AIR FRYER S'MORES
I know everyone likes s'mores, but I am a s'mores freak. When it's not possible to use a fire outside, I "roast" marshmallows on a fork over my kitchen burner, which is not ideal. Air fryers change the game: they cook the outside to golden brown perfection and the inside to the perfect gooeyness.

- Preheat an air fryer to 400 degrees F.
- Place the marshmallow inside and set the timer for 3 minutes. Meanwhile, place the graham cracker squares hole-side down on a plate and top one with the chocolate. After the marshmallow has cooked for 2 minutes, open the air fryer and place both graham squares inside. Roll the marshmallow onto the plain graham square and cook 1 minute more.
- Transfer the graham squares to a plate with a spatula, then sandwich them and eat while the s'more is still warm and gooey.
BANANA-CARAMEL S'MORES
Steps:
- Toast the marshmallow: Thread marshmallow onto a metal skewer and hold over medium-high heat, rotating, until golden brown, 1 to 2 minutes.
- Assemble the s'more: Sandwich 1 square of caramel-filled chocolate, 1 toasted marshmallow and 2 banana slices between 2 chocolate graham cracker halves.
AIR FRYER COCONUT SHRIMP WITH PINEAPPLE SALAD
Some coconut shrimp recipes call for sweetened coconut, but we preferred shredded unsweetened coconut in this recipe. It adds a lot of coconut flavor without making the dish too sweet. Quickly cooked in the air fryer, these shrimp are served with a tangy and sweet pineapple salad and some fresh red pepper to tie everything together.

- Line a baking sheet with parchment paper. Season the shrimp with 1/2 teaspoon salt and a few grinds of pepper. Beat the eggs in a large shallow bowl with a pinch of salt. Toss the coconut and panko together in another large shallow bowl. Dip the shrimp in the egg, letting the excess drip back into the bowl. Then, drop the shrimp in the coconut mixture and toss to coat, pressing with your fingers to adhere evenly. As you coat the shrimp, lay them on the baking sheet.
- Brush an air fryer rack with olive oil and preheat to 375˚ F. When the air fryer is ready, add half of the shrimp and cook, turning halfway through, until golden brown and cooked through, 6 minutes. Remove to a plate and repeat with the remaining shrimp.
- While the shrimp cook, combine the pineapple, bell pepper and red onion in a bowl. Drizzle with the olive oil, lime juice and sweet chili sauce; season with 1/2 teaspoon salt and a few grinds of pepper. Toss well.
- Before serving, add the watercress to the pineapple salad and toss. Serve the shrimp with the salad and more sweet chili sauce for dipping.

AIR FRYER SALTY CHOCOLATE CHIP COOKIE S'MORES
S'mores are very high on my list of favorite foods, but the item that likely takes the top spot is a chocolate chip cookie. I like for it to be, slightly salty, crunchy on the outermost edges but almost raw in the center, which if you think about it, is a very similar structure to that of a s'more. The key is to pick soft cookies because they will crunch up a little in the air fryer. And don't sleep on the chip! It will balance out the sweetness and help keep the chocolate and cookie butter inside.

- Preheat an air fryer to 400 degrees F.

Center the chocolate and arrange into a square on top of one cookie so there is no overhang. Place the cookie butter inside the chocolate square. - Transfer the cookies to a plate with a spatula. Top the marshmallow cookie with the potato chips, followed by the other cookie and eat while the s'more is still warm and gooey.

- Preheat the grill to high and line a baking sheet with parchment. Put 8 waffle biscuits on the tray with a peanut butter cup on each and grill until it starts melting.
- Put a tsp of caramel on the other 8 waffles and sprinkle a few salt flakes over each.
- Sandwich the waffle biscuits together and enjoy with a cappuccino.
