This tuna spread recipe is a healthy twist on tuna salad and uses avocado and Greek yogurt in place of mayonnaise. Serve it on cucumber slices, butter lettuce leaves or whole-grain crackers.

1 avocado, mashed
2 tablespoons low-fat plain Greek yogurt
1 tablespoon lemon juice
1 tablespoon chopped fresh parsley
¼ teaspoon garlic powder
¼ teaspoon paprika
¼ teaspoon salt
¼ teaspoon ground pepper
1 (5 ounce) can albacore tuna in water, drained
¼ cup diced onion or celery

Steps:

  • Combine avocado and yogurt in a small bowl and stir well. Add lemon juice, parsley, garlic powder, paprika, salt and pepper and stir well. Add tuna and onion (or celery) and mix gently until combined.

As far as albacore tuna recipes go, this one's my favorite! Sweet apples, golden raisins, celery, nuts, tuna and a tropical taste of pineapple add up to a simply wonderful salad. 2 cans (8 ounces each) unsweetened crushed pineapple, drained
2 cans (5 ounces each) white water-packed tuna, drained
1 large apple, chopped
1 cup sliced celery
1 cup golden raisins
1/2 cup sliced almonds, toasted
1 cup mayonnaise
1 tablespoon lemon juice
Bread slices or lettuce leaves

Steps:

  • In a large bowl, combine the pineapple, tuna, apple, celery, raisins and almonds. Combine mayonnaise and lemon juice; stir into tuna mixture. Spread on bread or serve on lettuce-lined plates.

Grilled or Pan-Cooked Albacore With Soy/Mirin Marinade image

If you're concerned about which fish are environmentally safe to eat, you can't do better than consulting the Web sites of the Monterey Bay Aquarium or the Environmental Defense Fund for their handy pocket guides for buying seafood (or choosing it in a restaurant). You won't break the bank buying fresh fish, but there can be a better selection of moderately priced varieties in the freezer department. Among my findings were albacore steaks, one of the few types of tuna that we can still enjoy with a clear conscience, and a great fish if you're trying to eat more omega-3s. This is a sweet/savory marinade that I also use for tofu. If you are concerned about the quantity of soy sauce, know that most of it stays behind in the bowl when you cook the fish. If you are using frozen albacore steaks, wait until they are partly thawed before marinating.

1/4 cup low-sodium soy sauce
2 tablespoons mirin (sweet Japanese rice wine)
1 tablespoon seasoned rice vinegar
1 tablespoon minced or grated fresh ginger
1 teaspoon sugar
1 tablespoon plus 1 teaspoon dark sesame oil
1 1/2 pounds albacore steaks

Steps:

  • Combine the soy sauce, mirin, vinegar, ginger and sugar in a bowl and whisk together well. Whisk in the sesame oil.
  • Place the albacore steaks in a large bowl or baking dish and toss with the marinade. Cover the bowl, or transfer the fish and marinade to a large zip-top bag and refrigerate for 1 to 2 hours, or longer.
  • Prepare a hot grill, or heat a heavy cast-iron or nonstick skillet over medium-high heat. Remove the fish from the marinade. Cook the steaks for 2 to 4 minutes on each side, depending on how well done you like the fish to be. Serve hot.

This is a family recipe that originally came from my Aunt Gloria, a wonderful hostess and great cook. This spread is a little different from ordinary tuna spread and is great served with crackers or used as a filling for tea sandwiches.

6 ounces albacore tuna, drained and flaked
3 ounces cream cheese, room temperature
2 tablespoons mayonnaise
1 tablespoon capers, chopped
1 teaspoon horseradish
1/2 teaspoon soy sauce
1/4 teaspoon garlic salt
1/4 teaspoon celery salt
1/4 teaspoon onion salt

Steps:

  • Combine cream cheese and mayonnaise in a small bowl.
  • Stir in tuna and combine well.
  • Add remaining ingredients. Cover and chill until ready to serve.
