Mexican 7 Layer Dip is an easy dip to make for parties. Layers Tex-Mex flavors come together in to make a simple cold dip to serve with tortilla chips.

32 ounces Refried beans
2 tablespoons Taco seasoning
2 cups Guacamole
2 cups Sour cream
2 cups Cheese (shredded)
3 cups Tomatoes (diced)
2.25 ounces Black olives (sliced)
1/4 cup Green onions (finely chopped)

Steps:

  • In a bowl combine the refried beans and taco seasoning. Stir until smooth.
  • Spread the refried beans in the bottom of a 13" x 9 " casserole dish.
  • Top with a layer of guacamole.
  • Spread a layer of sour cream over the guacamole.
  • Add a layer of cheese over the sour cream.
  • Next a layer of fresh tomatoes.
  • Top with black olives and green onions.
  • Cover and refrigerate for at least 1 hour before serving.

1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, drained, liquid reserved
1 can (16 oz each) Rosarita® Traditional Refried Beans
1 container (12 oz each) refrigerated guacamole
1 container (16 oz each) sour cream
1 pkg (1.25 oz each) taco seasoning mix
1 cup shredded Cheddar and Monterey Jack cheese blend
1 can (2.25 oz each) sliced ripe olives, drained
1/4 cup sliced green onions
Tortilla chips, optional

Steps:

  • 1. Reserve 1/2 cup drained tomatoes; set aside. Blend remaining tomatoes and reserved liquid with beans in medium bowl.
  • 2. Spread bean mixture in 8x8-inch glass baking dish or round casserole dish. Top with guacamole.
  • 3. Blend together sour cream and seasoning mix in small bowl. Spread over guacamole. Top evenly with layers of cheese, olives, green onions and reserved tomatoes. Chill 2 hours prior to serving. Serve with tortilla chips, if desired.

I got this recipe from Hidden Valley recipe pamphlet years ago. A friend and I used to take turns making dinner for our husbands at the shop. This is one of those things that wouldn't last but a few minutes when we fed them Mexican dishes.

1 (1 ounce) packet hidden valley original ranch dressing mix
1 cup sour cream
1 (16 ounce) can refried beans
1 cup diced tomato
1 (4 ounce) can sliced green chilies, drained
1 (2 1/4 ounce) can sliced black olives, drained
3/4 cup shredded cheddar cheese
3/4 cup shredded monterey jack cheese
1/2 cup chopped avocado (optional)

Steps:

  • Spread beans on a 10-inch serving platter.
  • Blend sour cream and dressing mix together. Spread over beans.
  • Layer remaining ingredients.
  • Serve with tortilla chips.

This is a regular dip we use at all our family gatherings. Simple to make and feeds a lot of people, besides being yummy! Update- I substituted chorizo for the ground beef and oh boy, it takes to whole nother level!

1/4 cup chopped onion
1/2 cup salsa
1 1/2 teaspoons chili powder
1/2 teaspoon salt
1 (12 ounce) can refried beans
1/2 cup diced black olives
1/2 cup shredded cheddar cheese

sliced olive

Steps:

  • Brown meat and chopped onion, stir in salsa and chili powder, diced black olives and salt.
