Steps:
- 1. Mix powder sugar and Sweetened CONDENSED MILK together. (DO NOT USE EVAPORATED MILK) Blend well. Next add coconut, stirring till well blended. (Mixture will be thick.)
- 2. With buttered hands, form into logs to cut into 1/1/2" long pieces or roll into balls to shape for Mounds. Candy MUST CHILL until chocolate is melted and ready to dip chocolates. (Chilling candy makes for easier dipping.) Optional: see Almond Joy below; top with almond on each.
- 3. Melt chocolate chips or almond bark, on med-low heat in double boiler. Make sure this choc is THIN, to coat the candy. NOTE: If chocolate or bark gets too thick to dip candy, add a little paraffin wax to the chocolate to thin to needed consistency. Use only a little at a time. Melt into chocolate (approx 1 TBS) you can always add more as needed.
- 4. Dip each chilled Mound candy into chocolate with toothpick or small slotted spoon. Place on parchment or wax paper lined baking sheet to set... chill til set and remove from refrigerator.
- 5. FOR ALMOND JOY; Press one or two almonds slightly into top of the mounds, before dipping into chocolate.
- 6. Tip: Use buttered hands to roll your candy or Mounds, this makes it so much easier. Store in covered tin in refrigerator. Remove from refrigerator 1/2 before serving candies.
ALMOND JOY BARS
These are so Yummy! They really do taste like an Almond joy candy bar. I usually make these for Christmas, but I tend to also make them for pot lucks or other family functions. These are a huge hit. Trust me, you will Love them!

- Melt margarine,stir in sugar and graham crackers until all worked in together.
- Pat in the bottom of a 9x13 pan.
- Bake in a 350 degree oven for 10 minutes.
- while the crust is baking, mix the sweetened condensed milk with the coconut until all the coconut is incorporated with the sweetened condensed milk.
- I usually chop the almonds up as the bars cut easier when they are chopped rather than left whole, but that is a personal choice.
- When the crust is out of the oven, spread filling over the crust. Once the filling is spread, sprinkle the toasted almonds over the filling.
- Bake the bars for 20 minutes or until light golden brown.
- Once you take the bars out of the oven, I turn my oven off, sprinkle the chocolate chips over the bars and return to oven for a few minutes until the chips are melted enough to spread with a knife.
- I have found over the years that scoring the bars while the chocolate is still soft, helps when cutting the bars after they have cooled. Other wise when you cut the cooled bars, they don't seem to cut cleanly and neatly. I also cut them into tiny bite size pieces, they are very rich and by cutting them small, they go alot further.

- 1. Line a 13 x 9" pan with parchment paper or aluminum foil
- 2. In a large bowl. Mix together the coconut, condensed milk, and coconut extract
- 3. Add in the powdered sugar. Mix well. Mixture should be thick. You may also add an additional coconut if you would like a thicker consistency. These bars are very forgiving. Do not be afraid to add more coconut.
- 4. Spread into prepared pan. With a sharp knife. Score 40 bars but do not cut all the way through
- 5. Push almonds halfway into each bar. You may place 2-3 on each bar.
- 6. Refrigerate until set. You can also quicken the process, by placing them in the freezer for 15 to 20 minutes.
- 7. When the mixture is firm. remove from the refrigerator. Cut all the way through scored mixture to make bars. Set aside by putting back in the refrigerator, until ready to use.
- 8. Line a sheet pan or several small pans, with parchment paper or aluminum foil. Spray lightly with vegetable oil spray, if using foil.
- 9. Melt shotening, or parrafin wax in a lage bowl by microwaving until melted.
- 10. Add in the chocolate chips are well. Place back in microwave. Stop microwave add about 40 second to one minute intervals to stir. When it is fully melted and combined. Remove from microwave. .
- 11. Remove coconut bars from refrigerator. Step one bar at a time in the melted chocolate with a large soup spoon. Drain off chocolate. Place each bar on lined pan. Repeat the process until all bars are dipped.
- 12. Place bars in refrigerator until set. You can store them in the refrigerator or in a loosely covered container. I stored mine in the refrigerator in a container or Ziploc bag.
GLUTEN-FREE CHOCOLATE ALMOND JOY® BARS
This is a healthy dessert/snack that contains no flour and truly does taste like an Almond Joy® bar. They are addicting.

- Preheat oven to 350 degrees F (175 degrees C).
- Whisk coconut sugar, coconut milk, eggs, and almond extract together in a bowl. Combine almond flour, coconut flour, baking soda, and sea salt together in a separate bowl; beat into coconut milk mixture using an electric mixer on medium speed until batter is moist. Mix 1/2 cup chocolate chips and 1/4 cup shredded coconut into batter. Pour batter into a 9-inch square baking dish. Top batter with remaining chocolate chips and shredded coconut.
- Bake in the preheated oven until a toothpick inserted in the center comes out clean, 30 minutes.

ALMOND JOY BARS
Sometimes being sweet and flaky is just the ticket! These yummy bars may be sans almonds, but they're FULL of delicious flavor.

