully roll back up.
  • Place on a serving plate and cover with cream cheese whipped cream, then decorate with strawberries and lemon slices if desired.

Confectioners' sugar
1 cup (8 ounces) strawberry yogurt
1 package (3.4 ounces) instant vanilla pudding mix
3 drops red food coloring, optional
2 cups whipped topping

  • Preheat oven to 350°. Line an ungreased 15x10x1-in. pan with parchment., Prepare cake batter according to package directions. Transfer to prepared pan. Bake until top springs back when lightly touched, 15-20 minutes. Cool 5 minutes. Invert onto a tea towel dusted with confectioners' sugar. Gently peel off paper. 9 egg whites
1½ teaspoons vanilla extract
¾ teaspoon cream of tartar
1 cup + 2 tablespoons granulated sugar
¾ cup cake flour
1 tablespoon powdered sugar
2 cups heavy whipping cream (chilled)
6 tablespoons powdered sugar
1 teaspoon vanilla extract
3 cups diced strawberries
Powdered sugar (for dusting top of cake (optional))

Steps:

  • Place the egg whites in a large mixing bowl; let stand at room temperature for 30 minutes.
  • Meanwhile, line a 15x10-inch baking pan with waxed paper; lightly coat paper with cooking spray and set aside. Preheat oven to 350 degrees F.
  • Add vanilla and cream of tartar to egg whites; beat on medium speed until soft peaks form. Gradually beat in sugar, 2 tablespoons at a time, on high until stiff glossy peaks form and sugar is dissolved. Fold in flour, ¼ cup at a time.
  • Carefully spread batter into prepared pan. Bake for 15-20 minutes or until cake springs back when lightly touched. Cool for 5 minutes.
  • Dust a clean kitchen towel with 1 tablespoon powdered sugar. Turn the cake out onto the kitchen towel. Gently peel off waxed paper. Roll up cake in the towel jelly-roll style, starting with a short side. Cool completely on a wire rack.
  • Meanwhile, in a medium bowl, beat the cream on medium speed until it begins to thicken. Add powdered sugar and vanilla; increase the speed to medium-high and beat until soft peaks form. Gently fold in the strawberries. Store in the refrigerator until ready to use.
  • Unroll cooled cake; spread filling to within ½-inch of edges (you will have some filling leftover). Roll up again. Place seam side down on a serving plate; sprinkle with additional powdered sugar, if desired. Serve with any leftover strawberries and cream filling. Store leftovers, covered with plastic wrap, in the refrigerator.

1 plain angel food cake, baked and cooled
1 (8 ounce) package cream cheese, at room temperature
1 (12 ounce) can condensed milk
1/3 cup lemon juice
2 teaspoons almond liqueur or 2 teaspoons almond extract, plus
1/2 teaspoon almond liqueur or 1/2 teaspoon almond extract
2 1/2 cups sliced fresh strawberries
1 cup heavy cream
2 tablespoons confectioners' sugar
strawberry, stems removed, as garnish

Steps:

  • Using a serrated cake or bread knife, carefully cut the top 1-inch from the cake. Carefully remove and set aside. Using the tip of the knife, cut into the cake along the inner and outer edges, leaving a 1-inch border of cake intact. Using your fingers, carefully hollow out the cake between the two cuts, leaving an empty "tunnel". Tear the removed cake into bite-size pieces and set aside.
  • In a large mixing bowl using an electric mixer, beat the cream cheese until light and fluffy. Add the condensed milk and beat until thoroughly combined. Stir in lemon juice and 2 teaspoons of the liqueur. Gently fold in the cake pieces and strawberries. Spoon the mixture into the tunnel in the center of the hollowed out cake, and cover with the reserved cake top. Cover cake with plastic wrap and refrigerate at least 8 hours or overnight.
  • When ready to serve the cake, whip the cream until it begins to form peaks Add the confectioners' sugar and remaining 2 teaspoons of liqueur. Whip until the cream forms stiff peaks but is not dry. Frost the cake with the whipped cream and decorate with reserved whole strawberries. Refrigerate for up to 1 hour, or serve immediately.

A cooking instructor in my 9th grade home ec taught me how to make this, its very simple. I believe its best using a bunt pan, but not those ones with the designs. You can use a box of Angel food cake mix found usually in most stores or any favorite recipe you might have. Usually the only thing you have to add to Angel food Cake Mix is water, but it varies by brand. Included here is ONLY the recipe for the filling and directions on how to fill it. Feel free to substitute with any other fruit, like bananas or blueberries. I suggest looking up alton browns angel food cake recipe for some great tips for angel food cake. Bringing this to an event, but want to try it now? No problem! Save the insides you pull out of the cake and make yourself a trifle, alternating layers of cake, cream and berries in a large glass or small bowl. (You can also do this is disaster strikes with your angel food cake)

1 angel food cake mix or 1 store bought angel food cake
1 pint heavy cream
1 (3 1/2 ounce) box vanilla pudding mix
10 large strawberries (or more if desired)

Steps:

  • Mix and put the angel food cake into the bunt pan and bake as directed.
  • Let the cake cool COMPLETELY.
  • In the meantime take your pint of heavy cream and mix it with the pudding mix in a small bowl. The mixture should become thick and creamy but still spreadable.
  • When the cake is completely cooled, remove it carefully from the pan.
  • Use a knife and cut the cake in half through the middle, leave the cake in two complete sections (note cut in half as in horizontally not as if you were splitting the cake into slices and cut it in half first).
  • Laying the cake with the insides facing up use your fingers to hollow out a ring for the filling on both pieces. make sure not to damage the edges of the cake for presentation purposes. Feel free to "sample" the cake seeing as these pieces you remove will not be needed.
  • At this point you can cut, wash and put the strawberries or bananas or whatever fruit desired into the cream or just lay the cream in the crevice you created on the bottom half of the cake putting the fruit on top. Don't be sparing--let the cream fill over the crevice because the top has been hollowed out also. I cut the strawberries into tiny pieces because I don't like getting large wedges of fruit in one bite, and if you need to make it stretch further, everyone gets some fruit in their piece.
  • Once you fill the mixture in, carefully place the top back on the cake. Feel free to use any remaining filling to help secure excess fruit to the top.

1 box Betty Crocker™ white angel food cake mix
1 1/4 cups cold water
1 1/2 cups whipping cream
3/4 cup strawberry glaze (from a 13.5-oz container)
1 quart strawberries, finely chopped
2 tablespoons granulated sugar

Steps:

  • Move oven rack to lowest position (remove other racks). Heat oven to 350°F. In extra-large glass or metal bowl, beat cake mix and cold water with electric mixer on low speed 30 seconds. Beat on medium speed 1 minute. Pour into ungreased 10-inch angel food (tube) cake pan. (Do not use fluted tube cake pan or 9-inch angel food pan or batter will overflow.)
  • Bake 37 to 47 minutes or until top is dark golden brown and cracks feel very dry and are not sticky. Do not under bake. Immediately turn pan upside down onto glass bottle until cake is completely cool, about 2 hours.
  • In medium bowl, beat whipping cream on high speed until stiff peaks form. Fold strawberry glaze into whipped cream.
  • On serving plate, place cake with browned side down. Frost top and sides of cake with strawberry cream mixture. Refrigerate for at least 30 minutes before serving.
  • In small bowl, mix strawberries and sugar; refrigerate until serving. Spoon about 1/4 cup chopped strawberry mixture over each serving. Store covered in refrigerator.
