West African Jollof Rice is superb! My parents are nigerian. I grew up eating this rice and every eaten at every party where the host is west african. Every west african country has its own version, however this is the best! Enjoy!

Number Of Ingredients 24

2 cups rice (long grained or medium variety)
1/4 cup groundnut oil or 1/4 cup olive oil
1/2 tablespoon butter
1 teaspoon dried thyme, if using fresh 2 tbsp would be perfect
1/4 teaspoon curry powder (optional)
1 onion, sliced
1 celery, diced
1 green pepper, diced (remove the seeds & white stuff)
2 -3 garlic cloves (as per taste)
1 cup chicken breast, diced not cooked preferably, omit if vegan
1/2 inch piece ginger, peeled and grated
1 tablespoon ground paprika (smoked would be ideal)
2 tablespoons cayenne, add more if you want it hotter
3 tablespoons tomato paste, I love using hunts
2 large tomatoes, chopped finely (or 1 small can pureed tomatoes)
1 carrot, cubed
1 chicken bouillon cube (I love knorr chicken or maggi)
1 bay leaf
2 cups chicken stock
2 cups water
1/2 cup portebello mushroom (optional)
peas (You can use frozen mixed veggeis)
salt
1/4 cup cilantro (to garnish) or 1/4 cup parsley (to garnish)

Steps:

  • Method.
  • Add oil and butter in a heat resistance pot, then add the chicken breast, paprika, cayenne, onion, celery, green pepper, garlic and ginger. Saute for about 3 minutes.
  • Add the chopped carrots next and saute for a minute with little salt.
  • Add the tomato paste, tomatoes along with curry powder, bay leaf & thyme. Cook until tomatoes get slightly soft. For about 3 minutes until you see the oil getting red. Then add frozen veggies. . Add the rice next. Saute for another 2 minutes or so.
  • Add 3 cups of vegetable stock/water, bouillon cube, required salt,close the lid and cook until 90% cooked, for about 30 minutes.
  • Allow the rice to continue cooking until the rice is soft. If it is not dry at this point, then switch the heat to low to allow it to dry the excess water without making the rice much softer.
  • If rice is still lil hard, add 1/4 cup water and cover with foil, which will allow it to steam through. Check back at 5 min and It should be ready. You want your rice not too soft.
  • Garnish with cilantro/parsely and serve.

This is a traditional South African recipe, which comes from the great culinary tradition of the Cape Malays -- originally brought in as slaves in the 17th century. 1 cup long grain white rice
½ teaspoon salt
1 ½ teaspoons ground turmeric
3 tablespoons white sugar
½ teaspoon ground cinnamon
½ cup black raisins
1 tablespoon butter
2 ½ cups water

Steps:

  • In a saucepan, combine the rice, salt, turmeric, sugar, cinnamon, raisins, butter and water. Bring to a boil uncovered. When it comes to a boil, reduce the heat to low, cover and let it simmer for 20 to 30 minutes, or until rice is fluffy and water has been absorbed. Remove from the heat and fluff with a fork. Keep warm until serving time.

Baked Crispy Chicken Legs - A few simple tricks makes this chicken legs crispy on the outside, tender and juicy on the inside, and ridiculously flavorful. It's quick, easy, paleo, gluten-free and only requires 10 mins prep.

3 - 3 ½ pound chicken legs
1 Tablespoon Dried Italian herbs
1 ¼ teaspoon salt
1 ½ tablespoon onion powder
1 ½ tablespoon garlic powder
1 teaspoon smoked paprika
1 teaspoon white pepper
½ teaspoon cayenne pepper
1 teaspoon bouillon powder ((you may replace with salt))

Steps:

  • Wash chicken legs and place them on a cookie sheet in a single layer, then let them sit in the fridge for a minimum of 3 hours or preferable overnight. Do not cover them; let the air-dry them out. You can omit this part and proceed with the spices.
  • When ready to bake, preheat oven to 425°F.
  • Place the chicken in a large bowl, with all the spices, and then drizzle with oil.
  • Line a baking pan with foil; top with a wire rack. Arrange chicken legs out in a single layer. While the chicken legs are baking oil will slowly drip to the bottom of the baking pan.
  • Bake chicken legs until cooked through and skin is crispy, about 45-50 minutes-rotate chicken legs half way through-roughly 20 minutes.
  • Remove and serve with your favorite chicken sauce or african pepper sauce

1 medium onion, diced
1 tablespoon olive oil
8 boneless skinless chicken thighs (about 2 pounds)
1 tablespoon minced fresh cilantro
1 teaspoon ground turmeric
1 teaspoon paprika
1 teaspoon sea salt
1/2 teaspoon pepper
1/2 teaspoon ground cinnamon
1/2 teaspoon chili powder
1 cup golden raisins
1/2 to 1 cup chopped pitted green olives
1 medium lemon, sliced
2 garlic cloves, minced
1/2 cup chicken broth or water
4 cups hot cooked brown rice

Steps:

  • In a 3- or 4-qt. slow cooker, combine onion and oil. Place chicken thighs on top of onion; sprinkle with next 7 ingredients. Top with raisins, olives, lemon and garlic. Add broth. Cook, covered, on low until chicken is tender, 4-5 hours. Serve with hot cooked rice.

I am posting this to serve with Easy African-style peanut chicken. I am a single mother with a disabled child. Since I work and go to college, I need easy, delicious dinners. This isn't really authentic but a friend of mine is in Africa and sends me recipes to "tweak" for my ease of cooking!

1 (10 1/2 ounce) can chicken broth
1 cup rice
1/2 tablespoon butter
1 dash coriander powder
1 dash turmeric powder

Steps:

  • In a sauce pan, melt butter and add rice to saute.
  • when Rice is a nice golden color, add chicken brother, dash of coriander powder, dash of turmeric and bring to boil.
  • At boiling point, reduce heat to low and cover.
  • Cook for 20 minutes. DO NOT OPEN LID UNTIL 20 Minutes is up! I suggest setting a timer!
  • When done, fluff with fork and serve with Easy African-Style Peanut Chicken!
