I've had this recipe for longer than I care to remember. My SIL served it to me a million years ago; I loved it and was surprised that it contained eggplant... which I thought I didn't like. It is yummy!

1 large eggplant, peeled and diced
1/3 cup milk
1 (10 3/4 ounce) can condensed cream of mushroom soup
1 egg, slightly beaten
1/2 cup onion, chopped
3/4 cup Pepperidge Farm Herb Stuffing or 3/4 cup breadcrumbs
4 ounces sharp cheddar cheese, grated

Steps:

  • Cook eggplant in salted, boiling water for 6-7 minutes until tender; drain.
  • Mix soup and milk in large bowl; add egg.
  • Stir in eggplant, onion, and bread crumbs, tossing lightly to mix.
  • Turn into a greased 8x8" or 10x6" pan; sprinkle w/ grated cheese.
  • Bake at 350 for 20 minutes.

Another recipe form my Aunt Martha. She had 5 boys and 1 girl- and they all loved the casserole.

1 medium eggplant
1 large beaten egg
1/2 c milk or cream
2 Tbsp melted butter or margarine
1 small onion, diced
1 c panko bread crumbs
1/2 c buttery cracker crumbs, like town house

Steps:

  • 1. Peel eggplant; cut in 1-inch cubes. Cook in boiling ,salted water 8 minutes; drain. Add milk. egg butter, onion and Panko crumbs. Place in a sprayed baking dish. Top with buttery crumbs; bake in 350^ oven for 30 minutes. --- Spanish Eggplant: Substitute 1 1/2 cups canned Rotel tomatoes,crushed for the milk. Sprinkle 1/2 c. grated American cheese over the top.

EGGPLANT STUFFED WITH ANCHOVIES, CAPERS, AND OLIVES



Eggplant Stuffed with Anchovies, Capers, and Olives image

2 medium eggplant (about 1 pound each)
salt
1/4 cup plus 1 tablespoon olive oil
1 clove large garlic, finely chopped
2 medium tomatoes, peeled, seeded, and chopped
6 anchovy fillets
1/2 cup chopped Gaeta or other mild black olives
2 tablespoons capers, rinsed and drained
1/2 teaspoon dried oregano
1/3 cup plain dry bread crumbs

Steps:

  • 1 Trim off the tops of the eggplants. Cut the eggplants in half lengthwise. With a small sharp knife and a spoon, scoop out the eggplant pulp, leaving a shell about 1/2 inch thick. Coarsely chop the pulp and place it in a colander. Sprinkle generously with salt and set over a plate to drain. Sprinkle the insides of the eggplant shells with salt and place them upside down on paper towels. Let drain for 30 minutes. 2 Rinse off the salt with cool water and dry the eggplant with paper towels. Squeeze the pulp to extract the water. 3 Heat the oil in a large skillet over medium-high heat until a small piece of eggplant sizzles when added to the pan. Add the eggplant pulp and cook, stirring frequently, until it begins to brown, 15 to 20 minutes. Stir in the garlic and cook 1 minute. Add the tomatoes, anchovies, olives, capers, oregano, and salt and pepper to taste. Cook until thickened, about 5 minutes more. 4 Place a rack in the center of the oven. Preheat the oven to 400°F. Oil a baking pan just large enough to hold the eggplant shells in a single layer. 5 Fill the shells with the eggplant mixture. Place them in the pan. Toss the bread crumbs with the remaining oil and sprinkle them over the shells. Bake 45 minutes or until the shells are tender when pierced. Let cool slightly. Serve warm or at room temperature. Summer is the perfect time to adopt the Mediterranean custom of serving savory little room temperature dishes for casual nibbling, referred to as mezze throughout the Middle East. An assortment of mezze can precede a larger feast, served as appetizers, or you may make an informal meal of mezze, picnic-style, indoors or out. This lemony Turkish-style eggplant dip fits the bill beautifully, spread on baguette toasts or crisp pita bread.

