1 (3 ounce) package cream cheese, softened
3/4 cup mayonnaise
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1/2 teaspoon garlic powder
1/8 teaspoon seasoning salt
10 slices Italian bread (1/2 in. thick)
2 tablespoons butter, softened

Steps:

  • In a mixing bowl, beat cream cheese and mayonnaise until smooth.
  • Stir in cheeses, garlic powder, and seasoned salt.
  • Spread five slices of bread with the cheese mixture, about 1/3 cup on each.
  • Top with remaining bread.
  • Butter the outsides of sandwiches; cook in a large skillet over medium heat until golden brown on both sides.

NACHO ABUELITOS GRILLED CHEESE

1 tablespoon vegetable oil
1 pound ground fresh Mexican chorizo
8 slices good quality white bread, such as Arnold Country White Sliced
8 ounces shredded Chihuahua cheese
1/2 cup sliced black olives
1/4 cup pickled jalapenos, sliced
4 tablespoons salted butter, softened
Restaurant-style tortilla chips, such as Donkey corn tortilla chips
Honey Chipotle Crema, recipe follows
1 cup sour cream
1 tablespoon chopped fresh cilantro
1 tablespoon honey or agave
1 chipotle pepper in adobo, minced
1/2 lime, juiced
Kosher salt and pepper

Steps:

  • In a large skillet, heat the vegetable oil and brown the chorizo over medium heat until cooked through, about 8 minutes. Using a slotted spoon, scoop out the chorizo, and move to a paper-towel-lined plate. Set aside.
  • In between two pieces of bread, layer the cheese, chorizo, olives, jalapenos and then another layer of cheese. Add some butter to the griddle over medium-low heat, and place the sandwich on the griddle. Add more butter to the top of the bread and cover with a metal bowl until golden on the outside and gooey in the middle, 5 minutes per side. Open the sandwich and place a few tortilla chips inside, then close again.
  • Cut into quarters, serve with a side of Honey Chipotle Crema, and be prepared to never eat conventional nachos again.
  • Mix the sour cream, cilantro, honey, chipotle pepper, lime juice and some salt and pepper together, and set aside.

On-the-Grill Grilled Cheese image

1/2 cup fig jam
4 slices multigrain bread (thick, hand-cut)
4 slices brioche bread
8 slices aged Cheddar
8 tablespoons (1 stick) butter, softened
2 tablespoons extra-virgin olive oil
1 tablespoon balsamic vinegar
1 tablespoon balsamic glaze
1 teaspoon honey
2 pinches salt
2 pinches freshly ground black pepper
1/3 lemon, juiced
One 5-ounce container mixed greens
1 cup cherry tomatoes, halved
1/4 cup fresh basil, torn

Steps:

  • For the sandwiches: Prepare a grill for medium-high heat.
  • Assemble 4 sandwiches by spreading 2 tablespoons fig jam on 2 of the multigrain slices and 2 of the brioche slices, then adding 2 slices of cheese to each and another slice of the same bread. Spread the butter on both sides of the assembled sandwiches.
  • Place the sandwiches carefully onto the grates of the grill and grill on each side until the bread has grill marks and the cheese is melted, about 5 minutes per side.
  • For the salad and dressing: Meanwhile, whisk together the olive oil, balsamic vinegar, balsamic glaze, honey, salt, pepper and lemon juice in a large bowl. Add the mixed greens, tomatoes and basil to the same bowl and toss to coat.
  • Serve each sandwich with a side of salad.

ABUELITO WATO'S GRILLED CHEESE

When our family visited Puerto Rico the only thing in the refrigerator that was edible was bread and cheese. So our grandpa(Abuelito Wato) sliced us some cheese and grilled it on some bread for lunch and a snack. When I got back home we modified it and added tomatoes, but it is really delicious!

2 slices sandwich bread or 2 slices favorite bread
4 slices gouda cheese
1 tomatoes, sliced
2 tablespoons butter

Steps:

  • Sandwich tomato and Gouda cheese in the bread.
  • Place a pan on a stove top on medium heat and place butter in until melted.
  • Grill both sides of the sandwich until cheese it melted.
