4 cups lettuce, chopped
1 cup tomatoes, chopped
1/2 cup green onion, chopped
4 1/2 ounces sliced ripe olives, drained
15 1/2 ounces dark red kidney beans, drained
1 cup mild cheddar cheese, shredded
1 cup salsa ranch dressing or 1 cup salsa, garden dressing
1 cup tortilla chips, crushed

Steps:

  • Layer lettuce, tomato, onions, olives, beans, cheese, and dressing in a 3-quart bowl.
  • Refrigerate.
  • Top with crushed tortilla chips and toss lightly just before serving.

1 (1 ounce) package taco seasoning mix
1 (16 ounce) can refried beans
1 (8 ounce) package cream cheese, softened
1 (16 ounce) container sour cream
1 (16 ounce) jar salsa
1 large tomato, chopped
1 green bell pepper, chopped
1 bunch chopped green onions
1 small head iceberg lettuce, shredded
1 (6 ounce) can sliced black olives, drained
2 cups shredded Cheddar cheese

Steps:

  • In a medium bowl, blend the taco seasoning mix and refried beans. Spread the mixture onto a large serving platter.
  • Mix the sour cream and cream cheese in a medium bowl. Spread over the refried beans.
  • Top the layers with salsa. Place a layer of tomato, green bell pepper, green onions and lettuce over the salsa, and top with Cheddar cheese. Garnish with black olives.

1 medium red onion, thinly sliced, optional
1 large cucumber, halved and sliced
3 medium tomatoes, chopped
2 medium ripe avocados, sliced or cut into 1/2-in. chunks

1-1/2 cups mayonnaise
1/4 cup canned chopped green chiles
2 teaspoons chili powder

1 cup guacamole
¼ cup mayonnaise

1 head lettuce
1/4 cup shredded red cabbage
3 carrots, grated
1 -2 tomatoes, diced (depending on size)
2 avocados, peeled pitted and diced
1 tablespoon fresh lemon juice
1 bunch green onion, chopped
1 cup black beans, rinsed and drained
1 (12 ounce) package tortilla chips, crushed
2 cups shredded cheddar cheese
1 (16 ounce) bottle ranch salad dressing
1/2 packet taco seasoning (optional)

Steps:

  • Chop lettuce and toss in a large bowl with grated cabbage and carrots.
  • Spread mixture into the bottom of a deep glass salad bowl.
  • Peel and slice avocado and toss with lemon juice.
  • This prevents avocado from turning brown.
  • Evenly cover the lettuce with a layer of tomato, followed by a layer of avocado, a layer of green onion, a layer of beans and a layer of chips.
  • Pour the dressing over all and sprinkle with the cheese.
  • Cover and refrigerate for at least 45 minutes before serving.