1/4 cup large capers, preferably salt-packed
2 pounds medium eggplants
Salt and pepper
Extra-virgin olive oil
1 cup thinly slivered scallions, plus more for garnish
1 cup chopped parsley, plus more for garnish
1/2 teaspoon grated garlic
1 teaspoon lemon zest
3 tablespoons lemon juice
2 tablespoons pomegranate molasses
2 tablespoons yogurt
1 pinch cayenne
Baguette toasts or pita bread, for serving

Steps:

  • Put the capers in a bowl and rinse off salt thoroughly with lukewarm water. Soak rinsed capers in lukewarm water for 20 minutes. Drain and rinse again, then blot dry. Chop roughly and set aside.
  • Heat oven to 400 degrees. Peel eggplants and cut into 1-inch cubes. Toss cubes in a mixing bowl with salt and pepper, then drizzle with 3 tablespoons olive oil and toss to coat. Place on a baking sheet in one layer and roast uncovered for 15 to 20 minutes, or until golden and tender when pierced with a fork. Cool.
  • Put cooked eggplants in a food processor and pulse briefly. Add capers, scallions, parsley, garlic, lemon zest and juice, pomegranate molasses, yogurt, cayenne and 2 tablespoons olive oil and blend until well combined. Transfer to a bowl. (May be prepared and stored at cool room temperature, covered, up to 2 hours in advance, or refrigerated for up to a week.)
  • Before serving, taste and adjust seasoning. Serve eggplant spread on toast, sprinkled with scallions and parsley, or as a dip for pita bread.

1 1/4 lbs eggplants, sliced crosswise in 1/2-inch-thick slices
1 lb ripe tomatoes, sliced
1 large onion, thinly sliced
3/4 cup butter, melted
1/2 teaspoon salt
1/2 teaspoon dried basil leaves
4 ounces mozzarella cheese, sliced
1/2 cup dried breadcrumbs
2 tablespoons grated parmesan cheese

Steps:

  • Preheat oven to 450 degrees.
  • On medium-size ovenproof platter, arrange eggplant slices, then tomato and onion slices. Drizzle with 1/4 cup melted butter. Sprinkle with salt and basil. Bake, covered, 20 minutes.
  • Cut mozzarella slices in thirds; arrange over top. Stir crumbs into rest of melted butter; sprinkle over top; then sprinkle with Parmesan cheese.
  • Bake, uncovered, 10 minutes, or until cheese is bubbly.

SEARED SCALLOPS WITH ROASTED EGGPLANTS AND MARINATED PEPPERS



Seared Scallops with Roasted Eggplants and Marinated Peppers image

4 small Japanese eggplants (about 12 ounces total)
1/4 teaspoon minced garlic
2 tablespoons fresh lemon juice
3 tablespoons extra-virgin olive oil, plus more as needed
Crushed red chile flakes
Kosher salt and freshly ground black pepper
1 red bell pepper
1 orange bell pepper
2 tablespoons fresh lime juice
12 large sea scallops (1 pound), patted dry
Fresh dill leaves

Steps:

  • Arrange the oven rack in the lowest position. Preheat the oven to 450°F.
  • Use a fork to poke holes all over the eggplants. Put the eggplants on a foil-lined baking sheet in the oven. Roast, turning occasionally, until the skins are charred and the eggplants are very soft, about 15 minutes. Transfer to a cutting board.
  • When cool enough to handle, peel the eggplants and cut in quarters lengthwise. Cut each piece in half crosswise. Transfer to a large bowl. Add the garlic, lemon juice, 2 tablespoons of the oil, a pinch of chile flakes, and a pinch of salt. Gently stir well.
  • Turn a gas burner to high. Set the peppers directly over the flame and cook, turning frequently, until the skin is charred all over. Alternatively, broil or grill the peppers as close to the heat source as possible. When cool enough to handle, use paper towels to rub off the charred skin. Remove and discard the stems and seeds, then cut each pepper into very thin slices. Transfer to a medium bowl and add the lime juice, remaining 1 tablespoon oil, and a pinch of salt. Stir well.
  • Heat a large skillet over high heat until very hot. Season half the scallops with salt and pepper. Add enough oil to generously coat the bottom of the pan, then add the seasoned scallops, one at a time. Cook until a golden brown crust forms on the bottom, 1 to 2 minutes, then carefully flip and cook until a crust forms on the other side, 1 to 2 minutes longer. Transfer to paper towels to drain. Repeat with the remaining scallops in the same pan, letting the pan get very hot again and adding more oil if needed.
  • Divide the eggplant mixture among 4 serving dishes. Top with the scallops, then the pepper mixture. Scatter the dill all over.
