AIMEE'S CREAMED TUNA LUNCHEON

I used to make this for my daughter and her little friends, when they would come over. It was very cold and they didn't want soup, they would ask me for something "fancy" for their luncheon. I used to make the little frozen puffed pastries and would serve the tuna in them! It turned out beautifully and they were overjoyed! Of course, I enjoyed it too. Let me clarify - she was 4 at the time, she wouldn't be caught dead eating it today - too many carbs!

2 tablespoons chopped onions
3 tablespoons butter or 3 tablespoons margarine
3 tablespoons flour
1/4 teaspoon salt
fresh ground pepper (optional)
1 1/4 cups milk
1/2 cup sour cream
1 (6 1/2-9 ounce) canned tuna, drained
2 tablespoons fresh parsley, chopped (optional)
4 tablespoons peas (optional)
4 tablespoons slivered almonds (optional)
2 tablespoons sherry wine (optional)
paprika (to garnish) (optional)
baked puffed pastry shells or toasted English muffin, slices

Steps:

  • In a small sauce pan cook onion in butter over low heat, until tender.
  • Add flour, salt, pepper if using, stirring until smooth and bubbly.
  • Gradually stir in milk, stirring constantly until mixture thickens.
  • Stir in sour cream.
  • Add tuna, sherry if using, parsley it using, and peas if using.
  • Spoon into baked puff pastry shells or on toasted English Muffins and garnish with paprika and slivered almonds, if using.
  • Enjoy!

1 (10.75 ounce) can condensed cream of celery soup
1 cup milk
8 slices bread
salt to taste
pepper to taste

Steps:

  • In a medium saucepan over medium-low heat, mix tuna and soup. Gradually stir in the milk. Cook 5 to 10 minutes, stirring occasionally, until slightly thickened.
  • Toast the bread. Pour equal amounts of the tuna mixture over each slice of toasted bread and season with salt and pepper to serve.

1/4 cup flour
2 cups milk
1 can drained tuna fish
1 cup frozen peas (or to taste)
salt and pepper
bread (for toasting)

Steps:

  • Thaw frozen peas in a collendar.
  • Melt the margarine in a saucepan.
  • Add the flour and blend.
  • Add the milk, stirring constantly to prevent clumping and stir until creamy.
  • Add the tuna, peas, salt and pepper and warm through.
  • As the tuna is warming, toast bread.
  • After toasted, cut in triangles and spoon tuna mixture over the toast.

1/4 cup onion (diced)
2 tablespoons butter
2 tablespoons flour
1 tablespoon white wine
1 cup milk
1/4 cup frozen peas
1/4 cup diced mushroom
1/4 cup shredded mozzarella cheese
1 can tuna (drained)

Steps:

  • Melt butter.
  • Stir in onions, mushrooms and garlic.
  • Sauté over medium heat until translucent.
  • Mix in flour.
  • Mix in wine, stir for a few seconds.
  • Add milk, peas, mozzarella and tuna.
  • Cook another 5 minutes or so until thickened.
  • Add Salt and pepper to taste.
  • Serve over toast or pasta.
  • (I prefer to serve this with homemade gnocchi).

Times were tough for my newly divorced mom in the 70's. I remember eating creamed tuna on toast with a green salad on the side at least weekly. It was one of my favorite meals, and I had no idea we were eating it out of necessity. Times aren't so tough now, but I still make this about once a month. It's great when you're in a hurry, or have limited supplies on hand. My kids love it too!

2 tablespoons butter
2 tablespoons all-purpose flour
1 ½ cups milk
1 (5 ounce) can chunk light tuna in water, drained and flaked
salt and ground black pepper to taste
4 slices bread, toasted, or to taste

Steps:

  • Melt butter in a small saucepan over medium heat. Stir flour into melted butter until smooth and slowly stream milk into the mixture while whisking continually. Bring mixture to a simmer and cook until thickened, about 5 minutes.
  • Reduce heat to medium-low. Stir tuna into the milk mixture; season with salt and pepper. Cook until tuna is warmed, 2 to 3 minutes.
  • Ladle tuna mixture over toasted bread to serve.
