I enjoy experimenting in the kitchen and adapting recipes to suit my tastes. In this one, I give everyday pork chops extra flair by simmering them in tangy sauce. Palate-pleasing rice adds texture.

4 boneless pork loin chops (3/4 inch thick)
1 tablespoon lemon-pepper seasoning
1 teaspoon plus 2 tablespoons olive oil, divided
1 cup sweet-and-sour sauce
1 can (20 ounces) pineapple chunks, drained
1/2 medium green pepper, julienned
1/2 cup chopped red onion
6 cups cold cooked rice
1/4 cup stir-fry sauce

Steps:

  • Sprinkle pork chops with lemon-pepper. In a large skillet, brown chops on both sides in 1 teaspoon oil over medium-high heat; remove and set aside. Drain skillet; add sweet-and-sour sauce and pineapple chunks. Bring to a boil. Reduce heat; return chops to skillet. Simmer, uncovered, for 5 minutes or until meat juices run clear. , Meanwhile, in another skillet, saute the green pepper and onion in remaining oil for 2 minutes. Add rice and stir-fry sauce; cook and stir for 4 minutes or until lightly browned. Transfer to a serving platter; top with pork chops.

2 teaspoons oil
1 1/2 lbs pork chops (4)
1 medium red bell pepper, cut into chunks
1 medium yellow pepper, cut into chunks
2 (8 ounce) cans pineapple chunks in juice, undrained
1/2 cup reduced-sodium fat-free chicken broth
1/4 cup kraft Catalina dressing
1 1/2 teaspoons garlic powder
1 1/2 cups MINUTE White Rice, uncooked

Steps:

  • HEAT oil in large nonstick skillet on medium-high heat. Add chops; cook 5 minute on each side or until browned on both sides.
  • ADD peppers, pineapple with its juice, broth, dressing and garlic powder; mix well. Bring to boil.
  • STIR in rice; cover. Reduce heat to medium-low; simmer 5 minute or until chops are cooked through (160°F.) Remove from heat; let stand 5 minute.

2 cups instant white rice, uncooked
2 cans (8 oz. each) pineapple tidbits in juice, undrained
1 can (14-1/2 oz.) chicken broth
1/2 cup chopped green pepper
1/2 tsp. ground ginger
1/2 cup SHAKE 'N BAKE Original Pork Seasoned Coating Mix
4 bone-in pork chops (about 5 oz. each), 1/2 inch thick

Steps:

  • Preheat oven to 375°F. Mix rice, pineapple with juice, broth, green pepper and ginger in 13x9-inch baking dish.
  • Measure 1/2 cup coating mix and place in plastic bag; coat chops as directed on package. Place chops on rice mixture.
  • Bake 35 to 40 minutes or until chops are cooked through (165°F).
