CREAMY LEMON PIE



Creamy Lemon Pie image

Deliciously cool and creamy lemon pie is the perfect summer dessert made with only 7 simple ingredients.

11 (about 160g) full-sheet graham crackers
1/2 cup (62g) salted almonds (I used roasted)
2 Tablespoons (25g) granulated sugar
5 Tablespoons (71g) unsalted butter, melted
2 (14-ounce) cans full-fat sweetened condensed milk
3/4 cup (180ml) fresh lemon juice (about 4 lemons)
4 large egg yolks*
garnish: lemon zest, lemon slices, almonds, whipped cream, or meringue topping

Steps:

  • Preheat oven to 350°F (177°C).
  • Using a food processor, pulse the graham crackers and almonds together into crumbs. A few larger pieces of nuts is OK. Pour into a medium bowl and stir in the sugar. Add the melted butter and stir until combined. The mixture will be thick, coarse, and sandy. Try to smash/break up any large chunks. Pour the mixture into an ungreased 9-inch pie dish. With medium pressure using your hand, pat the crumbs down into the bottom and up the sides to make a compact crust. Do not pack down with heavy force because that makes the crust too hard. Simply pat down until the mixture is no longer crumby/crumbly. Tips: You can use a small flat-bottomed measuring cup to help press down the bottom crust and smooth out the surface, but do not pack down too hard. And run a spoon around the bottom "corner" where the edge and bottom meet to help make a rounded crust⁠-this helps prevent the crust from falling apart.   • Pre-bake crust for 8 minutes. Remove from the oven and leave the oven on.
  • Whisk the sweetened condensed milk, lemon juice, and egg yolks together. Pour into warm crust.
  • Bake the pie for 19-21 minutes or until only *slightly* jiggly in the center. You want it mostly set. Remove from the oven and allow to cool completely on a wire rack. Once cool, cover and chill for at least 1 hour (and up to 3 days) before serving.
  • Garnish as desired. Store leftovers in the refrigerator for up to 1 week.

I had this years ago at Bunco and fell in like with it! I have made it many times and always get asked for the recipe! Perfect for potlucks, You won't find it duplicated on the buffet! You could use Stevia in place of the sugar. It originally called for 1 1/2 cups sugar but I cut it back to 1 cup.

1 1 whole lemon large
4 eggs
1 stick butter melted
1 c sugar
1 tsp pure vanilla
1 pinch salt if desired
1 unbaked pie crust
whipped cream of your choice (aerosol can or fresh)

Steps:

  • 1. Heat oven to 350
  • 2. Fully wash and cut whole lemon into smallish chunks (leave the rind on it). remove seeds and ends
  • 3. Place in food processor or large blender - lemon chunks, butter sugar, vanilla, salt and eggs. Blend until smooth and creamy
  • 4. Pour into pie crust and place in oven
  • 5. If top is becoming too brown, cover loosely with foil and continue baking. COOL and serve with whipped cream.

1 cup sugar
1/2 cup melted butter
4 eggs
1 tsp vanilla
unbaked pie shell

  • Put all ingredients in food processor and blend for about 1 min till very smooth but it will be runny. Pour into pie shell and bake 30 min at 350 till just slightly brown and doesnt jiggle. Serve with whip cream

1 can(s) sweetened condensed milk
1/2 c lemon juice
1/2 pt heavy whipping cream
1 graham cracker pie crust

Steps:

  • 1. In a large mixing bowl (spouted is easiest), beat together the lemon juice and condensed milk.
  • 2. In a clean, chilled bowl, whip cream with chilled beaters until it reaches stiff peaks.
  • 3. Gently fold cream into lemon-milk mixture until mixed well. Pour into graham cracker pie crust. Chill in refrigerator until firm, at least 3 hours. Store covered in refrigerator.
  • 4. OPTIONAL: Top with sweetened whipped cream or meringue, if desired.
