Start these mushrooms in the morning-they take 9 hours! If you can't stay home to watch the stove, make them in a slow cooker on low.

Number Of Ingredients 10

4 pounds white button mushrooms
1 cup (2 sticks) butter
4 cubes low-sodium chicken bouillon
4 cubes low-sodium beef bouillon
Freshly ground black pepper
1 teaspoon dill seeds
5 cloves garlic
1 liter burgundy wine (or any red wine, such as cabernet or merlot)
1 1/2 teaspoons Worcestershire sauce
Kosher salt

Steps:

  • Throw the mushrooms in a large pot with the butter, bouillon cubes, 1 teaspoon pepper, the dill seeds and garlic. Add the wine, Worcestershire sauce and 2 cups boiling water. Bring the mixture to a boil over medium-high heat, then reduce the heat to low, cover the pot and let it simmer 6 hours. (Yes, I said 6 hours!)
  • After 6 hours, remove the lid and continue simmering for another 2 to 3 hours. (Yes, I said 3 hours!)
  • After the 8-to-9-hour cooking time, season with salt to taste. The mushrooms will be very dark in color and exceedingly luscious. Ladle them into a serving dish and get ready for the best mushroom experience of your life.

MADUROS-AND-CHORIZO STUFFED MUSHROOMS

Maduros are a very popular ingredient in Cuba. They are plantains that are ripe and sweet, as compared to green plantains. The riper and blacker the plantains are, the sweeter they will be when cooked.

Yield 18 mushrooms (serves 6)

Number Of Ingredients 8

48 ounces (6 cups) vegetable oil, for frying
2 ripe plantains, peeled and sliced into 1/4-inch-thick pieces
3/4 pound Mexican chorizo, casings removed
18 large button mushrooms, stems removed, caps wiped clean
Extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 cup shredded mozzarella cheese
1/2 cup grated Cotija cheese

Steps:

  • Preheat the oven to 375 degrees F.
  • For the filling: Place oil in a Dutch oven at least 4 inches deep and heat to 375 degrees F. Fry the plantains until golden brown, about 2 to 4 minutes. Remove, drain on paper towels, then chop into rough dice.
  • In a medium skillet over medium heat, add chorizo. Stir to break up the meat and brown evenly, about 4 to 5 minutes. Remove from heat, add plantains and set aside.
  • For the mushrooms: Line a rimmed baking sheet with parchment paper. Place mushrooms cap-side up on the baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Roast in the oven 10 to 12 minutes.
  • Remove mushrooms from oven and fill cavities with chorizo mixture. Sprinkle mozzarella on top followed by Cotija. Place back in the oven until cheese has melted, 10 to 12 minutes. Serve.

2 ½ cups red wine
6# mushrooms rinsed
1# butter
1 ½ Tbs dill weed
1 tsp fresh ground pepper
1 tsp Accent
1 tsp garlic powder
In 2 cups boiling water dissolve 3 beef, 3 chicken &
3 vegetable bouillon cubes

Steps:

  • Combine all ingredients in large pot. Bring to a boil, Then simmer 5-6 hours. Stir occasionally Remove lid & simmer 3-4 hours longer til liquid Barely covers mushrooms. Stir occasionally Tips: Costco has nice big mushrooms in 1-lb packages, which is nice because they really cook down. Rinse the dirt off, but that is it. I typically start them the night before, cook for a few hours, turn them off & let sit overnight on the stove. Turn them on to cook the last few hours prior to serving so you can serve warm. Some people serve in a chafing dish. I find they don't typically last long enough to bother with one! They can be frozen. They can be micro-waved. They are fool-proof, which is why I like them!

4 pounds white button mushrooms
1 liter Burgundy wine (other dry red wines will work)
2 cups boiling water
1/2 pound (2 sticks) butter
1 1/2 teaspoons Worcestershire sauce
1 teaspoon dill seed
1 teaspoon freshly ground black pepper
4 beef bouillon cubes
4 chicken bouillon cubes
4 cloves garlic, peeled
Salt
Crusty bread, for serving

Steps:

  • Thoroughly wash the mushrooms and throw them into a large stockpot. Add the wine, boiling water, butter, Worcestershire sauce, dill seed, black pepper, beef and chicken bouillon cubes and garlic. Stir to combine.
  • Bring the mixture to a boil over medium-high heat. Reduce the heat to low and simmer, covered, for 6 hours.
  • Remove the lid, and then continue cooking, uncovered, for 3 hours.
  • Add salt to taste at the end of the cooking process. The mushrooms will be very dark in color. Serve straight from the pot or spoon the mushrooms and cooking liquid into a serving bowl. Have crusty bread nearby to soak up the deliciousness.

1 envelope (.7 ounce) Italian salad dressing mix
1 cup water
1/2 cup olive oil
1/3 cup cider vinegar
2 tablespoons lemon juice
1 tablespoon sugar
1 tablespoon minced fresh parsley
1 tablespoon reduced-sodium soy sauce
2 teaspoons crushed red pepper flakes
3 garlic cloves, minced
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Remove mushroom stems (discard or save for another use). Place caps in a large saucepan and cover with water. Bring to a boil. Reduce heat; cook for 3 minutes, stirring occasionally. Drain and cool., In a small bowl, whisk the salad dressing mix, water, oil, vinegar, lemon juice, sugar and seasonings. , Place mushrooms in a large bowl; add dressing and stir to coat. Cover and refrigerate for 8 hours or overnight.
