I was raised on adding hard boiled eggs to my tuna and so it is just the way I like it along with the crunch of some celery added in and chopped onion. ALBACORE TUNA SALAD
1 small can of albacore tuna (5 oz can)
2 medium eggs, hard boiled and sliced
2 celery stalks, diced small
2 - 3 Tbsp onion, chopped
1/2 iceberg lettuce head, chopped
olive oil or grapeseed oil and vinegar
DRESSING FOR TUNA
3 Tbsp mayonnaise
1/8 tsp garlic powder (heaping)
1/8 tsp onion powder (heaping)
1/2 tsp beau monde seasoning
1/4 tsp black pepper
GARNISH FOR SALAD
2 Tbsp capers
1 dozen grape tomatoes, sliced
balsamic glaze, drizzled

Steps:

  • 1. Hard boil your eggs and then slice them two ways in your egg slicer.
  • 2. Get two bowls ready by taking 1/2 of your shredded lettuce and placing it in the bowls. Drizzle olive oil and vinegar on lettuce.
  • 3. Drain tuna and place in bowl. Add celery, eggs and fresh chopped onion. Mix your mayonnaise with the seasonings and add to tuna mixture. (You don't need salt because beau monde has plenty in it.) Once you have it all mixed take an ice cream scooper or big spoon and place a scoop of tuna on top of lettuce. Then, garnish with capers, tomatoes and a circular drizzle of balsalmic glaze. Add a little more cracked pepper if you like.

My recipe for Albacore tuna salad. NOTE: Recipe requires one large 12-ounce can solid white Albacore tuna.

1 (12 ounce) can solid white tuna packed in water, drained
1/3 cup diced celery
1/3 cup chopped dill pickle (Mt. Olive Zesty Garlic Dills)
2 tablespoons minced fresh baby dill
2 tablespoons chopped red onions
1 tablespoon snipped green onion top
1 tablespoon finely minced fresh flat leaf parsley
2 teaspoons imported non-pariel capers
1/2 cup real mayonnaise
2 tablespoons fresh lemon juice (Meyer lemon)
1/2 teaspoon granulated sugar
1/4 teaspoon coriander powder
1/4 teaspoon fresh lemon zest (Meyer lemon)
1/4 teaspoon freshly cracked black pepper
1/4 teaspoon fine sea salt

Steps:

  • DRAIN 12 ounces solid white Albacore tuna; SET aside.
  • CHOP all SALAD ingredients to specifications.
  • WHISK the following DRESSING ingredients in a medium bowl: 1/2 cup real mayonnaise, 2 tablespoons fresh Meyer lemon juice, 1/2 teaspoon granulated sugar, 1/4 teaspoon coriander powder, 1/4 teaspoon freshly grated lemon zest, 1/4 teaspoon freshly cracked black pepper, and 1/4 teaspoon fine sea salt.
  • STIR in the tuna; BREAK up tuna with a fork until desired consistency is reached (I like mine slightly chunky).
  • FOLD in remaining SALAD ingredients until mixture is evenly blended (1/3 cup diced celery, 1/3 cup chopped dill pickles (Mt. Olive Zesty Garlic Dills), 2 tablespoons minced fresh baby dill, 2 tablespoons chopped red onion, 1 tablespoon snipped green onion tops, 1 tablespoon finely minced fresh flat leaf parsley, and 2 teaspoons imported non-pariel capers).
  • SERVE on your favorite bread, or serve on a bed of lettuce, with vine-ripened tomatoes, ripe avocado, and a light Italian vinaigrette, garnished with a whole black olive and a sprig of fresh dill or parsley if desired; ENJOY!

1 red bell pepper, finely chopped
1/2 red onion, finely chopped
1 cucumber, cut lengthwise & sliced
15 oz albacore tuna fish (drained)
2 cloves garlic, minced
1/2 cup chickpeas (garbanzo beans)
1/2 cup black olives, cut in half
1 bunch fresh parsley, chopped
salt and black pepper
3 Tablespoon extra virgin olive oil
juice of 1 lemon
zest of 1 lemon

Steps:

  • Add red bell pepper, red onion, cucumber, albacore tuna fish, garlic, chickpeas, black olives and lemon zest in a large mixing bowl and mix.
  • Drizzle olive oil, lemon juice and season with salt and freshly ground black pepper.

2 cans (8 ounces each) unsweetened crushed pineapple, drained
2 cans (5 ounces each) white water-packed tuna, drained
1 large apple, chopped
1 cup sliced celery
1 cup golden raisins
1/2 cup sliced almonds, toasted

1 tablespoon lemon juice
Bread slices or lettuce leaves

⅓ cup dried cranberries
½ sweet apple, cut into 1/4-inch pieces
2 tablespoons light mayonnaise
1 green onion, chopped
sea salt to taste
ground black pepper to taste
4 cups chopped fresh spinach

Steps:

  • Mix tuna, cranberries, apple, mayonnaise, green onion, sea salt, and black pepper together in a bowl; refrigerate 1 hour.
