2 cups water
1 (4 ounce) package instant mashed potatoes (such as Idahoan® Buttery Homestyle®)
½ cup shredded Cheddar cheese
1 green onion, chopped
½ teaspoon ground cumin
10 corn tortillas
1 serving nonstick cooking spray
½ cup salsa verde
¼ cup crumbled cotija cheese

Steps:

  • Heat water in a medium saucepan to boiling. Remove from the heat and stir in instant mashed potatoes. Mix thoroughly with a fork to moisten all potatoes and let stand 5 minutes. Stir in Cheddar cheese, green onion, and cumin.
  • Preheat an air fryer to 400 degrees F (200 degrees C).
  • Wrap tortillas in a damp paper towel and microwave on high until warm, about 20 seconds.
  • Spread 1 tablespoon potato mixture in the center of a tortilla and fold over to make a taco. Repeat with remaining tortillas.
  • Working in batches, place tacos in the basket of an air fryer. Spray the tops with cooking spray and cook until crispy, about 5 minutes. Transfer to a serving platter and repeat to cook remaining tacos.
  • Drizzle salsa verde over tacos and top with cotija cheese.

6 large potatoes
4 ounces queso fresco (mexican crumbly cheese)
3 tablespoons onions, chooped
salt and pepper
milk, if needed
oil, for frying
2 dozen corn tortillas
lettuce, julienned
queso fresco, crumbled
salsa

Steps:

  • Boil potatoes and peel. Heat oil for frying.
  • Mash potatoes with a masher and mix with onions and the 4 ounces of queso fresco. (if mixture is too thick, add a little milk. mixture should be a little lumpy, but should not be as creamy as mashed potatoes.) Season with salt and pepper.
  • Warm tortillas in microwave for about 15 seconds.
  • Spoon potato mixture into tortillas and fry until golden on both sides.
  • Serve and garnish with lettuce, queso fresco, and salsa.

2 cups shredded fresh kale or coleslaw mix
1/4 cup minced fresh cilantro
1/4 cup plain Greek yogurt
2 tablespoons lime juice
1 teaspoon honey
1/4 teaspoon salt
1/4 teaspoon ground chipotle pepper
1/4 teaspoon pepper
TACOS:
1 large egg, beaten
1/4 cup cornmeal
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon ground chipotle pepper
2 medium avocados, peeled and sliced
Cooking spray
8 flour tortillas or corn tortillas (6 inches)
1 medium tomato, chopped
Crumbled queso fresco, optional

  • Combine the first 8 ingredients in a bowl. Refrigerate, covered, until serving., Preheat air fryer to 400°. Place egg in a shallow bowl. The contrast of the crispy crust and creamy inside of fried avocado slices make them a fantastic vegetarian taco filling inspired by Torchy's Tacos. This version uses the air fryer to avoid the fuss of deep frying in oil and adds a sweet-tart mango and grapefruit salsa.

2/3 cup panko
1 teaspoon ground cumin
1 teaspoon paprika
Kosher salt and freshly ground black pepper
3 limes
2 ripe avocados, peeled, pitted and cut into 3/4-inch slices (about 12 slices)
Nonstick cooking spray
1 large ripe mango
1 grapefruit
1/2 small red onion, sliced
1 jalapeño, stemmed, seeded and diced
1/2 cup plain Greek yogurt
4 corn tortillas
1/4 cup lightly packed cilantro leaves

Steps:

  • Preheat a 6-quart air fryer to 390 degrees F.
  • Whisk together the panko, cumin, paprika, 1 teaspoon kosher salt and a few grinds of black pepper in a shallow bowl. Juice 1 lime into a shallow bowl. Dip an avocado slice into the lime juice, then firmly press into the panko mixture, turning to coat on all sides. Place in the air fryer basket and repeat with the remaining slices. Spray with nonstick cooking spray. Cook until golden brown, about 8 minutes.
  • Meanwhile, make the mango salsa. Cut the mango into two halves and remove the skin. Cut each half vertically into thin strips, then flip each strip on its side and julienne diagonally into thin matchsticks.
  • Using a sharp knife (chef's or paring), cut both ends off the grapefruit. Stand the grapefruit on one end and cut away the peel and white pith, following the contour of the fruit. Carefully cut in between the membranes to remove the grapefruit segments, letting them drop onto the cutting board. Dice the segments.
  • Combine the grapefruit, mango, red onion and jalapeño in a medium bowl. Squeeze the remaining juice from the center of the grapefruit into the bowl. Zest one lime and add the zest to the bowl, then juice it into the bowl. Season with 1 teaspoon kosher salt. Stir together and set aside.
  • Mix the yogurt with the juice of the third lime in a small bowl. Set aside.
  • Place 2 tortillas on each of 2 plates. Spoon a quarter of the Greek yogurt onto each tortilla and top with 3 pieces of fried avocado. Spoon a quarter of the mango salsa onto each and garnish with cilantro leaves.

This fry bread gives the wonderful crispy texture and then layers it with all your favorite taco toppings.

2 cups all-purpose flour
1 teaspoon salt
1 Tablespoon baking powder
¾ cup milk
1 pound ground beef
1 medium onion (diced)
15 ounces pinto beans (1 can, rinsed and drained)
1 ounce low sodium taco seasoning (1 packet)
1 cup salsa
1 cup shredded lettuce ((optional topping))
6 Tablespoons sour cream ((optional topping))
6 Tablespoons shredded cheddar cheese ((optional topping))
pico de gallo ((optional topping))
guacamole ((optional topping))
black olives ((optional topping))
2 Tablespoons vegetable oil

Steps:

  • In a mixing bowl, combine fry bread dough ingredients with a fork until completely mixed together.
  • Divide dough into 6 equal pieces. Roll each piece into a smooth ball, cover with a towel and set aside.
  • Use fingers to press each of the 6 balls into flat discs about 5 inches in diameter. Have the edges be slightly thicker than the centers.
  • Pour vegetable oil onto a shallow plate and coat both sides of each piece of the flattened dough in oil, then lay them in the air fryer basket (depending on the size of your air fryer, you may need to do this in a couple of shifts).
  • Set the temperature on the air fryer to 375 degrees and set the time to 10 minutes, then press start.
  • While the dough is in the air fryer, prepare the taco ingredients.

  • When all fry bread is cooked, serve topped with ground beef mixture and your favorite taco toppings.
