AIR-FRYER FAJITA-STUFFED CHICKEN
I had all the ingredients for fajitas, but instead of heating up my big oven I decided to try out the air fryer. Since mine is a small one, I wanted to get as much filling as I could in each stuffed chicken breast. - Preheat air fryer to 375°. Cut a pocket horizontally in the thickest part of each chicken breast. Fill with onion and green pepper. In a small bowl, combine olive oil and seasonings; rub over chicken., In batches, place chicken on greased tray in air-fryer basket. Cook 6 minutes. Top chicken with cheese slices; secure with toothpicks. Cook until a thermometer inserted in chicken reads at least 165°, 6-8 minutes longer. Discard toothpicks. If desired, serve with toppings of your choice.

Steps:
- Heat the canola oil (for the veggies) in a pan over high heat. Cook the peppers, onion, salt, and pepper until soft and slightly caramelized.
- Transfer the cooked veggies to a bowl. In the same bowl, mix in the cream cheese, cheddar, and pepper jack, stirring until evenly incorporated. Set aside.
- In a separate bowl, combine the chicken with the salt, chili powder, cumin, and garlic powder, evenly distributing the spices over the chicken.
- On a cutting board, slice a pocket in the chicken horizontally.
- Fill the pocket with a heaping spoonful of the veggie mixture. Press the edges of the chicken together to seal in the filling. Repeat with the remaining chicken.
- Heat the canola oil in a pan over medium heat. Cook the stuffed chicken for five minutes on each side, until cheese is melted and chicken is cooked through.
- Serve with salsa, sour cream, and guacamole!

AIR FRYER CHICKEN FAJITAS
Chicken fajitas in the air fryer doesn't get any easier than this. The chicken stays nice and moist while the vegetables have a nice crisp to them. Add 2 minutes of cook time if you prefer softer veggies. I like to toast my tortillas in the air fryer as well but it is not necessary. Serve with toppings of your choice such as salsa, sliced avocado, and cheese.

- Place bell pepper strips and onion petals in a large bowl. Drizzle 2 teaspoons of olive oil over the top and season with salt and pepper. Stir until evenly combined.
- Place chicken strips in a separate bowl and sprinkle with fajita seasoning. Drizzle with remaining 1 teaspoon olive oil and mix until evenly combined with your hands.
- Preheat an air fryer to to 350 degrees F (175 degrees C). Add chicken to the basket and cook for 12 minutes, shaking halfway through cook time. Transfer to a plate to let rest while you cook the vegetables.
- Add vegetable mixture to the basket of the air fryer and cook for 14 minutes, shaking halfway through cook time.

- In a bowl or shallow dish, combine oil, 2 tablespoons lime juice, zest, chili powder, 1/2 teaspoon garlic powder, onion powder, cumin, cayenne pepper and pepper. Add chicken and turn to coat. Refrigerate at least 2 hours. , Preheat air fryer to 400°. Drain chicken, discarding marinade. Season chicken with salt.
