Steps:
- Heat olive oil in a large skillet over medium heat; cook and stir onion and garlic until onion is tender and translucent, about 5 minutes. Stir in crushed tomatoes, tomato paste, red wine, Italian seasoning, sugar, garlic powder, and garlic salt. Season with salt and black pepper. Bring to a boil, reduce heat to medium-low, and continue simmering while preparing meatballs.
- Mix ground beef, egg, bread crumbs, mozzarella cheese, and parsley in a large bowl. Roll walnut-size meatballs and place in the simmering sauce, making sure sauce covers entire meatball. Increase heat to medium and simmering until meatballs are no longer pink in the center, about 40 minutes, turning meatballs once about halfway through.
- Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 to 10 minutes. Drain.
- Serve meatballs and sauce over spaghetti with a sprinkle of Parmesan cheese.

This recipe combines my meatball recipe with one from Alton Brown off Good Eats. My husband and I think they are some of the best meatballs ever made.

- Preheat oven to 400.
- In a large mixing bowl, combine the meat, spinach, cheese, eg, basil, garlic powder, red pepper flakes, and 1/4 c of the bread crumbs. Mix well.
- Place the remaining bread crumbs into a small bowl. Use a scal to weigh meatballs into 1 1/2 oz portions and place on a sheet pan. Shape into meatballs. Place the meatballs in individual, miniature muffin tin cups. Bake for 20 minutes or until golden and cooked through.

AMAZING SPAGHETTI AND MEATBALLS.
Everyone who has tried this has told me this is the best spaghetti and meatballs they have ever tasted. It makes a lot, and can be frozen in small batches to have a quick supper any night of the week.

- 1. Cut the cherry tomatoes in half. Place the tomatoes and the onions on a sheet pan. Sprinkle with salt and coarse black pepper, and a table spoon of olive oil. Mix well. Bake at 350 degrees until they are soft. (about 20 minutes).
- 2. In a Cuisinart or blender, mix the roasted tomatoes, and all other remaining sauce ingredients except the paste and sugar, until it becomes a smooth liquid.
- 3. Put the sauce in large fry pan and add the tomato paste. Stir and let simmer until the sauce and paste combine. (About 10 minutes). If the sauce is too thick, add small amounts of water until you reach the consistency you like. Add sweetener one package at a time to taste.
- 4. While sauce is simmering, put all meatball ingredients in a large bowl and mix lightly with tips of your fingers. Avoid compressing the meat as you mix. Using a standard ice cream scoop, scoop individual meatballs onto a parchment lined baking sheet. Gently roll them into balls. Bake at 350 degrees for 25 minutes, turning once with a small spoon half way through the cooking time.
- 5. When cooked, add the juice drippings from the meat into the sauce and stir. Add the meatballs directly into the sauce pan covering them with the sauce. Simmer while spaghetti is cooking.
- 6. In a large pot boil water and cook the amount of spaghetti you need for the amount of people you are serving. Drain the spaghetti and top with the meatballs, sauce, and parmesan cheese.
- 7. Left over meatballs and sauce can be store in portions in the freezer for up to a year. Simply reheat them in a saucepan when you want more spaghetti and meatballs.

- Start to cook a double batch of Sugu without the ground beef (See sugu recipe).
- Sugu should simmer on low heat about 1 hour before meatballs are placed inside).
- In a large bowl, Mix turkey, garlic, parsley, sweet basil, onion, salt, pepper, Worcestershire sauce, and Asiago cheese.
- Soak the slices of bread thoroughly in a bowl of water, squeeze out water and pull apart, add to turkey mixture.
- Add two beaten eggs in mixture to hold together.
- Form meatballs in desired size, then place on a plate.
- Sauté meatballs in 3 tablespoon of olive oil about 2-3 minutes.
- Place meatballs in Sugu.
- Simmer meatballs in Sugu for ½ hour on low heat.
- Serve with pasta and fresh grated Asiago cheese.

Steps:
- Preheat the Oven to 400°F.
- Use broiler pan or baking sheet with tin foil sprayed with non stick.
- Grate the cheese and cut the onion into small pieces.
- Mix all ingredients except for beef or other meat (great to do while you are defrosting the beef).
- Include the meat and mix together.
- Put small balls of meatballs on the baking sheet or broiler pan.
- Put in oven for 20 minute.
- Put in tomato sauce and serve over whole wheat noodles.
