1 tablespoon unsalted butter, at room temperature
1/3 cup plus 1 tablespoon granulated sugar
3 extra-large eggs, at room temperature
6 tablespoons all-purpose flour
1 1/2 cups heavy cream
2 teaspoons pure vanilla extract
1 teaspoon grated lemon zest (2 lemons)
1/4 teaspoon kosher salt
2 tablespoons pear brandy (recommended: Poire William)
2 to 3 firm but ripe Bartlett pears
Confectioners' sugar
Creme fraiche

Steps:

  • Preheat the oven to 375 degrees F.
  • Butter a 10 x 3 x 1 1/2-inch round baking dish and sprinkle the bottom and sides with 1 tablespoon of the granulated sugar.
  • Beat the eggs and the 1/3 cup of granulated sugar in the bowl of an electric mixer fitted with the paddle attachment on medium-high speed until light and fluffy, about 3 minutes. On low speed, mix in the flour, cream, vanilla extract, lemon zest, salt, and pear brandy. Set aside for 10 minutes.
  • Meanwhile, peel, quarter, core, and slice the pears. Arrange the slices in a single layer, slightly fanned out, in the baking dish. Pour the batter over the pears and bake until the top is golden brown and the custard is firm, 35 to 40 minutes. Serve warm or at room temperature, sprinkled with confectioners' sugar, and creme fraiche.

1/2 cup all-purpose flour (spooned and leveled)
1 cup sour cream
1 cup whole milk
3/4 cup granulated sugar
3/4 teaspoon pure vanilla extract
1/4 teaspoon fine salt
1 1/4 pounds peaches, halved, pitted, and cut into 1/2-inch slices (4 1/2 cups)
Confectioners' sugar, for dusting

Steps:

  • Preheat oven to 375 degrees. In a medium bowl, whisk together eggs and flour until combined. Add sour cream, milk, granulated sugar, vanilla, and salt and whisk to combine. Pour mixture into four 2-cup baking dishes or a 3-quart baking dish. Scatter peaches in a single layer in batter. Bake until custard is browned at edges and center is set, 30 minutes. Let cool slightly. Serve warm, dusted with confectioners' sugar.

3/4 cup granulated sugar
1/4 cup amaretto liqueur
1 lb firm ripe peach, peeled, pitted, sliced 1/4-inch thick (about 3 medium)
1/4 cup sliced almonds
2 large eggs
1 large egg yolk
1/2 cup unsalted butter, room temperature
1 cup all-purpose flour
1 cup milk
1/4 teaspoon almond extract
1 tablespoon confectioners' sugar
1 cup lightly sweetened whipped cream (for serving)

Steps:

  • Mix 1/4 cup granulated sugar and the liqueur in mixing bowl.
  • Add peaches and toss to coat. Let stand at room temperature 30 minutes.
  • Heat oven to 350 degrees.
  • Generously butter 9" round baking dish or glass pie plate.
  • Toast almonds on baking sheet until light brown, 7-10 minutes. I.
  • ncrease oven heat to 375 degrees.
  • Process eggs, egg yolk, and remaining 1/2 cup granulated sugar in food processor fitted with steel blade until blended.
  • With machine running, add butter and flour through feed tube; process 30 seconds.
  • Add milk, almond extract, 3 peach slices, and all the liquid from peaches; process until smooth, about 30 seconds longer.
  • Pour enough batter into prepared dish to measure 1/4" deep.
  • Bake just until set, 5-7 minutes.
  • Arrange peaches over baked batter and sprinkle with almonds.
  • Cover with remaining batter.
  • Bake until puffed and top is browned, 35-45 minutes.
  • Let cool slightly on wire rack.
  • Sift confectioner's sugar over top and serve warm, topping each serving with a dollop of whipped cream.

2 tablespoons plus 1/3 cup sugar, divided
1 3/4 cup pitted dark sweet cherries
3 eggs
1/4 teaspoon almond extract
Pinch salt
1 1/4 cups almond milk
1/4 cup all-purpose flour
Confectioners' sugar, for dusting
Blanched sliced almonds, for serving, if desired

Steps:

  • Preheat the oven to 375 degrees F. Butter a 9 1/2-inch pie dish and evenly sprinkle with the 2 tablespoons sugar.
  • Put the cherries in the prepared pie dish, spreading out evenly.
  • Add the eggs, almond extract, pinch salt, remaining 1/3 cup sugar and the almond milk to a medium bowl and whisk until combined. Sift the flour into the egg mixture and whisk until smooth. Pour the egg mixture over the cherries. Carefully place the pie dish into the oven and bake until set and a cake tester inserted into the center comes out clean, 30 to 35 minutes. Cool to room temperature, if you can wait that long! Then lightly dust with confectioners' sugar and scatter the blanched almonds, if desired, and serve.

