Steps:
- Inspect 5 cup-sized jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until jam is ready. Wash new, unused lids and rings in warm soapy water.
- Wash and pit the cherries. Chop them finely. You should have about 5 cups. Place cherries in a large saucepan and slowly bring to a boil over low-medium heat. Stir in pectin and slowly bring mixture to a full rolling boil. Add sugar and stir to dissolve. Return to a full rolling boil on high heat and boil for exactly 1 minute, stirring constantly. Skim off any foam with a ladle or a large spoon.
- Remove from heat and stir in amaretto liqueur.
- Ladle sour cherry jam into the prepared jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any spills. Top with lids and tightly screw on rings.
- Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 10 minutes.
- Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart. Let rest for 24 hours without moving the jars. Gently press the center of each lid with a finger to ensure the lid does not move up or down. Remove the rings for storage and store in a cool, dark area.

- Put the amaretto, lemon juice, egg white and 4 tsp of the cherry syrup into a blender (you can also do this in a large cocktail shaker, you will just need to shake it very hard without adding any ice). Whizz up the mixture a few times at a high speed until it is pale and starting to increase in volume. If your blender is suitable for use with ice, add a few handfuls and pulse just twice more to chill the mixture. Alternatively, just stir in the ice until the outside of the jug feels cold. - Combine amaretto, lemon juice, orange juice, and simple syrup in jar. Secure lid and shake to combine. Freeze until ice-cold but not solid, at least 2 hours and up to 5 hours.
- Transfer cocktail to a blender and add 2 cups ice. Purée on high speed until thick and smooth. (On a hot day, you may need to blend in a few more ice cubes to thicken, but keep in mind that the more you add, the more diluted the drink will be.)

- Heat oven to 350°F Using 2 tablespoons shortening, generously grease a 10-inch tube pan.
- In small bowl, beat 2 egg whites, until foamy. Gradually add brown sugar and beat until stiff peaks form, about 3 minutes. Fold in coconut and ground pecans. Spread meringue on bottom and sides of pan to within 1-inch of top of pan.
- In large bowl, blend cake mix, sour cream, amaretto, water, eggs and 2 yolks at low speed until moistened. Beat 2 minutes at highest speed. pour batter evenly into prepared pan. Bake 55-65 minutes or until toothpick inserted in center comes out clean.

- Grease a 10" tube pan generously. In a small bowl, beat egg whites until foamy. Gradually add brown sugar, beat until stiff peaks form, about 3 min. Fold in coconut and pecans. AMARETTO SOUR
Jeffrey Morgenthaler, the bar manager of Pépé Le Moko and Clyde Common in Portland, Ore., enjoyed amaretto sours as a young man. As a bartender, he embarked on a project to make a better version of this often-mocked drink, which was typically composed of just amaretto and sour mix. He boosted the alcoholic strength by mixing in nearly a full ounce of overproof bourbon, replaced the sour mix with real lemon juice and added an egg white - a common ingredient in many sour recipes from the past. Given all the alterations, he might have given the cocktail a new name, but decided against that. "There wouldn't have been any point," he said. "There's a big difference between if I took this drink and made it good, and if I invented a new drink with amaretto. The latter wouldn't have the same gravitas."

I was about to make Sheri D's Amaretto Sourcream Strawberries #161835, when my mom stopped by with 3 pounds of fresh Bing Cherries from Eastern Washington. She makes the 5 hour drive annually in July just to get fresh cherries and stock up on wine for the year! She saw what I was making and suggested the following recipes for the cherries. AMARETTO SWEET AND SOUR
I was craving an amaretto sour sooo bad but was unsure how exactly to make one and none of the recipes here on Zaar sounded quite right so I made up my own. You can adjust the sweet to sour ratio to your tastes by adding more lemon juice or more simple syrup. I know this isn't traditional but it's darn good. Serving size is approximate. I used a tall 'pepsi' glass per person but you could easily split into two smaller glasses. Enjoy.
