2 cups hot water
½ cup white sugar
½ cup lemon juice from concentrate
1 lemon, juiced
½ large cucumber, sliced
3 (12 fluid ounce) cans or bottles lemon-lime flavored soda
2 cups ice cubes, or as needed
1 lemon, thinly sliced
½ large cucumber, sliced and then halved

Steps:

  • Stir hot water and sugar together in a large pitcher until sugar is dissolved. Stir in lemon juice concentrate, lemon juice, and sliced cucumbers. Refrigerate for 30 minutes or until ready to serve.
  • Pour lemon-lime soda into pitcher. Serve lemonade over ice and garnished with lemon slices and halved cucumber slices.

1 cup water
½ cup white sugar
1 cucumber, sliced
6 lemons, juiced

Steps:

  • Make a simple syrup by stirring the water and sugar together in a saucepan over medium heat; heat until just about to boil and the sugar has dissolved. Place in refrigerator 30 minutes, or until cool.
  • Place the cucumber slices in a blender or food processor; blend until mashed into a pulp. Pour the cucumber pulp into a fine mesh strainer place over a bowl to catch the liquid; allow to sit until you have about 2/3 cup of liquid from the cucumber, about 15 minutes.
  • Stir the simple syrup, cucumber liquid, and lemon juice together in a pitcher. Serve cold.

1 ½ cups fresh squeezed lemon juice (7 to 8 large lemons, plus more for garnish)*
1 cup peeled and seeded cucumber (1 large cucumber, plus more for garnish)
1 cup granulated sugar (or coconut sugar)
6 cups water, divided

Steps:

  • Juice the lemons. Peel the cucumber and remove the seeds with a spoon (if using an English cucumber, you can skip this step).
  • Add the cucumber, sugar and 2 cups warm water to a blender and blend until smooth. Strain the liquid through fine mesh sieve into a pitcher, using a spatula to push the liquid through (discard the pulp; this takes a few minutes to complete).
  • To the pitcher with the cucumber mixture, add 4 cups cold water and the fresh squeezed lemon juice. Add a few handfuls ice and serve. If desired, garnish with extra cucumber slices and lemon wedges.

I replaced standard cucumbers with lemon cucumbers from our garden! Adapted from ichef.com with a nod and hat doff to another site (grouprecipes.com) for the hummus idea. If you dislike mint, try another fresh herb: basil is always an excellent choice, lovage, salad burnet or good ol' parsley. For a more substantial meal, add greens-arugula, baby spinach, loose leaf lettuce; perhaps some finely minced shallots, heirloom toms, ad infinitum...

1 egg yolk
1/4 teaspoon Dijon mustard
2 tablespoons fresh lemon juice
1/3 cup fresh mint leaves, loosely packed
1/2 cup sunflower oil
salt, to taste
cracked black pepper or white pepper, to taste
8 thin slices homemade wheat bread, your choice to remove crusts (ok to substitute white or multi grain bread-we used a 9-grain bread with sunflower seeds)
3 lemon cucumbers, peeled and thinly sliced (approximately)
greens, washed and dried (optional)

Steps:

  • Note: If you have concerns about the raw egg yolk, use a good quality store bought mayonnaise or substitute cream cheese (softened). For a vegan version, replace the mayonnaise with hummus or a mayo' substitute: Recipe #754 for example.
  • Minty Mayonnaise: in a blender or food processor, combine the egg yolks, mustard, lemon juice, and mint.
  • With motor running, add the oil in a slow steady stream and blend until emulsified. Season to taste with salt and pepper and transfer to a bowl.
  • Tea Sandwiches: Spread each slice of bread generously on one side with the mayonnaise.
  • On half the slices, arrange an even layer of lemon cucumber slices. Top with remaining bread slices.
  • Cut each sandwich into quarters before serving.
