Cute little treats all on their own or a fun decoration for your cupcakes! Enjoy as is or use to decorate cupcakes. If you are good at piping try adding some colored leaves made of frosting to the top of the Nilla® Wafer.

1 tablespoon prepared chocolate frosting
24 milk chocolate candy kisses (such as Hershey's Kisses®), unwrapped
24 mini vanilla wafer cookies (such as Nilla®)
24 butterscotch chips

Steps:

  • Smear a small amount of frosting onto the flat bottom of a candy kiss. Press onto the flat bottom of the vanilla wafer. Smear a little more frosting onto the flat bottom of a butterscotch chip, and press onto the rounded top of the cookie. Repeat with remaining ingredients. Set aside to dry, about 30 minutes.

For cookies
2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
2 sticks (1 cup) unsalted butter, melted
3/4 cup packed light brown sugar
1 teaspoon vanilla
1 cup finely chopped walnuts (4 oz)
For decoration
8 oz semisweet chocolate, melted
1/2 cup finely chopped walnuts (2 oz)

Steps:

  • Make cookies:
  • Sift together flour, baking powder, and salt. Beat together butter, brown sugar, and vanilla with an electric mixer until pale and fluffy. Mix in flour mixture at low speed, then stir in walnuts.
  • Preheat oven to 375°F.
  • Form 2 teaspoons dough into an egglike shape resembling an acorn. Make more "acorns," arranging them 1 inch apart on ungreased baking sheets. Bake in batches in middle of oven until undersides are light brown, about 10 minutes. Transfer to racks to cool.
  • Decorate cookies:
  • Dip half of each cookie in melted chocolate and then in chopped nuts. Place as coated on a baking sheet lined with wax paper to set, about 15 minutes.

1 cup butter, softened
1 cup sugar
1 large egg
1/2 cup milk
1 teaspoon almond extract
1 teaspoon vanilla extract
3-1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 cups semisweet chocolate chips
1 cup ground pecans

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in the egg, milk and extract. Combine the flour, baking powder and salt; gradually add to creamed mixture and mix well. Cover and refrigerate for 4 hours or until easy to handle., Divide the dough in half. On a lightly floured surface, roll out each portion to 1/4-in. thickness. Cut with 2-1/2-in. acorn cookie cutter. Place 1 in. apart on ungreased baking sheets. , Bake at 375° for 8-10 minutes or until edges are firm. Remove to wire racks to cool completely., In a microwave, melt chocolate chips; stir until smooth. Spread chocolate over the stem and cap of each acorn, leaving about a 1/4-in. border. Sprinkle pecans over chocolate. Pipe remaining chocolate in a criss-cross pattern over each acorn. Let stand until firm.

Finely ground pecans and a little confectioners' sugar mixed into the dough creates a sandy-like cookie texture that melts in your mouth. When the delicate cookies are then sandwiched with a bright cherry jam, you can't blame a squirrel for trying!

2 cups unbleached all-purpose flour, plus more for dusting
1/2 teaspoon baking powder
3/4 cup pecan halves (3 ounces), toasted
2 tablespoons confectioners' sugar, plus more for sprinkling
1/8 teaspoon kosher salt
1/8 teaspoon ground cinnamon
1 stick cold unsalted butter, cut into small pieces
1/4 cup granulated sugar
1 teaspoon pure vanilla extract
1 large egg, room temperature
1/2 cup cherry jam, whisked

Steps:

  • In a medium bowl, whisk together flour and baking powder. Pulse pecans with confectioners' sugar, salt, and cinnamon in a food processor until finely ground. Transfer pecan mixture to the bowl of a stand mixer fitted with paddle attachment.
  • Add butter and granulated sugar to bowl with pecan mixture and beat on medium speed until fluffy, 3 minutes. Beat in vanilla and egg. Reduce speed to low; add flour mixture and beat until combined. Divide dough in half. Working with one portion at a time, place dough between two pieces of lightly-floured parchment paper and roll out to 1/8 inch thickness. Refrigerate until firm, 30 minutes.

2½ cups flour

½ lb carmels

NUTTER BUTTER ACORN COOKIES

Number Of Ingredients 4

Nutter Butter Cookies
Milk chocolate morsels or chocolate almond bark (about ½ cup for every 8-10 Nutter Butter cookies)
Chocolate jimmies/sprinkles
Pretzel sticks

Steps:

  • Prepare a plate or baking sheet with waxed paper.
  • Cut each pretzel stick into six pieces. These will be the stem of the acorn. Set aside.
  • Carefully cut each Nutter Butter cookie in half using a sharp knife to create two acorn cookies from each Nutter Butter.
  • In the microwave, melt the milk chocolate morsels in a small microwave-safe bowl on high in 30 second increments, stirring well between each cycle and giving special care not to overheat the candy. If the chocolate is overheated or comes in contact with water, it will seize up and be unusable.
  • Dip the cut end of the Nutter Butter cookies into the melted chocolate to coat about ¼ inch of the cookie. Immediately dip in chocolate jimmies.
  • Place a piece of pretzel stick into the middle of the cookie edge. You may need to shift the jimmies slightly to make space. If the pretzel piece will not stick, dip one end of the pretzel stick into the melted chocolate and attach again.
  • Put the acorn cookie on the waxed paper. When all cookies are dipped and decorated, place in the refrigerator or freezer until the chocolate is set.
