Healthy air-fried buffalo chicken breasts that are moist, perfectly crispy, and super easy to make in an air fryer. Such a delicious 20-minute meal that everyone will love! Gluten-Free, paleo, dairy-free, and low carb.

3 chicken breasts (6 - 8 ounces each, skinless and boneless)
⅓ cup buffalo sauce*
½ tsp salt
½ tsp black pepper
Avocado or olive oil cooking spray
⅓ cup Frank's Red Hot Sauce
1 Tbsp melted butter or ghee
½ tsp paprika

Steps:

  • Preheat air fryer to 380°F and lightly grease basket with cooking or avocado spray.
  • Meanwhile, pat chicken breasts dry with a paper towel and then place a shallow bowl.
  • Pour the buffalo sauce on top and use kitchen tongs to flip chicken breasts to ensure they are completely coated. Season with salt and pepper and let marinate for 5 to 10 minutes.
  • Once the air fryer is heated, evenly space out the chicken breast into the basket, breast side down (the smooth side).
  • Air fry for 10 minutes, then with kitchen tongs and cook for another 4 - 6 minutes. I used medium 7-ounce chicken breasts and cooked for a total of 15 minutes. They will be done once the internal temp reaches 165°F and the outside is crisp. DO NOT overcook, it will be dry.
  • Let the chicken rest for 5 minutes.
  • Drizzle with extra buffalo sauce and enjoy with a side of your favorite grain and vegetable.

8 chicken tenderloins
2 cups panko crumbs
1 cup buffalo sauce
salt (as desired)
pepper (as desired)

Steps:

  • If you prefer to preheat your air fryer, preheat it to 400 degrees.
  • Coat the chicken tenders with your desired amount of salt and pepper. (I use about 1 tablespoon of kosher salt about 1/2 teaspoon of pepper.)
  • Pour buffalo sauce in to a small, shallow dish.
  • Pour panko crumbs in another shallow dish.
  • Begin dipping each chicken tender in to buffalo sauce, then immediately in to panko crubms.
  • Once fully coated, place each chicken tender in to air fryer basket. (Depending on the size of your air fryer, you may need to do multiple batches.)
  • Cook on 400 degrees for about 10 minutes if air fryer has been preheated and about 15 minutes if not preheated.... flipping half way thorugh cooktime.
  • When cook time has completed, check the internal temperature of the chicken with a meat thermometer, making sure it has reached 165 degrees.

1 pound boneless, skinless chicken breasts, (cut into 1½-inch pieces (approximately 2 chicken breasts))
½ cup all-purpose flour
2 tablespoons cornstarch
1 teaspoon salt
2 large eggs, (beaten)
2 cups panko breading
1 cup buffalo sauce

Steps:

  • Preheat the air fryer to 400°F and spray the basket with nonstick spray.
  • Set out three separate bowls. In the first bowl, combine flour, cornstarch, and salt. In the second bowl, add the beaten eggs. In the third bowl, add the panko breading.
  • Dredge each chicken piece first in the flour mixture, then the eggs, and finally, the panko.
  • Place chicken in a single even layer in the basket of the air fryer. (Work in batches if your air fryer isn't large enough).
  • Air fry for 8 minutes, flipping the chicken halfway through. Chicken is fully cooked when the internal temperature reaches 165°F.
  • Transfer the chicken to a large bowl and top with buffalo sauce. Gently toss to coat.
  • OPTIONAL: Place the chicken back in the air fryer for an additional 3-4 minutes if you want them crispier.
  • Serve with a side of ranch or blue cheese dressing.

2 pounds chicken wings, split at the joint and tips removed
Kosher salt
4 tablespoons unsalted butter
1/2 cup hot sauce, such as Frank's RedHot
Ranch or blue cheese dressing, for serving

Steps:

  • Spray the basket of a 3.5-quart air fryer with cooking spray and set aside. Pat the chicken wings dry and sprinkle generously with salt. Place the wings in the fryer basket so they are not touching (if necessary to fit, line up the drumettes standing upright along the sides). Set the air fryer to 360 degrees F and cook for 12 minutes, then flip the wings with tongs and cook for 12 minutes more. Making fried chicken in an air fryer is a revelation. You can achieve a crispy crust and juicy interior without all the steps of deep-frying. A soak in seasoned buttermilk adds extra flavor-as little as 1 hour will make a difference, but overnight is even better. Because of the capacity of a standard air fryer, we cook the chicken in batches. You can rewarm the first batch in a 250-degree oven for 10 minutes if you'd like to serve it all hot at once.

3 cups buttermilk
6 garlic cloves, crushed and peeled
Kosher salt and freshly ground black pepper
6 bone-in, skin-on chicken thighs (about 2 pounds)
6 chicken drumsticks (about 2 pounds)
2 cups all-purpose flour
2 teaspoons paprika
1 teaspoon garlic powder
1 teaspoon onion powder
Olive oil cooking spray

Steps:

  • Combine the buttermilk, garlic, 1 tablespoon salt and 2 teaspoons pepper in a large resealable plastic bag or container. Add the chicken pieces, seal and refrigerate at least 1 hour and up to overnight, turning the bag once or twice.
  • When you are ready to cook the chicken, combine the flour, paprika, garlic powder, onion powder, 1 tablespoon salt and 1 teaspoon pepper in a shallow bowl or dish. Stir well with a fork to combine. Drizzle 2 to 3 tablespoons of the buttermilk mixture from the bag over the flour and toss well to create small lumps throughout.
  • Remove the chicken from the marinade. Spray the basket of a 3.5-quart air fryer with olive oil cooking spray and preheat to 360 degrees F.
  • Dredge 3 thighs and 3 drumsticks in the flour mixture, shaking off the excess. Place the pieces in the preheated air-fryer basket, skin-side up without touching. Spray the chicken generously with the cooking spray and air fry until the chicken is cooked through and the crust is crisp and deep golden, about 27 minutes. Check on the chicken halfway through to spray any spots that still look floury with more cooking spray and flip the drumsticks only.
  • When the chicken is done, remove it from the air fryer and season lightly with salt. Repeat the dredging and air-frying process with the remaining chicken. if you like, rewarm the first batch in an oven at 250 degrees F for 10 minutes before serving.
