HEARTY SPINACH SALAD WITH HOT BACON DRESSING

- Place spinach in a large salad bowl; set aside. In a small nonstick skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels to drain. , In the drippings, saute onion until tender. Stir in the brown sugar, vinegar, salt, mustard, celery seed and pepper. Combine cornstarch and water until smooth; stir into skillet. Bring to a boil; cook and stir until thickened, 1-2 minutes. , Remove from the heat; pour over spinach and toss to coat. Sprinkle with bacon. Serve immediately.

AMAZING HOT BACON SALAD
I made this recipe for my new son-in-law & he loved it so much that he literally drank the remaining dressing left in the bowl!!! It came from a PA Dutch friend.

Steps:
- Wisk together first 7 ingredients. Fry bacon, in a medium frying pan, until well done & pour the wet ingrdients into the hot pan. Do not drain the grease! Cook on medium until thickened, about 10 minutes.
- Meanwhile, tear a bowl of mixed head & romaine lettuce. Add a thinly sliced red onion. May add hard-boiled eggs, if desired. Pour the hot dressing over the salad & serve.

- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
- In a medium bowl, whisk together the sugar, cornstarch and salt, and slowly pour in water and vinegar, whisking constantly.
- In a medium skillet, add the crumbled bacon and pour the vinegar mixture over it. Cook over medium heat, stirring constantly, until mixture thickens.

- Cook macaroni according to package directions., Meanwhile, in a large skillet, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon. In the same skillet, saute mushrooms in drippings until tender; remove with a slotted spoon. Add the sugar, flour, salt and pepper to the skillet; gradually stir in vinegar until smooth. Bring to a boil. Cook and stir for 1-2 minutes or until thickened., Drain macaroni. In a large bowl, combine the macaroni, onion and celery. Drizzle with vinegar mixture. Add mushrooms and bacon; toss to coat. Garnish with radishes and parsley.

A classic dressing for spinach salad, but it's also wonderful on other veggies like fresh green beans. Even the avowed green bean hater in the family tried them with this dressing and went back for seconds!

Steps:
- Fry bacon until crisp.
- Remove bacon from pan leaving fat.
- Set bacon aside.
- Add onion to bacon fat in pan and cook 5 minutes until onion is soft.
- Remove onion from pan leaving fat.
- Set onion aside with bacon.
- Pour bacon fat into measuring cup and add enough vegetable oil to equal 1/2 cup.
- Add fat/oil to cornstarch mixture and set aside.
- Combine vinegar, water, sugar, salt and pepper in small saucepan and heat to a boil.
- Add cornstarch mixture and cook until thickened about 1-2 minutes.
- Remove from heat and add bacon and onion.
- Serve while warm.
