3/4cup3/4 cup strawberries
1/4cup1/4 cup powdered sugar
1/3cup1/3 cup flour
1tablespoon1 tablespoon white sugar
1/2teaspoon1/2 teaspoon baking powder
1tablespoon1 tablespoon butter
2tablespoons2 tablespoons milk

Steps:

  • Chop berries and add to a microwave-safe mug. Add powdered sugar, stir to combine. In a separate bowl, add the flour, white sugar and baking powder and mix to combine. Add butter and rub in with your fingers until combined. Add milk and stir (I used my hands for this too; fewer dishes to wash). Add batter to the top of the berries (sprinkle with additional sugar, if desired). Microwave on high about 1 1/2 to 2 minutes. Allow to cool because this will be screaming hot. NOTE: The ratios used are for a large mason jar mug. This recipe will also make 2 servings in smaller mugs. Make sure to only fill the mug no more than 2/3 full or it will bubble over during "cooking."

This peach cobbler recipe uses peaches canned at home in wide-mouth, quart-size mason jars.

64 ounces canned sliced peaches with juice
2 tablespoons lemon juice
1 cup white sugar
1 cup butter, softened
3 cups all-purpose flour
1 cup milk
2 tablespoons vanilla extract
4 teaspoons baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground cloves

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 10x14-inch baking dish.
  • Pour peaches and juice into a bowl; stir in lemon juice.
  • Mix sugar and butter together in a large bowl. Strain the juice from peaches into sugar-butter mixture and stir well. Stir flour, milk, vanilla extract, baking powder, salt, cinnamon, nutmeg, and cloves, respectively, into butter-peach juice mixture until batter is evenly combined; pour into the prepared baking dish. Spoon peaches evenly over batter.
  • Bake in the preheated oven until cobbler is lightly browned and bubbling, about 1 hour.
