Homemade fish sticks that are perfectly crisp on the outside, tender and flaky on the inside. This was my first attempt at making them in an air fryer, and the results were quite impressive. Dip in tarter or cocktail sauce.

1 pound cod fillets
¼ cup all-purpose flour
1 egg
½ cup panko bread crumbs
¼ cup grated Parmesan cheese
1 tablespoon parsley flakes
1 teaspoon paprika
½ teaspoon black pepper
cooking spray

Steps:

  • Preheat an air fryer to 400 degrees F (200 degrees C).
  • Pat fish dry with paper towels and cut into 1x3-inch sticks.
  • Place flour in a shallow dish. Beat egg in a separate shallow dish. Combine panko, Parmesan cheese, parsley, paprika, and pepper in a third shallow dish.
  • Coat each fish stick in flour, then dip in beaten egg, and finally coat in seasoned panko mixture.
  • Spray the basket of the air fryer with nonstick cooking spray. Arrange 1/2 the sticks in the basket, making sure none are touching. Spray the top of each stick with cooking spray.
  • Cook in the preheated air fryer for 5 minutes. Flip fish sticks and cook an additional 5 minutes. Repeat with remaining fish sticks.

Homemade crispy fish sticks in an air fryer. Unlike most air fryer recipes, this one does not require cooking spray or flipping halfway through cook time. An added bonus is that you don't need dipping sauce, because it is already in the batter.

¾ cup mayonnaise
2 tablespoons dill pickle relish
1 teaspoon seafood seasoning (such as Old Bay®)
1 pound cod fillets, cut into 1x3-inch sticks
1 ½ cups panko bread crumbs

Steps:

  • Combine mayonnaise, relish, and seafood seasoning in a large bowl. Add fish and gently stir to coat.
  • Preheat an air fryer to 400 degrees F (200 degrees C).
  • Place bread crumbs on a plate. Coat each fish stick in bread crumbs 1 at a time.
  • Place fish sticks in a single layer in the basket of the air fryer, making sure none are touching. Cook for 12 minutes. Remove the basket and let rest for 1 minute before transferring fish sticks to a paper towel-lined plate. Repeat with remaining fish sticks.

1/4 cup MIRACLE WHIP Dressing
1 cup Italian-seasoned panko bread crumbs
1/4 cup KRAFT Grated Parmesan Cheese
1 lb. cod fillets, cut into 3x1-inch sticks

Steps:

  • Heat air fryer to 390°F.
  • Whisk eggs and dressing in pie plate until blended.
  • Use pulsing action of food processor to process bread crumbs and cheese until bread crumbs are finely crushed and mixture is well blended; pour into separate pie plate.
  • Add fish, 1 stick at a time, to egg mixture; let excess egg mixture drip off, then dip fish stick into bread crumb mixture, turning to lightly coat both sides of strip with crumb mixture.
  • Spray air fryer basket with cooking spray. Place about 1/3 of the fish sticks in single layer in prepared basket; add to air fryer. Cook 12 min. or until fish flakes easily with fork. Transfer fish sticks to plate. Repeat with remaining fish sticks.