1 tsp. finely grated lemon zest
1 tsp. kosher salt
1 tsp. vanilla extract
1/3 cup plus 2 Tbsp. granulated sugar
1/2 cup all-purpose flour
2 cups halved and pitted cherries, or pitted and sliced apricots
Powdered sugar (for serving; optional)

Steps:

  • Preheat oven to 350°F. Place butter in a 2-3-qt. shallow baking dish or medium (10") ovenproof skillet. Transfer to preheating oven and heat until butter has melted, about 4-6 minutes.
  • Meanwhile, blend eggs, milk, lemon zest, salt, vanilla, and 1/3 cup granulated sugar in a blender until frothy, about 2 minutes. Add flour and blend just until combined.
  • Pour batter into hot baking dish. Arrange fruit evenly over. Sprinkle with remaining 2 Tbsp. granulated sugar. Bake clafoutis until top is puffed and lightly golden brown, 25-35 minutes. Let cool slightly, then sift powdered sugar over (if using). Serve warm.

1 cup whole milk
3 eggs
1/2 cup sugar
1 teaspoon vanilla extract
2 tablespoons butter, melted
1/2 cup all-purpose flour

Steps:

  • 1. Preheat the oven to 325°F. In a large bowl, whisk together the milk, eggs, sugar, vanilla, and butter until the sugar is dissolved. Add the flour and whisk until smooth. Pour the batter into a cast iron skillet or pie pan.
  • 2. Now add your favorite fruit or flavoring (see below). Bake until the clafoutis is beautifully puffed and golden, 35-40 minutes. Serve immediately.
  • Clafoutis Variations: Concord Grape Clafoutis: Once the batter is in the skillet, scatter 2 cups slightly crushed Concord or other black or red grapes on top. Cherry Clafoutis: Scatter 2 cups pitted cherries onto the batter once it's poured into pie plates. Pear Clafoutis with Pear Eau de Vie: Core 1 ripe pear and cut into pieces. Pour the batter into the skillet and top with the pear pieces. Bake. Drizzle with 2 tablespoons eau de vie and serve immediately. Milk Chocolate and Hazelnut Clafoutis: Melt 1 cup chopped milk chocolate in a large mixing bowl set above a simmering pot of water. Fold in the clafoutis batter until smooth and fully incorporated. Pour into a skillet or pie plate, sprinkle with 1/4 cup coarsely chopped hazelnuts, and bake.

2 - 4 tablespoon pure maple syrup
3 cups sliced peaches
1 cup whole milk
1 cup half & half or cream
4 eggs
1/4 cup flour (coconut flour, almond flour or a combination will work)
1 teaspoon vanilla

Steps:

  • Generously butter a shallow 1 to 1 1/2 quart baking dish (or pie plate). Place sliced peaches in dish. In a blender, blend the remaining ingredients for about 2 minutes (a handheld stick blender is fast and easy to clean, or a whisk will work, too). Pour the batter mixture over the peaches. Bake in a 375°F oven for about 40-45 minutes or until clafouti is golden. Let cool slightly, but it's best served when it is slightly warm. Garnish with a shake of cinnamon, a drizzle of heavy cream, and/or whipped cream.

I noticed that there were no clafoutis posted using peaches, so I am remedying that! This one is from Bakefest 2004 and is very easy to prepare, since it uses canned fruit. Just make sure you drain the fruit really well.

796 ml canned peaches, sliced and drained
1 cup dried cranberries
2 tablespoons brandy
1 teaspoon lemon juice
1/2 teaspoon ground cinnamon
4 eggs or 3/4 cup liquid egg substitute
1 cup evaporated milk
1/4 cup butter, melted
1 cup all-purpose flour
3/4 cup granulated sugar
1 tablespoon baking powder
1/4 teaspoon salt
icing sugar (to garnish) (optional)

Steps:

  • Preheat the oven to 350°F.
  • Drain the peaches well.
  • Toss with the cranberries, brandy, lemon juice and cinnamon.
  • Arrange in a 10" casserole or deep-dish pie plate, mounding the fruit slightly in the centre of the dish.
  • Whisk the eggs with the evaporated milk and melted butter.
  • Blend the flour with the sugar, baking powder and salt.
  • Gradually add the egg mixture to the dry ingredients, whisking until smooth.
  • Pour the batter over the peach mixture.
  • Bake for 35 to 40 minutes or until the centre is set and the top is golden.
  • Sprinkle with icing sugar if desired.
  • Serve warm.
