CHERRY-ALMOND REFRIGERATOR COOKIES

1/2 cup slivered almonds
1 cup butter or margarine, softened
1 cup granulated sugar
1/2 cup packed brown sugar
1 egg
1 teaspoon almond extract
2 1/2 cups Gold Medal™ all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup chopped red candied cherries

Steps:

  • Sprinkle almonds in ungreased heavy skillet. Cook over medium heat 5 to 7 minutes, stirring frequently until nuts begin to brown, then stirring constantly until nuts are light brown. Cool 10 minutes. In food processor, process almonds until finely chopped; set aside.
  • In large bowl, beat butter, granulated sugar and brown sugar with electric mixer on medium speed until smooth and creamy. Add egg and almond extract; beat on medium speed until smooth. On low speed, beat in flour, baking powder and salt until dough forms. Stir in cherries and chopped almonds.
  • Form dough into 2 (8-inch) logs. Wrap in plastic wrap or waxed paper. Refrigerate at least 2 hours.
  • Heat oven to 375°F. Cut dough into 1/8- to 1/4-inch slices. On ungreased cookie sheets, place slices 2 inches apart.
  • Bake 7 to 9 minutes or until edges start to turn golden brown. Cool 1 minute; remove from cookie sheets to cooling racks.

2 cups butter
2 cups sugar
1/3 cup sour cream
4 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon clove, ground
1/2 teaspoon nutmeg
1 cup almonds, sliced

Steps:

  • Cream butter and sugar until fluffy.
  • Dissolve soda in sour cream.
  • Sift flour, salt, cloves and nutmeg together. Add dry ingredients gradually to sour cream, mixing after each addition.
  • Add almonds form logs of dough about 2 inch in diameter.
  • Wrap rolls in waxed paper and chill overnight, or atleast a few hours.
  • When ready to bake, cut into 1/4 inch slices and bake in preheated oven at 400~F for 12 minutes or until golden brown.

1 cup butter softened
1 cup icing sugar
1 egg
1 tsp almond essence
2 1/4 cups flour
1/4 tsp salt
2 cups candied cherries halved
1 cup sliced almonds

Steps:

  • Preheat oven to 325. Beat butter, sugar then beat in egg and almond essence. Add flour and salt; stir until blended. Stir in cherries and almonds. Divide dough into thirds; shape into 10 inch long logs. Wrap and chill or freeze. Slice into 1/8 or 1/4 inch cookies placed 1 inch apart. Bake on top and bottom thirds , rotating and switching halfway through - about 8-10 minutes. Will yield approx. 12 dozen.

1 c granulated sugar
1 c brown sugar, firmly packed
1 1/2 c butter or margarine
3 eggs
1/4 lb almonds, chopped
1 tsp cinnamon
4 1/2 c flour
1 tsp salt
2 tsp baking soda
1 Tbsp hot water, dissolve baking soda in water

Steps:

  • 1. Mix all ingredients together in order listed. Shape into 2 or 3 logs and wrap in wax paper. Chill in refrigerator 2 hours. Slice 1/4" and place on cookie sheet. Bake at 350, until lightly browned about 10 minutes. Should get 3 to 4 dozen depending how thin or thick you like them.
