EASY BAKED PEARS WITH AMARETTI



Easy baked pears with amaretti image

A warming autumnal pud that's low fat, speedy and satisfying

4 ripe pears
100g ricotta
½ tsp cinnamon
4 tbsp clear honey , plus extra to serve
8 crisp amaretti biscuits

Steps:

  • Cut each pear in half, then place on a large baking tray. Use a teaspoon to scoop out the cores and make a dip in the centre of each pear. If your pears are firm, you may need to use a sharp knife to do this. Dollop about 1 heaped tsp ricotta into each dip, then sprinkle over the cinnamon and drizzle with a little honey.
  • Heat oven to 190C/fan 170C/gas 5, then roast the pears for 10 mins. Tip the biscuits into a food bag and use a rolling pin to lightly crush them. Remove the pears from the oven, then scatter the crumbs over each pear. Return to the oven for another 10 mins or until the pears are soft and the biscuit golden brown. Serve drizzled with honey.

3 tablespoons Di Saronno Amaretto or other almond-flavored liqueur
1 tablespoon balsamic vinegar
4 firm-ripe Bartlett pears, halved lengthwise and cored
1/3 cup water
4 amaretti cookies (Italian almond macaroons; 1‚ inches in diameter), crumbled

Steps:

  • Preheat oven to 425°F.
  • Mix Amaretto and vinegar in a 13- by 9-inch baking dish. Put pears, cut sides down, in dish.
  • Roast pears 15 minutes. Add water and roast until pears are tender but still hold their shape, 8 to 10 minutes more.
  • Arrange pears, cut sides up, on a platter and spoon pan juices over them. Sprinkle with half of cookie crumbs, then baste with pan juices. Sprinkle with remaining crumbs and serve warm or at room temperature.

5 firm but ripe pears, peeled, halved
2/3 cup crumbs from amaretti cookies (Italian macaroons) or almond biscotti
1 large egg yolk
7 tablespoons sugar
6 tablespoons fresh lemon juice
3 tablespoons unsalted butter
1 cup chilled whipping cream
2 tablespoons almond liqueur

Steps:

  • Preheat oven to 375°F. Butter 13x9x2-inch glass baking dish. Using melon baller or small spoon, core each pear half, leaving 1 1/2-inch-diameter cavity. Arrange 8 pear halves, cut side up, in prepared baking dish. Puree remaining 2 halves in processor. Place 1/2 cup puree in medium bowl (reserve any remaining puree for another use). Mix cookie crumbs and yolk into puree in bowl. Mound filling in pear cavities.
  • Combine 6 tablespoons sugar, lemon juice and butter in small saucepan. Bring to boil over medium heat, stirring until sugar dissolves and butter melts. Spoon syrup over pears.
  • Bake pears until tender, basting occasionally with syrup in dish, about 1 hour. (Can be prepared 3 hours ahead; let stand at room temperature.)
  • Whip cream with liqueur and remaining 1 tablespoon sugar in medium bowl until soft peaks form. Serve pears with whipped cream.

That natural sweetness of roasted pears is enhanced by crumbled almond cookies and a dollop of mascarpone -- a rich Italian cream cheese. For a substitute, combine 1/2 cup room-temperature regular cream cheese with a tablespoon or two of whole milk.

4 firm, ripe Bartlett pears (red or green), unpeeled, halved lengthwise and cored
2 tablespoons fresh lemon juice
2 tablespoons sugar
Coarse salt
1/2 cup mascarpone cheese
8 amaretti cookies (Italian almond macaroons)

Steps:

  • Preheat oven to 375 degrees. In a 9-by-13-inch baking dish, toss pears with lemon, sugar, and a pinch of salt; arrange pears in dish, cut side down. Add 1/4 cup water; cover dish tightly with aluminum foil, and bake until pears are easily pierced with the tip of a paring knife, 25 to 30 minutes.
  • Place each pear half, cut side up, on a platter, and top with 1 tablespoon of mascarpone and 1 crumbled cookie. Drizzle with juices from baking dish, and serve.

Per Pear (per serving):
• 1 largish pear (Red Anjou, or Red Bartlett, or Bosc)
• 3 amaretti cookies
• 1 tsp brown sugar
• ¼ tsp cinnamon
• reserved pear meat
• 1 tbsp sliced almond
• vanilla ice cream
• Amaretto DiSaronno

Steps:

  • • pre-heat oven to 350° • cut pear lengthwise about 2/3 up from bottom, reserving cut piece and coring the pear • crush amaretti cookies in food processor with brown sugar and cinnamon and remove • remove skin from reserved pear slice and chop up reserved pear meat in food processor • mix pear meat, cookies crumbs with brown sugar and almonds together • stuff pear cavity • bake for 1 hour • plate pear with small scoop of vanilla ice cream • drizzle all with Amaretto

8 hard Bosc pears
8 teaspoons brown sugar
8 tablespoons butter, room temperature
16 amaretti (Italian almond cookies)
1/2 cup heavy cream

Steps:

  • Preheat oven to 350 degrees.
  • Core the pears, leaving the skins on.
  • Mix the sugar and butter together and spoon into the cavities.
  • On a large baking dish make eight aluminum foil ''wells'' and place a pear in each. This will stop the butter mixture from running out of the cavities. Place the baking dish in a shallow pan of water. Bake the pears one hour.
  • Place the cookies on a breadboard and crush finely, using a rolling pin or a thick glass.
  • To serve, arrange the pears in a serving dish and sprinkle with crushed amaretti. Pass the cream separately.

3/4 cup dry white wine
2 to 3 tablespoons sugar

Steps:

  • Preheat oven to 400 degrees.
  • Peel, core and halve the pears and place them in a greased baking dish. Crush the cookies and mix them with the butter. Stuff into the pear cavities.
  • Pour the wine over the pears, sprinkle with sugar and bake for 45 minutes to one hour, until tender.
