ALL-AMERICAN HAMBURGERS
Steps:
- Combine first 5 ingredients, mixing lightly but thoroughly. Shape into 4 patties. Grill burgers, covered, on an oiled rack over medium direct heat until a thermometer reads 160° and juices run clear, about 6 minutes on each side., During the last minute of cooking, top each patty with 2 triangles American cheese and 1 triangle Swiss cheese. Serve on buns. As desired, top with lettuce, tomato, onion, bacon, ketchup and mustard.

Been making 1/4 pound burgers like this forever, and dont think its ever been posted here. One of our all-time favorites on the summer grill! We also love these with a slice of cooked bacon for a bacon cheeseburger.

Steps:
- In a large bowl, combine beef, soup mix and Worcestershire sauce.
- Mix just until blended dont overwork the meat.
- Shape into eight patties.
- Grill over medium coals to desired doneness or until no longer pink in the center and a minimum temperature of 160 degrees, brushing frequently with barbecue sauce.
- Top with cheese; continue grilling until cheese is melted.
- For each serving; fill bun with lettuce, pickle slices, tomato and hamburger patty.

ALL-AMERICAN HAMBURGERS WITH RED ONION COMPOTE

- MAKE THE RED ONION COMPOTE: In a medium saucepan, heat the vegetable oil. Add the coriander and cook over moderate heat for 30 seconds. Add the red onions, wine, sugar, bay leaves, orange zest, juniper berries, thyme and orange juice and bring to a boil. Simmer over moderate heat, stirring occasionally, until the mixture thickens and is reduced to 2 cups, about 1 hour. Let the compote cool to room temperature. Discard the bay leaves and season with salt. MAKE THE BURGERS: Heat a large cast-iron skillet. Gently form the ground chuck into four 4-inch patties about 1 1/2 inches thick. Make a 1/2-inch indention in the center of each patty and season generously with salt and pepper. When the skillet is hot, add the patties and cook over moderately high heat until browned, 4 to 5 minutes per side for medium-rare. Top with slices of gorgonzola, if desired. Transfer them to a large plate and let rest for 5 minutes. Place the hamburgers on the toasted brioche buns, top with the compote, garnish with arugula and serve.
