Fish fry seasoning, egg, and a spritz of oil are all you need to make these tasty, crispy air fryer shrimp! Use your favorite brand of fish fry breading mix. Serve with cocktail sauce, lemon-garlic aioli, or whatever you prefer! I like to use a Misto® sprayer with my own oil, but feel free to use regular cooking spray.

2 eggs
½ cup fish fry breading mix (such as Andy's®)
1 pound large shrimp, peeled and deveined
cooking spray

Steps:

  • Preheat the air fryer to 390 degrees F (200 degrees C).
  • Lightly beat eggs in a shallow dish. Pour breading mix into a separate shallow dish.
  • Dip shrimp into egg, letting excess drip off. Toss shrimp in the fish fry breading and set on a plate. Let rest for 10 minutes.
  • Spray basket of the air fryer with cooking spray and place shrimp inside, making sure shrimp do not overlap. You may have to do two batches depending on the size of your air fryer. Mist shrimp with cooking spray.
  • Cook for 3 minutes. Flip shrimp and mist again with cooking spray so there are no dry or powdery areas. Cook 2 to 3 minutes more. Repeat with remaining shrimp.

Now you can have chimichangas just as crispy as deep frying, minus the calories. Plus they are quick to make in an air fryer and perfect for a busy weeknight dinner. Top with salsa, sour cream, avocado, and cheese.

1 tablespoon vegetable oil
½ cup diced onion
2 cups shredded cooked chicken
½ (8 ounce) package Neufchatel cheese, softened
1 (4 ounce) can hot fire-roasted diced green chiles (such as Ortega®)
¼ cup chicken broth
1 ½ tablespoons chicken taco seasoning mix (such as McCormick®)
½ teaspoon salt
¼ teaspoon ground black pepper
6 (10 inch) flour tortillas
1 cup shredded Mexican cheese blend, or to taste
avocado oil cooking spray

Steps:

  • Heat oil in a medium skillet. Add onion and cook until soft and translucent, 4 to 6 minutes. Add chicken, Neufchatel cheese, diced chiles, chicken broth, taco seasoning, salt, and pepper. Cook and stir until mixture is well combined and Neufchatel has softened been incorporated.
  • Heat tortillas in a large skillet or directly on grates of a gas stove until soft and pliable. Place 1/3 cup chicken mixture down the center of each tortilla and top with a heaping tablespoon of Mexican cheese. Fold top and bottom of tortillas over the filling, then roll each into a burrito shape. Mist with cooking spray and place in the basket of an air fryer.
  • Air fry at 400 degrees F (200 degrees C) for 4 to 6 minutes. Flip each chimichanga over, mist with cooking spray, and air fry until lightly browned, 2 to 4 minutes more.

Shrimp scampi is a classic for good reason. Fresh shrimp, cooked until tender in garlic butter and served over pasta--what more does one need? Perhaps a dinner that comes together in under 30 minutes with minimal cleanup!

Kosher salt
1 lemon
1 pound shrimp (16/20 count), peeled, deveined, tails on
5 sprigs fresh thyme
3 cloves garlic, thinly sliced
1 dried bay leaf
Freshly cracked black pepper
1 stick (8 tablespoons) unsalted butter, cut into tablespoon pieces
12 ounces campanelle pasta
1/2 cup finely chopped fresh flat-leaf parsley
2 tablespoons extra-virgin olive oil

Steps:

  • Preheat a 6-quart air fryer to 375 degrees F. Bring a large pot of salted water to a boil.
  • Zest the lemon in strips using a peeler, making sure to avoid the white pith. Cut the lemon in half, then cut one half into wedges for serving. Reserve the other half for squeezing.
  • Put the lemon zest, shrimp, thyme, garlic, bay leaf, 1/2 teaspoon salt and 1/4 teaspoon pepper in a cake pan and toss to combine. Spread the mixture out in the pan and dot the butter on top. Cover the pan tightly with aluminum foil.
  • Put the cake pan in the air fryer and cook until the butter is bubbling and the shrimp are opaque, 10 to 12 minutes. While the shrimp cook, boil the pasta according to the package instructions.
  • Discard the lemon zest, bay leaf and thyme from the shrimp mixture. Drain the pasta and return it to the pot. Pour the shrimp mixture over the pasta. Add the parsley and olive oil, squeeze in the juice from the reserved lemon half and toss to combine. Serve with lemon wedges.
