This variation of fried rice is hugely popular in Thailand... kids love it! With crispy chicken tenders and cute frankfurters on the side, it's a plate of pure retro fun, but still tastes utterly delicious. Try it for your littlies today!

Number Of Ingredients 21

vegetable oil for shallow frying, plus 2 tbsp extra
4 small mini frankfurter/hot dog sausages
2 garlic cloves, finely chopped
1 small onion, finely chopped
2 slices ham, roughly chopped
2 tbsp frozen peas
1 tbsp raisins
2 cups cooked rice (click to see my recipe for how to cook rice for fried rice)
sliced tomato, to serve
2 fried eggs, to serve
Seasoning sauce:
¼ cup tomato ketchup
1 tbsp fish sauce
2 tsp soy sauce
½ tsp sugar
Crumbed chicken strips:
4 small pieces chicken breast or tenders
2 tbsp corn flour
1 egg
¼ cup panko breadcrumbs
sea salt

Steps:

  • Step 1.To make the crumbed chicken strips, season the chicken with salt. Then coat each piece in flour, then egg and then breadcrumbs.
  • Step 2.Heat enough oil to cover the base of a small frying pan over medium-high heat. Cook the crumbed chicken strips for 2-3 minutes each side or until golden and cooked through. Drain on paper towel.
  • Step 3.Clean the pan and add another tablespoon of oil. Cook the mini frankfurter sausages until cooked through. Drain on paper towel also.
  • Step 4.Combine the ingredients for the seasoning sauce.
  • Step 5.Heat the remaining 1 tablespoon of oil in a wok or large frying pan over medium-high heat. Add the garlic and onion and stir-fry for half a minute. Then add the ham, peas and raisins and stir-fry for another half a minute. Add the rice and the seasoning sauce and stir-fry until well combined.
  • Step 6.Serve with sliced tomato, fried eggs, crumbed chicken and sausages.

A quick fried rice like you get at your favorite Chinese restaurant. A couple of eggs, baby carrots, peas and soy sauce is all you need.

2 cups enriched white rice
4 cups water
⅔ cup chopped baby carrots
½ cup frozen green peas
2 tablespoons vegetable oil
2 eggs
soy sauce to taste
2 tablespoons sesame oil, to taste

Steps:

  • In a saucepan, combine rice and water. Bring to a boil. Reduce heat, cover, and simmer for 20 minutes.
  • In a small saucepan, boil carrots in water about 3 to 5 minutes. Drop peas into boiling water, and drain.
  • Heat wok over high heat. Pour in oil, then stir in carrots and peas; cook about 30 seconds. Crack in eggs, stirring quickly to scramble eggs with vegetables. Stir in cooked rice. Shake in soy sauce, and toss rice to coat. Drizzle with sesame oil, and toss again.

A lovely Costa Rican rice dish to serve with beans or meats.

1 1/2 cup(s) long grain rice
2 tablespoon(s) vegetable oil
1/2 small white onion, chopped
1/2 cup(s) red bell pepper,chopped
1 clove(s) garlic, minced
2 1/2 cup(s) water
1/2 teaspoon(s) salt (more to taste)

Steps:

  • Rinse rice thoroughly in a strainer until the water runs clear. Let is drain well.
  • Heat oil in a deep skillet over medium heat. Add the rice and stir until slightly brown. Add onions, bell pepper, and garlic. Saute 1-2 minutes.
  • Add the water and salt; cover and cook until all water is absorbed. If more water is needed to get the rice tender, add very small amounts at a time.
  • Allow rice to sit off heat for 10 minutes.

I came up with this recipe when I was craving fried rice and needed something lower in fat. The cabbage blends in with the rice so that even your kids won't know they are eating a vegetable. My husband likes to eat this for a late dinner because it's so light. Be creative or use whatever is in your fridge. Like it Spicy? Add some chili sauce. This dish goes great with baked spring rolls!

1 cup dry jasmine rice
3 tablespoons vegetable oil
2 cloves garlic, chopped
2 cups broccoli florets
1 cup cauliflower florets
5 green onions, chopped
1 (10 ounce) package shredded carrots
3 cups shredded cabbage
1 (8 ounce) can water chestnuts, drained
¼ cup soy sauce, or to taste
¼ cup water as needed
1 tablespoon chili sauce

Steps:

  • In a medium saucepan, bring 2 cups of water to a boil. Stir in rice. Reduce heat, cover, and simmer for 20 minutes.
  • Heat vegetable oil in a large skillet over medium heat. Cook garlic and rice in oil for about 2 minutes, stirring frequently to avoid burning the garlic. Add broccoli and cauliflower florets and cook, stirring occasionally, for 3 to 5 minutes. Toss green onions, carrots, cabbage, and water chestnuts into the pan, and cook another 5 minutes, or until vegetables are tender. Add additional water as needed to keep vegetables moist. Drizzle with soy sauce, and toss to coat.
