GLUTEN-FREE CRISPY CAJUN FISH FILLETS IN THE AIR FRYER
Cajun fish fillets made in the air fryer pack just enough heat and are perfectly crispy using gluten-free panko bread crumbs. I serve these as sandwiches on a gluten-free bun with lettuce, tomatoes, tartar sauce, and Cheddar cheese slices. Alternatively, you can skip the bun and serve in lettuce wraps or with a salad.

Steps:
- Combine mayonnaise and Cajun seasoning in a small bowl. Place bread crumbs on a plate.
- Spread Cajun mayonnaise on both sides of fish fillets with a small spatula or butter knife. Coat each fillet, one at a time, with bread crumbs. Lightly spray both sides of breaded fillets with cooking spray and transfer 2 fillets to each air fryer tray; do not overcrowd.
- Turn an air fryer to the Roast setting (375 degrees F (190 degrees C) according to manufacturer's instructions and set timer to 14 minutes. Rotate trays at 7 minutes. Fish should flake easily with a fork.
- Carefully remove fillets from the trays and serve.

AIR FRYER ESSENTIALS: SPICY CAJUN SHRIMP
Threw this together last night and was pleasantly surprised at how flavorful they were. The two changes I made were to use butter, in place of oil, and the addition of the breadcrumbs. Plus, the dipping sauce, adds just the right amount of heat, and sweet. Easy/Peasy to make... great to eat. So, you ready... Let's get into...

Steps:
- 1. PREP/PREPARE
- 2. For this recipe, you will need an air fryer, or you could cook them in a convection oven.
- 3. Gather your ingredients (mise en place).
- 4. Combine the ingredients for the dipping sauce, and reserve.
- 5. Peel the shrimp, remove the veins, but leave the tails on.
- 6. Add the melted butter, and Cajun spice to a bowl (plus the breadcrumbs, if using) toss in the shrimp, and let sit for about 5 minutes.
- 7. Chef's Note: The breadcrumbs add just a bit of crunch to the shrimp. If you have some, I strongly recommend that you use them.
- 8. Add in a single layer to the basket of your air fryer.
- 9. Set the temperature to 400f (205c) and cook for 12 minutes.
- 10. PLATE/PRESENT
- 11. Serve while still hot with the dipping sauce. Enjoy
