1 (16 ounce) can sliced peaches in juice
1 (16 ounce) can pineapple chunks in juice
1 (12 ounce) can mandarin oranges in juice
1 (8 ounce) package cream cheese, softened
2 tablespoons milk, or as needed
1 (12 ounce) container frozen whipped topping (such as Cool Whip®), thawed
1 cup sweetened flaked coconut

Steps:

  • Empty fruit cocktail, peaches, pineapple, and oranges out into a strainer set over a large bowl to drain.
  • Meanwhile, beat cream cheese in a bowl, adding milk until mixture is smooth and creamy. Mix in 3/4 of the whipped topping and 1/4 cup of the drained juice; blend well.

My Mother made this salad for every Thanksgiving and Christmas Dinners. I remember looking forward to this the most, as a kid, as I loved the marshmallows and the fruit. My Mom made a big bowl of this and added shredded coconut to half of it and left the other without for those of us non-coconut lovers. This is so quick and easy yet so tasty and refreshing, especially with a big heavy holiday meal. I also found out that this is a common Hawaiian Luau side dish. Time does not include chilling time.

2 (8 ounce) cans mandarin oranges, drained
1 (16 ounce) can pineapple tidbits, drained
3 bananas, sliced

Steps:

  • Drain all cans of fruit.

Variations include adding cheddar cheese, nuts such as macadamia or cashews, chopped fresh apples or other fruits such as mandarin oranges, bananas, etc.

1 c red and/or green grapes, halved
1 c broken pecans or walnuts
1 small can crushed or tidbit pineapple, drained well
1/2 c maraschino cherries, halved
1/2 c flaked coconut
1 large apple, peeled cored and diced
1 16 oz container sour cream
1 can(s) 11 or 15 oz mandarin orange segments, drained
1 c miniature marshmallows

Steps:

  • 1. Make sure that crushed or tidbit pineapple and mandarin oranges are well drained.
  • 2. Prepare the apple last so that it doesn't begin to oxidize, or mix it into the sour cream right away.
  • 3. Add all of the ingredients to a bowl, EXCEPT for the mandarin oranges and marshmallows; mix well.
  • 4. Gently stir in the marshmallows and mandarin oranges being careful not to break the oranges apart.
  • 5. Cover bowl and refrigerate for at least 4 hours or overnight. Serve and wait for the compliments.
  • 6. *Note: My mom's recipe called for pecans, I prefer walnuts. Use what suits your taste the best. Too much coconut will give the dish a chalky feel, but will still taste great, just be sure to use very fresh coconut.
  • 7. I added the grapes and cherries to my version, and you can add raisins, bananas, strawberries, blueberries, etc. Even if you omit the coconut or nuts it's still wonderful.

1 heaping cup sliced strawberries
1 heaping cup sliced green grapes
11 ounce can mandarin oranges, (drained and patted dry)
1 cup toasted sweetened coconut flakes
1 cup heavy whipping cream
2 tablespoons confectioner's sugar
1/4 cup real mayonnaise

Steps:

  • Spread coconut in a single layer across a baking sheet. Place baking sheet under broiler for about 1 minute or until coconut begins to brown. Remove from under broiler. Stir coconut on pan to keep it from sticking as it cools and set aside.
  • In a large bowl, whip heavy cream with a whisk or mixer for approximately 3-5 minutes or until stiff peaks begin to form. As cream whips, sprinkle in the confectioner's sugar. When cream is fully whipped, gently fold in the mayonnaise until fully incorporated.
  • In a large bowl, toss together all fruit except mandarin oranges and 1-2 tablespoons of toasted coconut. Gently fold oranges and whipped topping into the fruit mixture. Top with remaining coconut and serve.