- 1. Preheat oven to 350° F . Line a sheet pan with aluminum foil and coat with canola or vegetable spray. NOTE: I use a 13x9 inch pan becasue I prefer them thicker. You can adjust the size of the pan to your preference. You can use 1/2 the recipe if you do not need as much.
- 2. In a small bowl, cream butter and brown sugar until combined. Add the flour and salt. Carefully mix to combine until it resembles chunky bread crumbs. Transfer into the prepared pan and evenly press the batter into an even layer. Bake for 8 minutes. Cool on a wire baking rack while preparing the coconut topping.
- 3. In a large bowl, combine the condensed milk, coconut, and vanilla. Spread over the crust and bake for another 20-25 minutes, until it begins to brown.
- 4. Melt the chocolate over a double boiler. Stir until melted and smooth. Pour over cooked coconut bars and spread into an even layer. Allow to cool then refrigerate until hardened, about 1 hour. Cut into 36 squares.
- 5. NOTE: Use chunks not chips (70% Cacao Bittersweet Chocolate Baking Chunks.) Bittersweet chocolate is available in several forms, including bars, chips, and chunks of various sizes. It is used in baking, cooking, and is eaten out of hand. NOTE: You can top with Almond Joy bites, sliced almonds or leave off. Use light or dark chocolate, your preference.
MOUNDS BARS AND ALMOND JOY BARS
Steps:
- 1. In a mixing bowl, blend the condensed milk and vanilla. Add the powdered sugar to the mixture a little bit at a time, stirring until smooth. Stir in the coconut; the mixture should be firm. Pat the mixture firmly into a greased 9x13x2 inch pan. Chill in the refrigerator until firm. In a double boiler over hot water (not boiling), melt the chocolate, stirring often. (You may also use a microwave oven: place the chips in a bowl and heat for one minute on high, stir, then heat for 1 more minute). Remove the coconut mixture from the refrigerator and cut into 1x2 inch bars. Set each coconut bar onto a fork and dip into the chocolate. Tap fork against the side of the pan or bowl to remove excess chocolate. Air dry at room temperature on waxed paper. This could take several hours, but chocolate sets best at cool room temperature (below 70°). You may speed up the process by placing the bars in the refrigerator for about 30 minutes.
- 2. Almond Joy Add 1 cup dry roasted almonds to the list of ingredients. Substitute milk chocolate chips for semi-sweet chocolate. Place two almonds atop each bar before dipping in chocolate. Makes about 3 dozen bars.
CHEWY TOFFEE ALMOND JOY BARS
Spring-boarded off of a recipe on the back of a bag of Heath toffee bits. Had to come up with a quick dessert bar to take to a football game party. They were a hit!

- 1. Heat Oven to 350*. Grease the sides of a 13 x 9 x 2 baking pan-Well!
- 2. Beat butter and sugar in mixer until light and fluffy. Gradually add the flour, beating until well blended.
- 3. Press dough evenly into prepared pan.
- 4. Bake 15 to 20 mins or until edges are lightly browned.
- 5. Meanwhile, while the crust is baking, combine the toffee bits and corn syrup in a medium saucepan. Cook over medium heat, stiring quite often until the toffee bits are almost melted (about 10 to 12 mins)
- 6. Stir in the Almonds and coconut (1/2 cup of each) into the corn syrup mixture. Turn off heat.
- 7. Spread this toffee/almond/ coconut mixture onto the crust (dont worry, my crust was still hot from the oven)to within 1/4 inch of the edges of the crust. Sprinkle remaining 1/2 cup of almonds and remaining 1/2 cup of coconut over the top.
- 8. Bake for 15 mins more and then remove from oven and sprinkle Chocolate chips on top. Place back in oven and bake for an additional 5 to 7 mins until bubbly. You can leave as is, or spread the melted chocolate over the almond/coconut mixture with a small spatula. (I left mine as is)
- 9. Cool completely in pan on a wire rack. Cut into bars. I got 36 out of the pan
ALMOND JOY BARS

- Base: 1. Melt oil and nut butter over low heat. 2. Stir in cocoa and sugar; combine thoroughly. 3. Continuously stir until it slightly thickens, then remove from heat. 4. Stir in the vanilla. 5. Pour the mixture into an 8×8 pan and place in freezer to harden while you make the topping. If you don't have room in your freezer, the fridge will get it solid enough to work with. Topping: 1. Melt oil in small pan and add coconut flakes. Stir. 2. Add remaining ingredients. Simmer and stir until it thickens a bit. 3. Once the chocolate is hardened, gently smooth the coconut mixture on top. 4. Place slivered or whole almonds on top (optional). Place bars back in the freezer until hardened. Again, the fridge will work, but it will take longer. 5. Slice into squares of desired size and enjoy! They'll probably be too hard to cut right out of the freezer so you may need to let them thaw a bit first. 6. Store in the refrigerator.
ALMOND JOY MAGIC COOKIE BARS
A true spin on the original classic recipe for Seven Layer Hello Dolly Magic Cookie Bars (or whatever your family calls them!) with almonds, chocolate chips, coconut and chocolate graham cracker crumbs that Almond Joy fans will love!

- Spray the sides of a 13x9 pan with cooking spray and preheat oven to 350 degrees.
- Pour melted butter into prepared pan then swirl to spread butter evenly over the bottom.
- Sprinkle chocolate graham cracker crumbs evenly over butter then flatten evenly over the bottom of the pan to make a bottom crust.
- Sprinkle milk chocolate chips over bottom crust. This isn't the traditional order of things but this makes the bottom layer extra chocolatey.
- Drizzle sweetened condensed milk over milk chocolate chips.
- Sprinkle coconut over sweetened condensed milk. Reserve a small handful to sprinkle on top of chocolate chips and almonds if desired.
- Sprinkle semi-sweet chocolate chips and sliced almonds evenly over coconut.
- Cover pan with aluminum foil then bake, covered, for 20 minutes. Remove aluminum foil then continue baking for 5-10 minutes or just until coconut starts to brown.
- Cool in the pan then cut into squares. Store in an air-tight container at room temperature up to one week.
