Time 35m

Number Of Ingredients 13

1 pound portobello mushrooms (gills+stems removed)
3/4 cup California Walnuts
2 tablespoons oil
1 medium onion, chopped
1 green bell pepper, chopped
4 cloves garlic, minced
1 1/2 cups ketchup
2 tablespoons brown sugar
1/2 teaspoon EACH: dry mustard AND cayenne pepper
1 tablespoon tomato paste
1 tablespoon Worcestershire sauce (or vegan Worcestershire)
1 tablespoon apple cider vinegar
buns for serving

Steps:

  • make the 'meat': Pulse the mushrooms and walnuts in a food processor in batches until it breaks down into a ground beef texture.
  • cook: heat the oil in a large skillet over medium high heat. Add the onions, bell pepper and minced garlic, and let cook for 5 minutes or until the veggies soften. Add the prepared mushroom mix to the skillet, stir so everything is well combined and let cook for 5 minutes. Add the remaining ingredients: ketchup, brown sugar, dry mustard, cayenne, tomato paste, Worcestershire sauce, and apple cider vinegar. Stir everything together and let simmer for 5 minutes. Adjust with additional salt to taste.
  • assemble: Serve the prepared sloppy joe mix on top of toasted buns. Best when served the day it's prepared. I find the sloppy joes mixture looses that texture on day two.

The meat won't be missed in my version of sloppy joes. It tastes like the classic recipe, but is lower in fat and a great option for vegetarians. -Linda Winter, Oak Harbor, Washington

My daughter, Tiffany, came up with this lower-fat version of traditional sloppy joes. Best of all, this recipe can be made ahead and frozen for real holiday convenience.
