Steps:
- Preheat oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
- Beat butter, brown sugar, and white sugar together in a large bowl using an electric mixer until light and fluffy. Add eggs 1 at a time, beating well after each addition; stir in vanilla extract.
- Mix flour, baking soda, and salt together in a separate bowl; gradually stir into the creamed butter mixture until dough is just mixed. Fold pistachios and white chocolate chips into the dough.
- Drop spoonfuls of dough onto the prepared baking sheet.
- Bake in the preheated oven until edges begin to crisp, 10 to 12 minutes. Cool cookies on the baking sheet for 2 to 3 minutes; transfer to a wire rack to cool completely.

AMAZING SOFT AND CHEWY CHOCOLATE CHIP COOKIES
These are absolutely the most amazing chocolate chip cookies ever! They are crisp on the outside yet soft and chewy in the middle and delicious chocolate chips are spread throughout them making them even more of a scrumptious treat. Whenever I make them they disappear in seconds; children and adults alike can't get enough. These cookies are so moist and chewy they literally melt in your mouth! The best EVER!

Steps:
- Preheat the oven to 160°C (or 320°F).
- Melt butter in a saucepan over medium heat (or in the microwave)and set aside to cool slightly.
- Pour butter into a large bowl and stir in brown sugar and caster sugar until smooth and sugar is mostly dissolved.
- Lightly beat the egg with a whisk or fork and stir into the sugar mixture along with the vanilla extract.
- Sift flours and baking powder together into a small bowl and then gradually mix into sugar mixture until combined.
- Stir through chocolate chips.
- Drop rounded tablespoons of the cookie mixture onto lined baking trays.
- Bake for 12 minutes or until just lightly golden then remove from oven and allow to cool on trays for 3 minutes before transferring to a wire rack to cool completely.
AMAZING COCONUT, ALMOND FLOUR CHOCOLATE CHIP COOKIES
I came up with this recipe when I had a sweet tooth that needed tending to, and I wanted to make it a little healthier than your average cookie. So I replaced some of the flour with coconut and almond flour and used 1/2 cup of coconut oil instead of a whole cup of butter. I use all organic ingredients, but that's up to you. This is our family go-to cookie recipe. We've made it so many different ways and loved them all, but our favorites are semisweet chocolate chips with walnuts, or white chocolate chips with macadamia nuts. It's a win-win with these amazing cookies.

- Mix all ingredients together with a handmixer in a large bowl EXCEPT chocolate chips.

- Position a rack in the middle of the oven and preheat the oven to 375°F. Line 2 large baking sheets with parchment paper.
- In the bowl of a stand mixer fitted with the paddle attachment, combine the butter and sugars, and beat on high speed until pale and fluffy, about 5 minutes. - Preheat oven to 350 degrees. Combine brown sugars, shortening, milk, vanilla, egg, flour, salt, and baking soda and begin mixing on low speed until just combined. Increase speed to medium and beat until well combined. Stir in chocolate chips. Drop by rounded tablespoonfuls on ungreased cookie sheet about 3 inches apart. Bake approximately 10 minutes or until tops are lightly browned and surface is no longer shiny. Remove from oven and cool.
