3 cups chopped peeled tart apples
1/2 cup packed light brown sugar
2-1/2 teaspoons ground cinnamon, divided
1 teaspoon cornstarch
8 egg roll wrappers
1/2 cup spreadable cream cheese
Butter-flavored cooking spray
1 tablespoon sugar
2/3 cup hot caramel ice cream topping

Steps:

  • Preheat air fryer to 400°. In a small bowl, combine apples, brown sugar, 2 teaspoons cinnamon and cornstarch. With a corner of an egg roll wrapper facing you, spread 1 scant tablespoon cream cheese to within 1 in. of edges. Place 1/3 cup apple mixture just below center of wrapper. (Cover remaining wrappers with a damp paper towel until ready to use.) , Fold bottom corner over filling; moisten remaining wrapper edges with water. Fold side corners toward center over filling. Roll egg roll up tightly, pressing at tip to seal. Repeat., In batches, arrange egg rolls in a single layer on greased tray in air-fryer basket; spritz with cooking spray. Cook until golden brown, 5-6 minutes. Turn; spritz with cooking spray. Cook until golden brown and crisp, 5-6 minutes longer. Combine sugar and remaining 1/2 teaspoon cinnamon; roll hot egg rolls in mixture. Serve with caramel sauce.

1 (14.1 ounce) package refrigerated pie crusts (2 pie crusts)
1 (21 ounce) can apple pie filling
1 egg, beaten
2 tablespoons cinnamon sugar, or to taste
1 serving cooking spray

Steps:

  • Place 1 pie crust onto a lightly floured surface and roll out the dough with a rolling pin. Using a 2-1/4-inch round biscuit or cookie cutter cut the pie crust into 10 circles. Repeat with the second pie crust for a total of 20 pie crust circles.
  • Fill about 1/2 of each circle with apple pie filling. Place a second pie crust circle on top, making a mini pie. Do not overfill. Press down the edges of the mini pies, crimping with a fork to seal. Brush tops with beaten egg and sprinkle with cinnamon sugar.
  • Preheat the air fryer to 360 degrees F (175 degrees C).
  • Lightly spray the air fryer basket with cooking spray. Place a batch of the mini pies in the air fryer basket, leaving space around each for air circulation.
  • Bake until golden brown, 5 to 7 minutes. Remove from the basket and bake remaining pies. Serve warm or at room temperature.

2 medium Granny Smith apples, peeled, cored, and cut into 1-inch chunks
2 tablespoons lemon juice
½ cup water
2 tablespoons brown sugar
1 ¼ teaspoons ground cinnamon, divided
½ tablespoon white sugar
6 each egg roll wrappers
¼ cup white sugar

Steps:

  • Preheat an air fryer to 400 degrees F (200 degrees C).
  • Place prepared apples in a medium saucepan. Drizzle lemon juice over top, then add water and stir. Sprinkle brown sugar and 1/4 teaspoon cinnamon over the apples; stir again. Cook over medium-low heat, stirring occasionally, until apples reach your preferred softness, about 40 minutes.
  • Sprinkle apples with white sugar, then stir again. Cook for 5 more minutes. Remove saucepan from heat. Let mixture cool for about 10 minutes.
  • Set a small bowl of water by work area. Lay an egg roll wrapper in front of you so the point is top and bottom. Scoop 1 to 2 tablespoons of the apple mixture along the middle of the wrapper.
  • Fold the bottom point of the wrapper up and over the filling, tucking the end around it. Gently roll up one time. Wet the sides of the roll and fold over edges (so it makes a little purse).
  • Roll up the wrapper the rest of the way and brush with water to seal. Lightly brush completed roll with water. Mix 1/4 cup white sugar and remaining 1 teaspoon cinnamon together in a bowl. Gently roll egg roll in cinnamon-sugar mixture. Repeat with remaining filling and wrappers.
  • Line the air fryer basket with parchment paper and carefully lay completed egg rolls on it. Air-fry for 7 minutes, then turn over. Continue to air-fry until light golden brown, about 7 minutes more.

3 cups fresh bean sprouts
1 pound ground chicken
6 green onions, chopped
1 tablespoon minced fresh gingerroot
3 garlic cloves, minced
1 jar (11 ounces) Chinese-style sauce or duck sauce, divided
1 tablespoon fish sauce or soy sauce
1 teaspoon soy sauce
1 package (14 ounces) coleslaw mix
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
18 egg roll wrappers

Steps:

  • Pour hot water over bean sprouts in a small bowl; let stand 5 minutes. Drain., Meanwhile, in a Dutch oven, cook chicken over medium heat until no longer pink, 6-8 minutes, breaking into crumbles. Add green onions, ginger and garlic. Cook 1 minute longer; drain. Stir in 1/2 cup Chinese-style sauce, fish sauce and soy sauce; transfer to a large bowl.
