PUMPKIN BREAD (LESS SUGAR AND LESS OIL - STILL AMAZING!)
This is delish! Moist and full of flavor. What makes it even better? It has half the sugar and half the oil than most other recipes. NOTE: This bread becomes moister after a day or two. Enjoy!

Steps:
- Preheat oven to 350°F.
- Cream sugar, oil and applesauce together.
- Add eggs. Mix well.
- Add spices, vanilla and pumpkin.
- Mix flour, baking soda and salt.
- Alternately add flour mixture and water or apple juice. Mix well.
- Pour into 3 greased small bread loaf pans or 1 greased large bread pan.
- Bake at 350F degrees for 30 minutes for smaller loaves or 45-55 minutes for large loaf.
AMAZING VEGAN PUMPKIN BREAD
This bread is soooo moist and just sweet enough. Delicious with coffee. These would taste amazing with a streusel top or cream cheese frosting, if you wanted it even sweeter, but I think it stands alone amazingly well.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease 2 loaf pans with cooking spray.
- Combine water and flaxseed meal in a small bowl. Let stand until thickened, about 5 minutes.
- Stir flaxseed mixture, applesauce, brown sugar, vegetable oil, and almond milk together in a bowl. Add pumpkin puree.
- Mix whole wheat flour, baking powder, baking soda, cinnamon, salt, cardamom, cloves, and nutmeg together in a bowl. Blend in applesauce mixture. Divide batter between loaf pans.
- Bake in the preheated oven until a toothpick inserted into the center comes out mostly clean, 35 to 40 minutes. Cool in the pans for 10 minutes before inverting onto a wire rack.

MOM'S MOIST AND AMAZING PUMPKIN BREAD
Another great Thanksgiving tradition in our family is Mom's perfectly moist and delicious Pumpkin bread; a recipe that is also a "must-have" at all our holiday tables. It's just not the same without it and it has been a family favorite for over 30 years.

- 1. CREAM TOGETHER the first 4 ingredients in a medium sized bowl.
- 2. SIFT TOGETHER the next 7 ingredients in a separate, large bowl.
- 3. Add the creamed mixture to the flour mix and beat on medium speed for 2 minutes, then STIR in the chopped nuts and dates.
- 4. Pour batter into 2 greased 8x4x3 (or larger) loaf pans. Bake in preheated oven at 350 for approximately 1 hour. It may take a few minutes longer depending on your oven and the size loaf pans you use, so use a cake tester or toothpick inserted in center to test for doneness. When it comes clean, it's done!
- 5. Let cool in pan for about 10 minutes, then remove and place loaves on wire rack for about 30 minutes. IMPORTANT: Wrap each loaf in foil while still a little warm and then wrap again in plastic wrap and place in refrigerator or freezer until ready to serve. This step guarantees a beautiful and moist pumpkin bread!
AMAZING PUMPKIN BREAD
I started making this pumpkin bread recipe in 2007. I made it for the holidays and gave to friends as gifts. One of my friends asked for the recipe. She called me after the holidays and asked me to make it for her because mine was special. It truly is a great recipe.

- 1. A special hint I learned is to make sure that the baking soda and baking powder you use is fresh. Combine all the dry ingredients together in a seperate bowl. That includes, sugar, flour, baking powder, baking soda, salt and all the spices.
- 2. In a large bowl, gently beat the eggs. Combine the sugar and oil with the eggs and beat well. Add pumpkin and mix well. Alternate adding the dry ingredients with the water, beating well after each addition. I use a stand up mixer.
- 3. Pour mixture into two 9-in.x5-in.x3-in loaf pans. Bake 350 for 60-65 minutes. The actual bake time depends on the type of oven you use. The bread is done when a toothpick inserted in the middle comes out clean. Cool for 10 minutes before removing from pan. Cool completely on wire racks.
